The flavor can be described as Jiro-style, with a strong soy sauce-based broth poured over thick, chewy noodles. It had a lot of garlic. I found the saltiness to be overpowering at times, so I decided to add the chima-mayo (cheese + mayonnaise) topping. I thought it would be powdered cheese and mayo, but it turned out to be cheddar cheese and a generous amount of mayo. Overall, I felt that the taste of the restaurant didn't quite match my own preferences. It might appeal more to those who enjoy Jiro-style ramen. If I have the chance, I would like to try other ramen options at this place.

I went to Mazesoba in search of Jiro-style ramen. Based on reviews, I ordered the Galibata and Chima May. It had been a while since I had such a junky meal, but it was amazing. The garlic was strong, but it mixed well with the noodles, making it easy and smooth to eat. Even after finishing, I didn't feel heavy or bloated, it was really comfortable. I purchased a ticket for the Chicken White Broth Ramen (¥900). The white broth soup had a sweet and rich flavor that paired well with the noodles. The chewy texture of the noodles was impressive. The minced meat gathered on top, through the hole in the lotus flower, was also delicious. I wished I had ordered rice if I had known there was an option for it on the vending machine. There was a sign saying "You can bring your own rice!" Such a kind service. From the posters and figures in the store, you can tell that the owner is a huge rock music fan. The store is spacious and bright, and you can see the kitchen clearly, making it a comfortable place to be. A ramen shop that makes you want to come back again... The interior decorations were American toys. This unique ramen shop in Hatagaya is a must-visit on the main street shopping district. The all-black exterior gives a nostalgic and stubborn ramen vibe. If it's your first time, it's best to start with a normal soy sauce ramen. However, sometimes when I'm slightly hungover, I crave miso ramen, which I don't usually eat. So, I searched for a shop that makes delicious miso ramen and found one. The miso ramen had an orange color that I'm not used to, almost like they added milk to the miso. The rich and creamy soup with animal fat and garlic was unique and not unpleasant. The medium-thick noodles were my favorite, perfectly complementing the soup. Mixing in the minced meat topping from the start is also a good idea. It reminded me of the forgotten taste of miso ramen, and the addition of bean sprouts was very nice.
