Access Tokyo Waseda East-West Line "Waseda" Station (Exit 1) is a 6-minute walk away, and I arrived at 10:10 for my third visit. There were 14 people waiting on Monday (holiday). I had been waiting for almost an hour from early in the morning for today's morning activity, so I was feeling tired. The early opening at 10:33 was a great relief, a wonderful consideration. I entered the shop at 11:25. I ordered the new salt ramen with seasoned egg and spicy topping. I had chosen medium size last time because the noodles were slightly soft, but this time I was given regular size. The soup has a deep umami flavor from bonito and seafood, and it is gentle and smooth. The salt ramen had a clear salt flavor, but the new salt ramen tasted closer to soy sauce ramen. Towards the end, I added some spiciness and vinegar, but the soup was so wonderful that I didn't feel the need for flavor change. The noodles this time were firm and had a good flavor balance with the soup. The menma (bamboo shoots) was still delicious as always, and the overall perfection was high, it was a divine bowl of ramen. Although the soy sauce and salt ramen were delicious, personally, I liked the new salt ramen the best in terms of flavor. Initially, I saw many reviews saying that the shop owner was picky, but if you do your homework, you can enjoy delicious ramen without any problems. This time, I had a regular ramen for 1,000 yen, with 250g of noodles. The soup had a slight sweetness to it, along with a subtle seafood flavor and a thin layer of oil on the surface. Despite appearing to have minimal oil floating on top, the thin oil film helped maintain the soup's temperature until I finished the noodles. The seating area only had a counter with 7 seats, and I queued at 10:45 a.m. before entering at 12:03 p.m. The shop had a strict policy of not allowing partial entrances or queuing, requiring all party members to be present before lining up. The noodles were freshly made and had a good chewy texture, while the chashu pork had a strong flavor and tender texture. The soup's taste may be subjective, but I found it lightly sweet and enjoyable. The owner also offered the option to adjust the soup's richness to your preference. Overall, it was a satisfying experience, demonstrating the owner's dedication to quality and attention to detail.

It's been a while since I visited Toshioka! I tried their abura soba today, which I usually don't eat much of. They have three types of cold abura soba: chili oil, garlic oil, and new salt oil. I chose garlic oil this time. You can choose regular or large serving of noodles, and I went with the large serving because I was hungry. I arrived 45 minutes before they opened and waited for about 80 minutes for a seat, then another 30 minutes for my bowl. It took almost 110 minutes in total. First, I tried the noodles without mixing. The seasoning oil was already on them and it was delicious! There's a lot of noodles - a regular serving is 250g (375g cooked) and a large serving is 350g (525g cooked), so you have to mix carefully to avoid spilling. There are sliced chashu, sinachiku, and moyashi at the bottom. There is also plenty of oil broth at the bottom. It's better to mix everything well. The raw egg mixed in was a nice touch. I added extra chashu, and the amount was quite generous. The flavor isn't too strong, even though I chose garlic oil. It doesn't smell overwhelmingly of garlic, so it's safe for people who have work later. Personally, I don't usually like abura soba, but I found this one delicious. The noodles are exceptional! Lastly, adding the soup to make a soup mix was also delightful. The ramen soup is just too good! It's tasty and satisfying, but I still prefer regular ramen. Next time, I'll try the new salt ramen!

Visited the restaurant with my wife on Wednesday at 11:51 AM. There were 11 people waiting in line. After waiting for 39 minutes (12:30 PM), my wife went inside the restaurant first because she eats slower than me. It was okay for us to sit separately. I entered the restaurant 10 minutes later (12:40 PM) and purchased food tickets for "Salt Ramen with flavored egg", "Bamboo shoots", and "Spicy sauce (on a separate plate)" for a total of 1550 yen. It took about 10 minutes to collect the food tickets. At that time, I requested a larger serving. This restaurant offers the same price for regular serving (250g of noodles) and large serving (350g of noodles). They also have a small serving (150g of noodles) which is priced 50 yen lower. My wife opted for a small serving this time. In the final step of making the Salt Ramen, chopped ginger and spicy sauce were added on top of the green onions, then sizzling oil was poured over it. The sizzling sound was appetizing. This was no ordinary ramen, it was bound to be delicious. My ramen was served 10 minutes after collecting the food tickets (exactly 1 PM), which was 1 hour and 9 minutes after arriving at the restaurant. It was a bit late this time. I noticed that many people ordered Salt Ramen during this visit. I witnessed the sizzling oil being poured over the soup about 5 times. A collagen-like film was formed on the surface of the soup, perhaps this is unique to Salt Ramen. The soup, as always, had a deep umami flavor that was straightforward and delicious. The noodles were slightly thicker than usual, with a chewy texture. The bamboo shoots had a gentle flavor soaked in the broth, tender and not too salty. The flavored egg had a rich taste and the color of the dashi on the surface penetrated inside the egg. Delicious. The chashu had a chewy elasticity but tore easily when bitten. The chashu here was also excellent. I might consider ordering extra chashu next time. As for the spicy sauce, I enjoyed it by picking it with chopsticks and eating it directly from the separate plate, enhancing the flavor with notes of sakura shrimp. I prefer savoring all the ingredients separately, so this eating style suits me best at this restaurant. Overall, savoring the prowess of this restaurant once again, I finished the soup to the last drop. Oh, it was delicious. Thank you for the meal!

Arrived at 9:20 on Saturday and was 14th in line. It was cool after the typhoon, so I'm not sure how crowded it usually is... Last time I arrived at 10:10 and was 24th in line. Around 10:20, some regulars? started setting up their chairs, but there wasn't much movement inside the restaurant. At 10:36, the doors opened and the first 8 people entered. I, being 14th, entered at 11:30. About 40 people were waiting by then. I purchased a voucher for the cold oil noodles and waited. When the shop owner came, I handed over my voucher and went inside. I was served at 11:50. The ingredients were added to the chilled bowl, and the noodles were tightly packed. The cold noodles were truly cold. It's essential to mix well until you reach the sauce at the bottom of the bowl. The chewy noodles coated in miso sauce were delicious. Unlike ramen, the rectangular slices of char siu seemed to go well with the noodles. I might want to add extra regular char siu toppings next time.

I'll have to wait for the day to try the chilled oil noodles. I purchased my ticket at 12:55 pm, which was 37 minutes after I started lining up. I bought tickets for "New Salt Ramen with Flavored Egg Regular Size," "Menma (Large)," and "Spicy (on the side)." The total came to 1800 yen. I requested a medium serving when I handed in my ticket. The shop serves a regular size with 250g of noodles and a medium size with 350g. It took 12 minutes from handing in the ticket to the ramen being served. The soup seemed to be lighter than usual, and the noodles were a bit softer than usual. But it was delicious. The "Menma (Large)" had a considerable amount, with a soft and gentle taste complemented by the umami from the broth. I enjoyed every bite, savoring the happiness. I finished the soup again this time. Some may have different opinions regarding whether "Salt" or "New Salt" is better, but I might prefer the "Salt" version. The soup in the previous "Salt" had a layer of fat on the surface, while the "New Salt" this time did not. I am unsure if this was just a coincidence or if there is a real difference between "Salt" and "New Salt" soups. I'll go back to "Salt" next time. Thank you for the delicious meal.

I arrived a little after 9 am, securing my spot for the first round, as they open at 10:55 am. I joined the regular customers in line, enjoying some beer and snacks like bamboo shoots and simmered pork belly. After about 15 minutes of waiting, it was finally my turn for the highly anticipated bowl of noodles. The shiny black broth, slightly sweet and sour, with a mountain of smooth, medium-thick noodles (equivalent to a regular serving of 250g) was a wild experience. The slightly tender, short-cut simmered pork belly and sweet and savory seasoned bamboo shoots each brought their own unique flavors to create a harmonious feast. I felt quite full halfway through but managed to finish it all, savoring the hot soup split at the end despite being incredibly full. It was delicious! Unfortunately, they were sold out of flavored egg, bamboo shoots, and roasted pork as toppings. They confirmed the amount of noodles when collecting the meal ticket. I chose "Medium." The noodle portion at this restaurant is 250g for regular and 350g for medium servings. After handing in my meal ticket, the bottled beer, complimentary appetizer, and side spicy sauce arrived promptly. The beer was ice-cold and accompanied by a nice array of appetizers, including bamboo shoots and chopped pork with chili oil sprinkled on top. Burnt chili oil was drizzled on top of the green onions and ginger, adding a special touch. I noticed that the amount of green onions in "Salt Ramen" seemed less than in "New Salt Ramen." I decided to line up at Hayama in Ushigome Yanagi-cho, which I love, since it was closed. It took about 30-40 minutes to enter the store, and one person made ramen for 3-4 people at a time. You can tell they pay attention to the operation, so I was fine with waiting. The appetizers that came with the beer were amazing!! I ordered the salted chashu ramen based on reviews, and it was more than satisfying in terms of volume and taste. Next time, I would like to line up with a friend and enjoy the wait.

It's been a while since I last went. I arrived on a weekday at 11:50 and got number 9 in line. The bowl arrived at 12:50... a one-hour wait. I had the salt flavor last time, so this time I ordered the soy sauce medium serving. They carefully prepare it, so it takes a bit of time to be served. They always taste the soup before serving it, so you can be sure it won't taste bad. The noodles are medium thickness straight noodles. The soup has a seafood base. But there's something about it that draws you in. However, I think I'll wait until it's a bit cooler before lining up again. The waiting area is shaded, but lining up outside for an hour in this recent intense heat is tough. I'll come back when it's a bit cooler!

I finally decided to visit this place that I had been curious about for years, as I had no plans for the day. I arrived at noon under the scorching sun, expecting a shorter line due to the heat, but to my surprise, there were about 20 people waiting ahead of me. I underestimated the situation. Sweating profusely, I waited for about 110 minutes before finally entering the store. I purchased the salt flavored egg first from the ticket machine, not able to choose the portion size yet, and would do so later when ordering. Initially considering a larger portion, I decided to go with the regular size, assuming that the portion might be too much, judging from the fame of the shop. Once seated, I placed the food ticket on the counter and waited for a while until the noodles were ready, when the owner asked me about the portion size, I opted for the regular size. The tsukemen was prepared within 10 minutes, ahead of the other dishes, as there is a cooling process involved. The appearance of the dish was reminiscent of the current Benten shop's salt tsukemen. Upon tasting the soup, it was quite similar, with a slightly more animalistic flavor and a milder taste, which might not feel out of place even if served at Benten. The ingredients and their flavors and textures were similar as well, with the only noticeable difference being the finer chop of the green onions. The amount of noodles was as expected - similar to the regular portion at the current Benten shop. Despite waiting in the sweltering heat, I thoroughly enjoyed the Benten flavor and felt satisfied. I was looking forward to experiencing the difference in taste, but it turned out to be a pure Benten flavor, making the wait worthwhile. With the current operations, it seems like a once-in-a-lifetime experience, but I hope they will continue for a long time. Thank you for the meal. It was delicious. For those visiting for the first time, take note that during the summer, the waiting time may increase by 1.5 times due to the increase in tsukemen orders. If there are 20 people waiting ahead of you, it may take about 2 hours to finish your meal. Purchase your food ticket after seating becomes available, choose carefully without rushing, and wait for the owner to ask about the portion size or handling of the raw egg. Clearly communicate whether you want the raw egg on top or separately, or just the yolk. After you finish eating, place the bowl on the counter, wipe the table, and say "thank you for the meal" before leaving. The somewhat blunt owner will respond pleasantly, allowing you to leave feeling satisfied (laughs).

Visited at 9:20 PM on August 18, 2023. 10th person in line. First day after the Bon holiday break. The queue was moderate. Ordered bottled beer and appetizers upon entering. The bamboo shoots and char siu were excellent! The homemade chili oil and finely chopped green onions added a nice touch. The salt ramen here has a unique and excellent soup that you can't find anywhere else! The noodles are delicious, but honestly, Toshio recommends the tsukemen and cold abura soba, as eating the noodles cold really brings out their flavor. Personally, I find the warm ramen noodles delicious, but not outstanding. While the satisfaction after the meal doesn't quite match the tsukemen and cold abura soba, it is still delicious.

This presented a good opportunity to get in without much waiting. The day before, on August 11 (Friday, a public holiday), I had come to the shop at 1:40 p.m. and found a line of 30 people, so I decided to leave. It turned out that the next day there were only 14 people in line, so it seems like coming back on that day was the right choice. The waiting area was in the shade, but it was still hot with a temperature of 35 degrees in Shinjuku. I purchased my meal ticket at 2:00 p.m., 53 minutes after lining up. I ordered the "Ramen (regular size)", "Spiciness (separate plate)", and "Medium bottled beer (with snack)" for a total of 1800 yen as the seasoned eggs and chashu were already sold out. The master was very busy, and it took a while to collect the meal tickets. I specified the noodle portion size when the meal tickets were collected. I chose the medium size with 350g of noodles. The beer arrived 15 minutes after I sat down, followed shortly by the spiciness on a separate plate. I enjoyed the chilled beer with the spicy side dish while waiting for the ramen. The ramen was served 12 minutes after the beer, and it had a flavorful broth with soy sauce as a supporting flavor. The noodles were chewy, and the chashu was tender and well-flavored. The menma was also delicious, with a unique taste that stood out. I tried adding garlic, vinegar, and pepper from the condiments on the table, but I found that the original flavor of the broth was the best. I personally prefer the "Shio" ramen as it allows the broth's flavor to shine. Overall, the meal was satisfying and delicious.

The ramen (regular) was 1000 yen, and extra seaweed was 100 yen. The soup had a strong bonito flavor, with a delicate taste. There was a lot of green onions in it, which was nice. The noodles were delicious, chewy and satisfying. When I held the bowl and drank the soup, I could taste the broth even more.

I visited around 11 am on a weekday and there were about five people waiting in line. I'm not sure if this is the usual situation, but they seem to be understaffed, so the turnover is slow. It might be better to give up when the line is long. The food is decent, but the wait time is a concern, so I'm not sure if I will go back again.

They can only seat 8 people at a time, so a second round was guaranteed. Everyone seemed used to it, sitting on portable chairs and using sun umbrellas while waiting. Since it was summer, the direct sunlight made the umbrellas necessary. The place opened as scheduled, with around 18 people in line. After I joined the line, very few people came after me, making it tricky to time the wait. I finally got to enter during the second round, 30 minutes later, and the ramen was served at 11:50 am. The wait was quite long. I had the regular salt ramen, and it was well worth the wait - very delicious.

I purchased the "New Salt Ramen (Regular Size)" meal ticket along with a bottle of beer (with appetizer) and a side of spice. The total cost was 1900 yen. The beer arrived at 2:00 pm, perfectly chilled and accompanied by appetizers. The ramen was served at 2:09 pm, and just like the previous "Salt Ramen", the "New Salt Ramen" had a brown soup, which was surprisingly delicious. It had a unique taste that reminded me of okonomiyaki. I enjoyed it to the last drop. Overall, I preferred the "Salt Ramen" slightly more than the "New Salt Ramen". I finished the soup too. It was a satisfying meal.
