"Mikawadacho's ramen shop, Hakata Tonkotsu Ramen Ikkan Mikawadacho Honten, is produced by a contestant from the TV show "Gachinko Ramen Michi." The shop is run by Komatsuzaki, the founder of "Soupmen" and current owner of "Mukan" in Nakano and "Mukan" in Gotanda. He was a former boxer who appeared on "Gachinko Fight Club" rather than "Ramen Michi." In February of this year, they collaborated with "Ikkan" to offer the "Mukan" Oyster Salt Ramen, which was very well-received. Starting from March 16th, they are now serving the "Mukan" produced "Backfat Nori Niboshi" ramen. The shop is located just a 1-2 minute walk from Mikawadacho Station North Exit, under the elevated tracks, near the popular restaurant "Kamo to Negi." Until March 12th, Komatsuzaki, the owner of "Mukan," will also be at the shop during lunchtime (the "Backfat Nori Niboshi" ramen will continue to be served for a while). The soup is based on the "Backfat Niboshi" that was previously served at "Soupmen." The "Backfat Nori Niboshi" ramen costs 1000 yen and is visually striking with a generous amount of scattered nori on top. The soup, made with four types of dried fish including sardines, mackerel, round herring, and horse mackerel, has a slightly bitter taste with a strong salty punch. The soup also contains plenty of backfat, paying homage to the "Enjo Sanjo Backfat Niboshi" style. The noodles are thick flat noodles from Kanou Seimen, cooked for 5 minutes to achieve a chewy texture. The toppings include thinly sliced rare chashu, thick menma, and chopped onions underneath the nori. Today, I had work in Ueno and was craving ramen. Ueno is known for having high-level ramen shops like Hanada and Kamo to Negi. I walked eagerly with my stomach growling, but Hanada was closed and Kamo to Negi had a long line. Unable to suppress my ramen craving, I stumbled upon a ramen shop and immediately went in. It seemed to specialize in tonkotsu ramen, with their specialty being the Hakata motsu-yaki vegetable platter ramen. Being my first time at the shop, I asked for their recommendation. The ramen came with a separate plate of vegetables on top of the bowl, which was a visual I hadn't seen before. Under the thin slices of chashu was a stir-fry of vegetables centered around bean sprouts and motsu. It looked like it would go well with rice. When I moved the plate, I saw a simple tonkotsu ramen reminiscent of Ichiran. While both seemed delicious on their own, following the recommendation and putting the motsu-yaki vegetables into the tonkotsu ramen created a punchy flavor combination in no time. The harmony between tonkotsu and grilled vegetables was quite impressive. This ramen seemed to be a new type that I hadn't encountered before. In the fiercely competitive ramen district of Ueno, having ramen with a unique twist like this could be a good idea.

I don't understand. I said it right next to them so they should have heard, but they ignored me. Unpleasant. The ramen was incredibly delicious, but it was so unpleasant. Also, the way they guided us to our seats was confusing. There were only two customers (me and another person) at that time, and we were sitting one seat apart at the counter. Even though there were plenty of other empty seats, they made someone sit between us. It didn't make sense. The customers who came later also seemed uncomfortable. It's a shame because the ramen was really delicious.

Near Ueno-Okachimachi Station, I felt like having ramen and discovered this highly rated shop. There was only one group of customers waiting in line, so I lined up behind them. After a while, it was my turn and I purchased a ticket for the authentic Hakata tonkotsu ramen for 800 yen. When I sat down, there was a sheet where I could customize the firmness of the noodles and the richness of the flavor. I thought this style was quite nice as I carefully considered my choices! I chose rich flavor, no oil, basic garlic, no green onions, no spiciness, and firm noodles. When the noodles arrived, I was enticed by the perfect firmness, richness of flavor, and aroma of garlic, and I finished it in just 10 minutes! I would love to visit again when I'm in the area. After a while, I walked around Ueno and found a new pork bone ramen shop that I had never seen before. It looked similar to Ichiran, so I decided to go in. I tried their regular pork bone ramen. The taste was similar to Ichiran. Unlike Ichiran, they seem to have various versions, so next time I want to try their vegetable ramen.

I was wandering around looking for a ramen shop after drinking in the afternoon, and happened to come across a shop. They had the usual ticket machine at the entrance, but they only served beer for drinks and did not have gyoza. However, the noodles were thin and very spicy. It was delicious, so it's worth a try!

I tried the <Large Serving Challenge> at a ramen shop right near Ueno Station. I ordered the "Hakata motsuyaki vegetable mix ramen <Oni Mashi>" for 1,650 yen. This dish features over 1kg of vegetables and over 10 slices of thinly sliced roasted pork, a super-sized menu! The bowl that came out was so heavy. The table couldn't even hold it, it was such a large bowl with a huge serving of vegetables on top. As for the taste, the crunchy bean sprouts and roasted pork are delicious in the stir-fry! It makes you want rice! The ramen itself is a creamy Hakata pork bone broth. I pile the bean sprouts and meat on the ramen and keep eating. The soup gets a bit diluted along the way due to the moisture from the bean sprouts, but I managed to finish it all! It was a super filling Hakata ramen menu!

I love Tonkotsu Ramen, so I went to a girls' night out at the Ittoki Okachimachi Honten. We started with a toast with bottled beer. First up, the limited edition Clear Tonkotsu Ramen. It was my first time trying a clear, transparent Tonkotsu soup. I love the thin noodles and the vegetable toppings. The generous amount of toppings like soft, delicious rare chashu made it even better. You can add green onions, half-boiled eggs, garlic, and extra pork fat. You can also get extra noodles or vegetables. I wonder what "Oni Mashii" means... I'll ask next time I go there. The staff were also wonderful. Thank you for the delicious meal!

I visited the restaurant as soon as it opened. It seemed like a new place, with a clean exterior and interior. Since it was my first visit, I didn't know what to order and ended up getting the regular tonkotsu ramen. It was similar to Ichiran ramen, but very delicious, and I even got an extra serving of noodles. I recommend it. Next time, I think I'll try the vegetable stir-fry ramen.

I visited "Hakata Tonkotsu Ramen Ikkan" which opened under the elevated tracks about a 2-minute walk from Okachimachi Station. Although it hasn't been open for half a year yet, it is a popular shop with a constant line (counter seating only, ticket machine system). I was drawn to the carefully prepared beautiful tonkotsu ramen, but this time I was aiming for the back fat, nori, and dried fish ramen supervised by the famous "Mukan" (1000 yen). The saltiness was harder than I imagined, but the ample back fat added a mellow flavor. Under the mountain of chopped seaweed, there were rare chashu, menma, and chopped onions as toppings! The chewy noodles intertwined with the soup-soaked seaweed to create a unique bowl. The shop is very clean and has a pleasant atmosphere, which is also a charm of this place.

I visited a tonkotsu ramen shop in Okachimachi. I initially thought it was a new brand shop owned by the owner of Mugan, but it seems that the limited menu "Backfat Seaweed Niboshi" is a menu produced by the owner of Mugan. As for the taste, honestly, I didn't find much difference compared to Ichiran. The soup was slightly creamy with a hint of pork bone broth, but lacked depth and richness. If it's without artificial seasoning, I think they are doing their best, but if it contains artificial seasoning, I would be disappointed. The noodles were good. The thin noodles combined well with the creamy soup, and the spiciness (chili oil) added a nice kick that gradually blended into the soup, making it delicious. The wheat aroma of the noodles itself was also quite good. Since the "Backfat Seaweed Niboshi" was already sold out, I tried the specialty dish with a variety of vegetables and motsu (offal). The mysterious sauce on top didn't have much flavor. The motsu and sauce didn't have much taste, and when mixed with the vegetables in the soup, the flavor became diluted, so I think the table-side ramen sauce is essential. It was more like a seasoning to prevent the flavor from becoming too weak due to the vegetables. Overall, it was just an ordinary tonkotsu ramen. It's similar to Ichiran, but in terms of cost performance, it may be better as it is cheaper than Ichiran. My evaluation might change if I try the Backfat Seaweed Niboshi.

I visited around 11:50 AM and purchased a 650 yen ticket for the Hakata Tonkotsu Ramen. I secured the second seat from the back at the counter. I ordered for the flavor to be basic and the noodles to be firm. The soup was rich and flavorful, so good that I finished every drop. The noodles were straight and typical of Hakata style, with a hint of flouriness. Thank you for the meal.

You can customize the spiciness and garlic level by writing it down on a piece of paper. The taste of the tonkotsu ramen is traditional, but the soup is a bit too salty. To be honest, it's the most delicious tonkotsu ramen I've had recently. Simple is best!! There's nothing unnecessary in it!! The noodles are firm, and the soup is not too rich!!
