I ordered the Tebichi soba. The Tebichi was really tender and delicious. The meat is well seasoned, making it a great match with the noodles! It tasted just like the one I had in Okinawa. I was happy to see red pickled ginger as I love it. It's recommended to add the red pickled ginger in the second half for a flavor change!

The location of the restaurant is about an 8-minute walk from Yurakucho Line's Subway Akatsuka Station and about a 9-minute walk from Tobu Tojo Line's Shimoakatsuka Station South Exit. I arrived at 1:01 PM on this day. This is a Okinawan cuisine restaurant that opened in May 2022. The name of the restaurant is "Agarie," which is pronounced as "Aga-ri-e." Upon researching, it seems that "Agarie" is a town name in Nago City, Okinawa Prefecture. Perhaps the owner is from Agarie. As I entered the restaurant, despite being a bit away from the station, it was quite crowded. It seems like everyone knows the good restaurants. The seating consists of a counter with 6 seats and a raised seating area with 6 seats. Orders are placed using a ticket machine to purchase food tickets. Besides Okinawan cuisine, they also offer curry and mapo tofu. Today, I ordered the "Specialty Agarie Soba (950 yen) + Rice (free)!!" The soba comes with complimentary rice, so I added that. The portion was quite generous! The Agarie Soba is Okinawa soba topped with stir-fried vegetables, soki, and tebichi. In simple terms, it's like Okinawan-style tantanmen with soki and tebichi toppings. Soki is pork spare ribs, and tebichi is pig's feet. Both are simmered to tenderness. The tebichi, in particular, is impressive and deliciously simmered to a melt-in-your-mouth texture. The flavor is a sweet and savory soy sauce base, but on the lighter side. The stir-fried vegetables are abundant with pork, bean sprouts, cabbage, chives, carrots, etc. There's a hint of garlic in it. The noodles are uneven flat curly noodles with a soft texture unique to Okinawa soba. The Okinawa soba noodles are boiled, coated with oil, cooled, and then blanched upon ordering, resulting in a softer texture. The soup is made from pork bone and bonito flakes, giving it a light yet flavorful taste with a subtle bonito aroma. I added red pickled ginger and koregusu (awamori with island hot peppers) for flavor variation. There wasn't a specific question about the rice portion, but it's about the equivalent of a small bowl. Of course, I placed the soki and tebichi on top of the rice! Delicious! To be honest, I really liked this place. While cycling, I stumbled upon this place that serves Okinawan cuisine called Agarie in Higashi. I tried their Higashi soba for 950 yen, which came with stir-fried vegetables, pork belly, and pork ribs. It tasted more like champon rather than traditional Okinawan soba with bonito broth. The pork belly and ribs were cooked in a gentle manner, not too sweet or salty. Personally, I found the soup and the dishes a bit bland and lacking in flavor. I also ordered Okinawan tempura, which had a thick wheat flour coating, similar to bread. The ingredients included mozuku seaweed, white fish, bitter melon, and squid. Overall, it felt like a home-cooked meal.

At the new restaurant "Okinawa Cuisine Agarie" that opened on May 12, 2022 in Akatsuka, located along the Toshimaen Street like "Genki," we first ordered the summer limited dish below: "Naberanbushi" - Miso-flavored stir-fried dish with loofah (sponge gourd), pork (luncheon meat), garlic chives, island tofu, etc., served with Orion beer. We enjoyed it with Goya kimchi as a side dish and sipped on Chrysanthemum liquor on the rocks. After that, we tried the classic Okinawan soba featuring Soki (spare ribs), Tebichi (pig trotters), and stir-fried vegetables. This type of soba with thick round noodles was unique, and we followed the table-side instructions on how to enjoy the "Agarie Soba" by slurping it up smoothly. Delicious!

This place opened in May this year. You buy a meal ticket from the ticket machine and place your order. The recommended dish is the vegetable soba, so I ordered it without checking further. I also ordered an Orion beer, which comes in a bottle. The soba costs around 800 yen, and the beer costs around 600 yen. The restaurant has a sunken kotatsu table for four people and about eight counter seats. The vegetable soba was topped with plenty of stir-fried vegetables like bean sprouts, onions, cabbage, and pork. It was a delicious dish with chewy noodles, flavorful broth, and a generous amount of vegetables. I wanted to try the dish with meat next time, like the East River soba. When I hear East River soba, I think of Urasoe's East River soba, but I wonder if there is any connection. I forgot to ask. Overall, it was a delicious meal.
