Arrived around 2:30 pm on a regular day. In front of the shop, there is a vending machine selling the familiar oolong tea from the Jiro series. About one-third of the seats were already taken, but we were able to enter without waiting. The interior of the shop has only a counter with 15 seats. I purchased a ticket for the pork ramen for 1300 yen at the ticket machine. Although you can increase the noodle portion up to 500g for an additional 200 yen, I decided not to do so this time since it was my first visit. Before sitting down, I picked up water, chopsticks, and tissues next to the ticket machine. When handing over the ticket, you can specify the noodle firmness, noodle quantity, and order without soup. I requested firm noodles only. After being seated, I checked the table seasoning. There were sesame seeds, pepper, and a red liquid (spicy sauce), quite a luxurious selection! After about 5 minutes, I was asked for my order, so I requested extra vegetables, extra pork fat, and the secret menu item, extra spicy pork fat. The pork ramen with 300g of noodles (extra vegetables, extra spicy pork fat) was served. The first thing that caught my eye was the additional pork fat that came separately, despite the ramen already having a decent amount of pork fat typical of Jiro-style ramen. Furthermore, an additional separate plate of spicy pork fat was served in the same amount as the regular pork fat, which was amusing. The vegetables consisted mainly of bean sprouts, and although the quantity was more than it appeared, when combined with the exquisite pork fat and seasoning, I found myself finishing it in no time! The pork consisted of three large pieces that filled the bowl, and the uneven and hearty pork typical of the Ramensho series was exquisite. The noodles were curly thick noodles similar to the Fujimaru style, which absorbed the rich and creamy emulsified soup well, creating a delicious harmony. I enjoyed dipping the noodles in the separate plates of pork fat like dipping noodles, and adding various table seasonings, making it easy to enjoy flavor variations. As for the spicy pork fat, it left a slight spiciness in the aftertaste, making it a recommended topping for those who are not fond of spiciness. After placing the dishes on the counter, wiping the table, and disposing of the tissues and trash in the garbage can next to the ticket machine, I said "thank you for the meal" and left. The atmosphere of the shop was bright, and there was no sense of urgency to eat quickly, making it a recommended shop for Jiro-style beginners who want to indulge in pork and fat. I look forward to visiting again to try the limited miso ramen and soupless ramen.
