Salt Ramen "Shio Ra-men" in Shinbashi, a popular restaurant with long lines in Yokohama. Whenever I visit Yokohama, I always make sure to stop by this beloved restaurant. About a year ago, they opened a new branch in Shinbashi, so I went to say hello. The main store is in Yokohama, but the original main store in Hon-Atsugi seems to be under different management now. They also have branches in Motomachi, Yokohama Bayside, and Kawagoe, but as of now, this is their only location in Tokyo. Being in Shinbashi, they are closed on Sundays. However, they stay open until 2 am on weekdays and until 5 am on Fridays and Saturdays. They have a break time, so be sure to check their hours. The ticket machine is cashless only, so if you pay with cash, you can do so with the staff. I visited on a weekday evening when it was less crowded. While the main store in Yokohama is always busy, this location had no wait. A hidden gem. You order through the ticket machine, and the staff double-checks your order before printing the ticket with the owner. They even provided a basket for my belongings. Exceptional service. Just like the Yokohama branch, you can add toppings with cash after you are seated. Unfortunately, they did not have the gyoza that I always ordered at the Yokohama branch. I ordered the "Honmaru Shio Ra-men" (900 yen) with a salted boiled egg (120 yen). The beautiful presentation with the green spring chrysanthemum leaves. The homemade flat noodles were chewy and had a delightful texture. The clear and flavorful soup had a strong saltiness, which was delicious, but as I've aged, I found it a bit too salty to finish completely like I used to in the past. The thick and tender chashu was as tasty as ever. I prefer it over the trendy low-temperature cooked chashu found in many places in Tokyo. The flavored egg was also reasonably priced. One of the unique features of this restaurant is the spring chrysanthemum. When dipped in the hot soup, it emits a delightful aroma. I heard it was inspired by the first owner's favorite ramen shop in Osaka, the Kozue River Ramen. Overall, the Honmaru Shio Ra-men was delicious. I might visit the main store in Yokohama after a long time. This is definitely a recommended spot for a satisfying meal after a night of drinking in Shinbashi!
