Two people visited a ramen shop a little before 12:00 on Saturday. It is located on the 1st floor of Area Shinagawa (not Atre), about 1 minute to the left on the 2nd floor sidewalk after exiting JR Shinagawa Station East Exit. We stopped by on our way back from the "Tokyo Meat Market Festival," which was held for the first time in three years. This ramen shop originated in Niigata and has expanded its franchise nationwide. When we arrived, the place was just full, so we had to wait for about 4 minutes, during which more and more customers arrived, forming a line of about 10 people behind us. When we were called in, we were asked for our orders outside the shop. There were menus placed outside as well, offering a variety of options such as soy sauce, salt, miso, spicy miso, tonkotsu soy sauce, and tantan. I ordered the Chicken Soy Sauce Ramen for ¥800 with extra noodles for ¥160. My companion ordered the Vegetable Miso Ramen, which was listed as the most popular item on the menu, for ¥900. I wanted to have a mini fried rice, and my companion wanted dumplings, so we decided to get the Mini Fried Rice and Dumplings Set for an additional ¥580 to share. We could choose between thin noodles and thick noodles, so I chose thin noodles, and my companion chose thick noodles. For the set's dumplings, we could choose between vegetable dumplings and special dumplings, and we chose the special dumplings. After waiting for about 8 minutes, the Chicken Soy Sauce Ramen and mini fried rice were served, followed by the Vegetable Miso Ramen and dumplings in about 10 minutes. The Chicken Soy Sauce Ramen included a slice of chashu, 2 pieces of menma, a half-boiled egg, nori, and green onions. The chashu was tender and flavorful, the menma was thick but lightly seasoned, and the noodles, although I chose thin noodles, were actually slightly thicker than expected. The shop's specialty is incorporating persimmon tannin into the noodles, which is said to be good for the body, although I didn't notice any significant difference in taste. The broth, despite being chicken soy sauce, was light in flavor, umami, and richness, with no hint of odor or off-flavors. The back fat on top didn't seem to have much presence, and I think it could be omitted if aiming for a light and healthy option. My companion also found the Vegetable Miso Ramen to have a subtle and light soup. The mini fried rice included finely chopped chashu, egg, minced carrots, and green onions. It had plenty of ingredients, with the crunchy green onions surprisingly standing out. The lard was rich and flavorful, contrasting with the chicken soy sauce soup. The portion was mini-sized. The set of dumplings came with 3 pieces. In addition to an empty soy sauce dish, there was also a dish of miso sauce. My companion shared one dumpling with me (or rather, told me to eat one!). They were of a standard size, with a well-filled filling. The crispy sear was delicious, and there seemed to be a hint of garlic, so those sensitive to it might prefer the vegetable dumplings. Personally, I felt that if the ramen soup was just a bit better...
