Touhaku's special exhibition tour of Tohoku-ji Temple ended with a visit to a bar. When I heard about Yushima, I wanted to visit this bar called "EST!" in the area. I thought it might be too early for me, as I had just started exploring bars, but since I was already nearby, I decided to stop by. "EST!" is a bar in Yushima, Tokyo, that bartenders dream of visiting. The master, Akio Watanabe, has been studying cocktails on his own for over half a century. The first cocktail he reveals, along with his cocktail theory and recipe, is a highball that allows you to savor the scent of Scotch whiskey. Why does he deliberately not fill the glass to the brim when serving the highball? The highball at "Bar Nagasawa," which I visited where they do not have ice, was also delicious, so I decided to start by ordering it here as well. The highball was rated 3.9 stars by me. Oh, just as expected, the scent is wonderful with it filled to about 70%. Yes, the taste is also refreshing. I visited at 5:00 pm, still new to this, so the bartender was considerate. Even when serving, he said, "I made it with Johnny Walker Black Label." After finishing one drink, feeling confident, I asked, "Can you make it with a double wall next time?" And he replied, "We only have Johnny Walker Black Label here." Oh, right! This place is an authentic bar with a rich history! Next, I tried the "Maui High" (the master's original cocktail), which was deliciously made with fresh fruits. I gave it 4.0 stars. Then, there was the "Unnamed" cocktail (the master's original) made with golden kumquats and gold rum, which I rated 3.4 stars because the taste seemed a bit faint to me. Lastly, the "Evening Glory" (the master's original) made with lychee, grapefruit, and rum received 4.0 stars from me. The lychee was faintly aromatic and very tasty. These cocktails were enjoyed while feeling the history of the place. Thank you for the wonderful experience.
