Located a 3-minute walk from JR Kamata Station South Exit, behind the main store of Yuzawaya, opened in April 2019. The main store is a popular Jiro-inspired shop founded in 2015 in Dokkyo University Mae (Saitama Prefecture, Kasuga City), and this is the second store. A sister store of the famous Jiro-style shop "Senrigan" in Komaba, Meguro-ku, founded in 2009, this "Takanome" also offers unique free toppings such as "Karaage" (deep-fried spicy chicken) and "Garimayo" (garlic mayonnaise) that are familiar at "Senrigan". On this day, I came here for the summer limited edition "Hiyashi Chuka" (Limited ① Button 1250 yen). It is a Jiro-style hearty cold noodles that is quite different from the general image of "Hiyashi Chuka", and originated from "Senrigan", but recently other Jiro-inspired shops have also been offering menus that pay homage to "Senrigan's" Hiyashi Chuka. The noodle portion is default at 300g (before boiling). At the timing of handing over the meal ticket, the staff will confirm, "Is 300g okay?" so if you want to reduce the amount to 250g or 200g, you can inform them at this time. Conversely, if you want a large portion (400g), you can purchase a 100 yen ticket at the vending machine. Free toppings include extra vegetables, garlic, oil, karaage, garimayo, and caramel, with the staff asking "For the customer of <counter number> with <order item>, what toppings would you like?" just before serving, so you can call out for the additional toppings you want. Those who want Garimayo or karaage in a "separate dish" are also seen occasionally. Ordered the "Hiyashi Chuka" with 300g of noodles, and toppings of extra vegetables, karaage, and garimayo. When you choose extra vegetables, it is served as a mountain-like elevation that is shaped by pressing it tightly with both hands so that it does not collapse. The vegetables mainly consist of shredded daikon radish with carrots and cucumbers, like a daikon salad. It is refreshing and crunchy, so even with extra vegetables, you can easily finish it. Watercress is placed on top, and cherry tomatoes are on the side as toppings. If you try to forcibly pull out the noodles hidden under the mountain of vegetables, a collapse of the mountain may occur, so it is better to eat a certain amount of vegetables first, lower the elevation, and then swap the noodles and vegetables using the "flip". The flat thick noodles are made from Nisshin Seifun's strong flour "Orchon," which is also used by "Ramen Jiro," giving it a firm and chewy texture. The noodles for "Hiyashi Chuka" are cooled with cold water, making them even firmer and chewier than warm noodles, increasing the chewiness. Rather than slurping the noodles, you chew them, so your jaw may get tired towards the end. The chicken thigh chashu is thick and satisfying to eat. The crispy texture of the karaage and the punchy garlic flavor of garimayo combine to create a junky taste that is addictive.
