Many inbound tourists also visited the shop. On the day I visited, one after another, foreigners came to the shop! The exterior of the shop is in a Japanese style, which seems to be appealing to foreigners. Upon entering the shop, you first place your order at the ticket machine. I ordered the shop's specialty, the "Limited! Hakata Clear Tonkotsu Ramen." There is an order sheet where you can customize the flavor intensity, amount of fat, garlic, green onions, spiciness, noodle firmness, and vegetable quantity to your liking. I ordered everything at the basic level! I added bean sprouts, green onions, Hakata motsu-yaki, seasoned egg, and rare chashu as extra toppings. It was very luxurious once topped! The thin noodles were a perfect match with the soup! The rare chashu was very tender! The seasoned egg was just the right amount of soft-boiled. When it comes to tonkotsu soup, it is usually a rich, opaque soup, but this ramen features a clear tonkotsu broth! The tonkotsu soup, carefully skimmed with chicken mince, is combined with Marue soy sauce and Sazuran soy sauce, using Sugo Seimen Hakata noodles. The ingredients include vegetables from the shop's own farm in Noda, Chiba Prefecture, and a Hakata motsu-nabe-style vegetable assortment with a topping of slowly cooked rare chashu. It is a visually stunning ramen. Another recommended dish is the "Backfat Seaweed Niboshi Ramen," supervised by "Mukan," which has been selected as one of the top 100 ramen shops. The ramen features a mountain of shredded seaweed, creating an impressive visual. Beneath the seaweed, there are toppings such as rare chashu and vegetables. The soup is made with four types of niboshi: katago, saba, urume, and aji, with plenty of backfat. Despite being rich, the soup is light. The crispy seaweed was also very delicious. The noodles are slightly thick, providing a chewy texture that pairs well with the soup. I had always associated tonkotsu ramen with opaque soup, so the clear tonkotsu broth was a new taste for me. The shop opened in January this year, so it has only been around for about six months, making it clean and tidy. It is a shop where even a woman can easily enter alone.
