[Tokyo, Chuo-ku] [Number of visits: 2 times] August 24, 2020 (Monday) A ham specialty store located northwest of Tsukiji Honganji Temple. The location is... South-east from Chuo Ward Office, and northwest from Tsukiji Outer Market and Honganji Temple. A 1-minute walk from Metro Tsukiji Station A4, and a 5-minute walk from Metro Shintomicho Station (Exit 1EV). Closed on Thursdays. Located in a residential area northeast of Ginza, and it seems possible to walk from Higashi-Ginza Station. Takeout only. On Sundays at 7 pm, if it's your first visit, the store is packed with customers waiting for ham. It is evident that they have established themselves in the neighborhood and gained regular customers within half a year of opening. The owner also runs a beauty salon in the back, which operates by appointment only. It seems that the owner's hobby led to the opening of a ham specialty store. The female staff is very friendly and polite. I became a fan after just one visit (laughs). Some of the items in stock include... [Sandwich] Panino [Ham] Assorted ham [Others] Ham-based side dishes (limited quantity), original pasta sauce with ham, olive oil, balsamic vinegar, tea, etc. The ham and salami assortment starts from ¥2000, and they can make it for just one person. It is best to visit 30-60 minutes before actually eating. If it takes more than 60 minutes to eat, the method of serving changes to maintain quality, and the original taste is lost. You can choose from 4 types of bread for the Panino (ham sandwich). For the filling, you can choose "Single" with just ham or "Double" with ham and salami. There is also a "Triple" with extra ham, and a cheese topping option. They also have selected wines that pair well with ham displayed in-store. Payment is cash only. -------------------------------------------------- ■ Panino A (Double ¥800) * Reduced tax included at 8% Since the ham is cut and made after ordering, the freshness is clearly different from typical bakeries. It is ready in 6-7 minutes after ordering. When taken out of the paper bag, the ham's fat melts and sparkles at room temperature... This sparkling sensation far exceeds expectations. It is understandable that it is necessary to eat within 60 minutes. The white and soft bread is filled with plenty of thinly sliced ham and salami overflowing, along with arugula. Since ham is a fermented food, you can also sense a slightly cheesy aroma. When you take a bite, the complex umami and acidity of the ham, along with the "sweetness of the bread," create a wonderful harmony. The arugula, which absorbs the umami and has a soft texture, also plays a good supporting role with its greenish scent. The compatibility with red wine is truly excellent. The "slightly sweet bread" acts as a bridge between the ham and red wine flavors, enhancing their compatibility. -------------------------------------------------- ■ Ham Assortment of 2 types and 5 varieties (¥3000) In other words, an assortment of 2 types of ham and 3 types of salami. A total volume of just over 100g. The ham is thinly sliced to improve the texture, so it loses moisture over time. Therefore, it is recommended to eat within 30 minutes of purchase. ◎ Prosciutto di Parma A world-famous ham among the top three in the world. Originating from Parma in northern Italy. This is the classic ham. It has a very soft texture with a mellow umami that spreads in the mouth. Since it is sliced very thinly, the fat is not overpowering at all. ◎ Verdiane Cratcha A 12-month aged Cratcha (Cratta) is a ham made from the upper part of the pork leg, close to the buttocks. It has a mild saltiness and is tender. Truly the buttocks! ◎ Coppa di Parma This uses the shoulder loin. As you can see, it is lean with little fat, making it light. You can also sense a hint of spice. ◎ Salame Tartufo This is a salami with chopped black truffles added. The raw salami, where the umami is concentrated, is excellent! Even I, who is not sensitive to scents, can recognize the aroma of truffles. And it has a very milky flavor. Among the ones I tried, this was my favorite! ◎ Pancetta This is ham made from pork belly, familiar to Japanese people as bacon.
