I visited a Jiro-inspired ramen shop run by someone who trained at "Buta Hoshi" in Moto-Yoshigawa for the first time. It is located about a 30-second walk from Kyodo Station on the Tokyu Oimachi Line. I ordered the mini ramen (850 yen) with an extra side of curry (100 yen). [Noodles] The flat, curly noodles had a good texture and held up well in the soup. [Soup] The rich pork broth paired perfectly with the spicy curry, which really whetted my appetite. [Toppings] Although not visible in the photo, there were two large chunks of pork hidden under the vegetables, and they were delicious. The vegetables consisted mainly of bean sprouts with a bit of cabbage. I asked for a small amount of minced garlic, but even then, it was quite plentiful. I heard that there was a long line from the first day they opened. If you go in the early afternoon, around 2 pm, you may be able to avoid the wait. Thank you for the delicious meal.

I visited the ramen shop with a towel and a fan in hand, ready to enjoy a warm bowl of ramen instead of the usual cold version. I purchased a ticket for salt ramen with 2 slices of pork and smoked quail eggs. I decided to go with the default menu of garlic and oil. The salt ramen was delicious, with thick slices of pork and tasty noodles. It was a generous portion, but I managed to finish it all. Overall, it was a satisfying meal.

I tried Taiwanese ramen. The staff's customer service attitude was very poor. I hope they remember that they are in the service industry. I couldn't stand it, so I don't think I will ever visit this place again. I haven't been this disappointed in a restaurant in a long time.

It's been a while since I visited Butafuku. I always look forward to their limited-time offerings. Today, they had shrimp chili?! As I watched the operation, I noticed a generous amount of what seemed like ketchup sauce poured on top! It felt a bit heavy. I ordered with less noodles and they also offer Taiwan Mazesoba and Taiwan Ramen all the time, which is nice. The toppings are the same as the soupless version. I always think they should mention what toppings are included when it's a limited-time menu. The toppings were garlic, oil, spiciness, and mayonnaise. At first, I tried it without mixing, focusing on the sauce in the center. Hmm... it's sweet!! It's so sweet! I wonder how much sugar they put in the ketchup to make it this sweet... The spiciness topping didn't add any chili flavor, and there was no shrimp taste... What is this... Shrimp sweet instead of shrimp chili? The prince of ⭐️'s shrimp sweet? This is the first time I've been disappointed with a limited-time series. It became too much to eat, so I left about 60% and left the restaurant.

I always order mini ramen with extra vegetables, garlic, and oil. I visit this place often with my friend, so I have noticed that whether I ask for extra vegetables or not, the amount remains the same. However, I continue to make the request in case they increase the amount of vegetables in the future. I never ask for extra toppings because there is a sign that says "Please tell us what you want more of."

On Wednesday, September 6, 2023, I arrived at the restaurant at 18:44 and was able to enter smoothly as there were seats available. I purchased my meal at the ticket machine inside the restaurant and sat at the counter. I ordered the soupless soba for 1080 yen with toppings of a small amount of garlic, oil, and mayonnaise. Vegetables are refillable, so I planned to get a refill. At 18:55, my dish arrived with a generous amount of bonito flakes and fish powder covering the surface. I was surprised by the amount, as it seemed like a lot by default. There was also a hidden egg yolk in the center. Although the machine button indicated two slices of pork, I received two large chunks, one of which was as big as a fist. Despite its appearance, the chunks were flavorful and easy to eat, with fibers that separated easily. The vegetables consisted mainly of bean sprouts, cooked to a perfect texture that was neither too crunchy nor too soft. The noodles were hot, flat, thick noodles that were quite soft and slippery. I found myself eating the noodles first, then the vegetables, and by the time I finished the vegetables, there were almost no noodles left, so I ended up not getting a refill. I realized towards the end that the broth had a good amount of black pepper in it. I finished my meal by savoring the egg yolk, mayonnaise, and peppery broth. It was delicious. Thank you for the meal. I left the restaurant at 19:08.

I tried the limited-time menu "Kombu TKM". When I saw the menu name on Twitter, I imagined kombu water with egg over noodles. It was delicious. The bowl was filled with various types of kombu and egg yolk. It was really tasty.

Chilled egg over noodles with kombu water version. This combination is a winner. In the center, there is an egg yolk surrounded by chopped green onions, white sesame seeds, salted kelp, shredded kelp, and green seaweed. Today, there are huge chunks of pork belly and thick slices of pork. I discovered that dipping the pork in wasabi makes it even more delicious. Finished it all, so full! Limited time until the evening of September 3rd and 4th.

Visited during the day. It was popular and limited, so there was a longer line than usual. Added quail and ginger to the limited meal ticket. This menu doesn't require any extra toppings. The kelp water itself is just a broth, so it doesn't have much flavor, but it's tasty enough with the various toppings. It's delicious. It's easy to slurp up, so you don't feel like you're eating a lot. However, I still wish there was garlic since it's a Jiro-style ramen. Even though there were no vegetables, I would have liked to add garlic. It's a bit complicated that as soon as it became a trend, the number of customers increased dramatically. On this day, I visited the restaurant specifically for the limited menu "Kombu.TKM" available only on September 3rd and 4th. It's a part of the beloved "Tonkotsu." Kombu. series♪ TKM stands for "Tamago Kake Men" (egg-topped noodles). This dish comes with no additional toppings like vegetables or garlic, just as it is served. The bowl is beautifully topped with seaweed, green onions, grated yam, sesame seeds, and a raw egg yolk! The usual chewy noodles are soaked in a broth made from kombu, giving them a soft and slippery texture. The refreshing kick of wasabi and the salty kombu broth surprisingly complement each other well. There is no additional fat topping, making it one of the healthier options I've tried in the past! I will definitely be returning for more!

Today marks the beginning of the "Summer Cold Noodle Festival". I tried the first dish, cold Togarashi vinegar ramen. The chilled soup with a hint of acidity topped with hot vegetables was a perfect combination. The minced meat, purple onions, and sliced green Togarashi peppers worked well together, making it an ideal dish for the summer.

Today, I was in the mood for "Tonpukaze" and was considering getting Taiwan ramen, but I ended up choosing the limited menu item, chilled black sesame mala tantanmen, at X. This time, I ordered it in a "soupless" style instead of the usual ramen style. I was feeling quite hungry, so I informed them to only give me half of the noodles when I handed over my meal ticket. I think the call system was probably the same as for maze soba. When I added the "garlic oil mayonnaise," it came just as I expected. The white mayonnaise against the black soup looked great! The firm noodles had a good chewiness and a unique texture that you can only find at Tonpukaze. The crispy fried onions and crunchy bean sprouts were also delicious. Overall, it was a tasty bowl of noodles! I wonder what the next limited item will be! I will definitely be back!

I went because I wanted to try the limited menu. It was lunchtime so I thought I might have to wait in line, but I was able to get in without waiting. The cold tantanmen had a nice acidity and a good sesame flavor, but as someone who was expecting more numbing and spiciness, it didn't quite meet my expectations. I will try another limited menu item next time.

Pork-based ramen. Limited edition. No plum tea. I was extremely hungry, so I forgot to order the grated yam topping until after I finished eating... A regrettable mistake. As the name suggests, it's a ramen dish like plum tea over cold noodles that go down smoothly. In the latter half, the saltiness was too strong, so a raw egg was a must.

I visited at noon. This time, I tried the wasabi from "Tsumetai Wan" with quail and ginger added, along with garlic and hojoko. Even though it was cold, it's still Taiwan, so it was quite spicy. However, the pork was tender, the minced meat was delicious, and I could keep eating. I tried adding hojoko for a challenge, but it overwhelmed the wasabi flavor, so I may have paired it incorrectly. It might be just right to order the normal Taiwan style. Even though it wasn't hot, I broke a sweat after eating. Thank you for the meal.

Visited during the day. The Taiwan mixed soba noodles are famous, but they had a limited edition cold version available. Besides the regular, you can choose from tomato, wasabi, and Indian flavors. This time I chose tomato and added garlic. The taste is similar to the normal Taiwan soba, but the sliced tomatoes add a tangy and flavorful touch, making it perfect for a cold dish. It was delicious. The green onions, garlic, and chives were spicy enough to leave a tingly sensation after eating. A perfect dish for summer. Thank you for the meal.

I have visited this place many times and the Taiwanese ramen never fails to impress with its consistent deliciousness! This time, I decided to go all out and add cheese as a topping! Normally, I would mix the raw egg in like sukiyaki style, but this time I left it as is! Personally, I think sukiyaki style might have been better for a change in flavor! The level of spiciness was just right, and the balance of chives, ground meat, and green onions was perfect. It's a shame that I couldn't add garlic due to work reasons... I had planned to order extra rice to go with it this time, so I ordered only half the noodles. The combination of cheese and rice made it taste like Taiwanese cheese risotto, and it was so delicious that I almost thought I was a genius... This restaurant offers a variety of limited-time menu items, so I always struggle with what to order, but if you're ever unsure, I recommend trying the Taiwanese ramen! I will definitely be back!

Long time no see. This time I ordered the limited edition "Cold One/Tomato" ramen. I got 300g of noodles with all the toppings. The intense dish is complete. The Taiwan-style mixed noodles have been transformed into a cold version for the summer. It's easier to swallow and the customization with tomato adds a refreshing touch. It's amazing that you can go on a Saturday and not have to wait in line. I don't think there's a better value for a Jiro-style ramen than this place.

On a holiday after 1:30 PM, two people sat at the counter without waiting in line. We ordered the following menu item: "Cold Taiwan Mazesoba (Wasabi)" for 1,300 yen. The toppings for the Taiwan mixed soba included garlic, oil, caramel, hojao, and mayonnaise, so we chose hojao and mayonnaise. I mistakenly thought that all the toppings were included and you could add more, so I wanted to add garlic as well. The chashu was thick! I debated between wasabi and tomato, and chose wasabi, but I think Indian would have been a good choice too. The portion was generous, and we left with full stomachs! Thank you for the meal!

It had been a while since my last visit. I visited shortly after the restaurant opened, and having high expectations as a fan of Butaboshi, I decided to try their ramen. I didn't post about it, but I ended up choosing the tsukemen with less noodles and extra pork. The noodles were cooked for about 9 minutes and 30 seconds. The toppings I chose were oil, garlic, and spiciness. The dipping sauce was red, is that default or because of the spiciness? The dipping sauce had a strong acidity and was easy to eat, with a hint of spiciness probably from chili oil. The noodles were delicious even on their own, although I thought they might have been cooked a bit too long. The pork had a nice texture. Next time, I'll try the maze soba.

The limited edition konbu seaweed ramen, Rose, has ended and the limited menu lineup has changed! This time it's "Tsumetai Wan," a cold version of Taiwan maze-soba. I've been getting into Delo noodles recently, and the pork-flavored noodles from Butafuu are quite delicious to me. Furthermore, when summer comes around, I love cold noodles like tsukemen, and the Delo noodles become even more delicious. Tsumetai Wan comes in three flavors: Normal, Tomato, Sansho, and Indian. This time, I chose Tomato! I added garlic as a topping, so there was a unique junkiness to the Taiwan maze-soba, while also subtly tasting the acidity of the tomato, making it very delicious! Of course, I had to order extra rice! I always make sure to try the remaining Sansho and Indian flavors as well. As for the regular menu, my personal favorite is the "Taiwan Ramen"! Extra rice is free! I will definitely be back!
