Visited on Friday night at 6:30 pm. The restaurant seemed to have multiple floors, with plenty of seating available. Had dinner at a table on the first floor. Orders were placed using a touch screen. The food was decently tasty, especially for those who enjoy spicy dishes. I'm not a big fan of spicy food, but I really enjoyed the flavors. However, the staff's service was very poor. They were constantly on their phones and didn't pay much attention to customers.

I didn't have time before my appointment in Higashi-Ginza, so I decided to drop by here. I ordered the most popular Malatang noodles for ¥800, without cilantro. It's been a while since I had knife-cut noodles. I could see them being cut in the back. It was served shortly after. The bowl was large. The noodles were chewy. The soup wasn't as spicy as I thought, so I added some chili peppers from the table. The numbing sensation was just right. It was a lively atmosphere with authentic Chinese conversations going on in the background.

A Xi'an cuisine restaurant located near the Kabuki-za in the Ginza 3-chome area. The restaurant has two floors, making it suitable for group gatherings and banquets. The menu offers a wide variety of options including drinks, appetizers, hot pot dishes, grilled dishes, and more - with nearly 100 items to choose from. I visited the restaurant alone for dinner and started with a Cola Highball and some appetizers: - Steamed chicken with scallion sauce (550 yen) - Stick dumplings (650 yen) The steamed chicken with scallion sauce was particularly impressive. The sauce had a good level of spiciness, and when I took a bite, a burst of heat hit me. It seemed to have a hint of Sichuan pepper. Most Chinese restaurants in Japan tend to tone down the spiciness, but this place was different - unapologetically spicy. The dish was not only spicy but also flavorful, with a unique and bold spiciness. The portion of chicken was generous, and it was accompanied by shredded cucumbers, adding to the overall volume. Despite the spiciness, I found myself quickly finishing the dish as I enjoyed it with my Highball. The stick dumplings were served grilled on a hot plate with sauce. The handmade dumpling skin was chewy, filled generously with meat and flavored with plenty of garlic chives, offering a mature taste. Although some parts were difficult to eat due to the dumplings sticking together, the flavor was quite good. For the finale, I decided to try the restaurant's signature dish, the Sanra sword-cut noodles: - Sanra sword-cut noodles (850 yen) The sword-cut noodles are made by shaving wheat dough with a tool resembling a sword. I was mesmerized by the beautiful craftsmanship of the chef making the noodles in the open kitchen. The noodles were served in a large bowl. Despite being hand-shaved, the noodles were almost uniformly thick, with a delightful chewy texture. When I think of Sanra noodles, I imagine a sour and spicy taste, but this version was different. While it had the expected acidity, the vinegar used had a sweet flavor and a unique aroma, creating a delicious broth. The soup was rich in spices and had a pleasant spiciness. Even though I was already full, I couldn't stop eating due to the deliciousness. Unlike the trendy "town Chinese" cuisine, this restaurant offers authentic and distinctive Chinese cuisine. I personally really enjoyed it.

I visited Knife-Cut Noodle Garden in Tokyo Ginza for the second time since last year's super spicy fish stew. This time, I tried the Ma La Knife-Cut Noodles. Can you make it spicy? I asked, and they said you can increase the spiciness with a condiment similar to table chili oil. The huge bowl of knife-cut noodles that came out made a big impression! The knife-cut noodles, which are the signature menu item of the restaurant, are being carefully made by the chef behind the glass kitchen. The noodles are of course chewy and satisfying to eat. I noticed a bustling restaurant while walking my dog in the middle of the night, which seems to have opened in 2005. I was a bit late in realizing it, but their top recommendation is that they are open until late at night. They also have a second-floor seating area, which is spacious and convenient to use. Orders are taken on iPads, which is handy. The recommended dish is the spicy knife-cut noodles (the soup was a bit lukewarm), served in a large bowl like at Tsuroton. The dumplings were also good. The egg and tomato stir-fry was a bit too sweet. Going off topic, I used to frequent knife-cut noodle and Xinjiang mixed noodle shops a lot during my study abroad in China. There aren't many late-night Chinese restaurants in the Ginza area, so I'm likely to visit this one frequently from now on.

I visited for an early lunch, so there were few customers, but by noon the popular restaurant was almost full. I ordered the large beef knife-cut noodles today. The soup had a slightly sour taste. I added some spiciness while eating and enjoyed it until the end!

I visited this shop in Ginza recently after it was renovated. They shave the noodles on the spot after you order. This time, I ordered the Malatang shaved noodles. It was delicious! It's been cold lately, so I wanted something warm to eat, and I decided on knife-cut noodles. I quickly found a seat at the counter, but after that, customers kept coming in and being told it would be a long wait because it was full, so they turned back. It seems to get crowded during lunchtime. I ordered the classic "Ma La Noodles" (800 yen). In the kitchen beyond the window, the chef was hand-shaving the dough into a pot. Each noodle is carefully made one by one, and because they are thick noodles, it takes time to cook them. It took quite a while for my order to arrive (it seemed that way from looking around). The noodles, immersed in the clear red soup, were wiggling. I took a sip of the soup first. It wasn't oily, had a moderate spiciness, and had a flavorful taste with a subtle numbing sensation of Sichuan pepper, which was a bit different from what I expected, and had a refined taste that I liked. And the noodles were chewy! There were no hard, uncooked parts that are common in uneven noodles, and the balance was very good, making it delicious! Since it wasn't very spicy, adding the chili peppers on the table made it even more enjoyable. I should have added some cilantro (150 yen) too. A paper apron is a must because the uneven noodles can be unruly.

Visited after 7 years. I don't like spicy food, so I ordered the same "Vegetable Knife-cut Noodles" as before. I went during my work break, so I was in my work uniform. The staff silently placed a paper apron on the table for me to use. The water that came out surprisingly tasted like lemon, so maybe it's detox water. The area where the noodles are cut is glass, so you can normally see it. I've never seen them cutting the noodles at night, so maybe they do it during the day. After a while, the noodles were served. The bowl was about 28cm in diameter, which was surprising! The unique shape and texture of knife-cut noodles. The noodles were full of vegetables and satisfying. The hot soup warmed up my cold body. If you don't like cilantro, please ask for it to be removed.

I arrived before the opening at 11:25 and was seated without any issues. I ordered the Spicy and Sour Knife-Cut Noodles in large size for 930 yen, and the noodles were delicious. The soup was also tasty and I finished everything. I would like to visit again.

I found a knife-cut noodle restaurant in the area of East Ginza. It is a quiet and calm place compared to the bustling Ginza district. When it comes to a knife-cut noodle restaurant, the obvious choice is the knife-cut noodles. There are various menu options, but I ordered the sizzling hot and spicy knife-cut noodles. In the kitchen, the chef was skillfully cutting the noodles from a block of wheat dough. The dishes at this restaurant are surprisingly large, with a huge white ceramic bowl that makes the red soup stand out. The visual presentation is excellent! The highlight of knife-cut noodles is definitely the chewy texture. The coarse ground meat combined with the thick noodles creates a delicious taste that is addictive. Despite the size of the bowl, the portion is not overwhelming and is enjoyable to eat.

This is a Chinese restaurant in Ginza, Tokyo. Visited at 8:00 pm, with a few customers on the second floor. They have a variety of knife-cut noodle dishes on the menu. Ordered the Coriander and Fresh Chili Pepper Salad for 680 yen and the Spicy Knife-Cut Noodles for 900 yen, excluding tax. The Coriander and Fresh Chili Pepper Salad is a dish made with carrots, cucumbers, green onions, coriander, and fresh chili peppers mixed with sweet vinegar and spicy oil. I love coriander (cilantro), so I really enjoyed this dish. I wish they had added more fresh chili peppers, but overall it was delicious. The Spicy Knife-Cut Noodles came in a large bowl with a decent portion size. The texture of the noodles was good. The flavor was just right in terms of saltiness, but a bit lacking in other aspects. If they advertise it as spicy, I think it could be spicier, especially considering the thickness of the noodles. Having a casual meal option available at night is really convenient.

I wanted to eat knife-cut noodles, so I visited this place where they are very delicious after several years! First, I ordered a draft beer... It was not good. I took one sip and couldn't drink anymore. Please clean the tap regularly (at least occasionally, please?). So, I switched to a highball! This one was delicious! The highball from the tap had a nice carbonation and was tasty! As for the food, the knife-cut noodles were great, as well as the coriander salad, century egg, dry pot, and everything else we ordered! Especially, the cumin stir-fried lamb was amazing, similar to the one at "Yangxiang Mibou" in Ueno, but I prefer the one at Knife-Cut Noodle Garden! It was so delicious! As for the service... well, that's just how it is here, so we enjoy it (laughs). I will definitely come back when I crave knife-cut noodles again! Thank you very much!

Mara Ramen 800 yen. Located across from the Chinese soba restaurant "Manpuku". There are 5 counter seats and 3 four-person tables. It seems like there is also a second floor. In the back of the first floor, you can see the kitchen through a glass window. When you sit down, you are given water and a paper apron. You order verbally. The communication to the kitchen was done in Chinese. The background music is Chinese pop songs (?). The ramen is served in a large bowl-like container. The soup is thin. The spiciness of the chili oil, the numbing sensation of the Sichuan peppercorns, Chinese seasonings, cilantro, lemon... everything is mixed together with a subtle level of intensity, around level 1-2. Nothing stands out, but the balance is good. The knife-cut noodles are just the right thickness and chewiness, with a smooth and pleasant texture. The minced meat in the soup is also quite tasty. The flavors are not overpowering, but as you eat, you start to sweat a little, so maybe there is a decent amount of chili oil and Sichuan peppercorns in it.

I had some errands to run in Ginza, so I decided to search for some spicy food in the area! I visited this Chinese restaurant that I had been curious about. I ordered the extremely spicy seafood stew. It's a bit on the expensive side, but the portion is huge so I recommend ordering it with multiple people! I also ordered the hand-pulled noodles, which were a normal price but came in a large portion (great value!). Despite the generous amount of chili peppers, the dish wasn't as spicy as it looked. It seems like the spicier it looks, the less spicy it actually is... The spicy seafood stew went really well with rice and was delicious! Considering its location in Ginza, I think this restaurant offers good value for the price, so even though it's not super spicy, it's worth a visit. It has a typical local Chinese restaurant vibe!

The sister store of the Tokyo Station Oazo near my workplace was delicious and I used to go there often, but it closed down. Since then, I had been craving that knife-cut noodle. I had tried all the varieties before, but my favorite was the spicy and sour noodles, so today I decided on the spicy knife-cut noodles. The bowl that arrived was even bigger than the one at the Oazo store, and I was overwhelmed by the volume. I had felt that the soup portion was a bit lacking at the Oazo store, so I was happy to see that this one had plenty of soup. However, I found the taste of the soup to be somewhat bland... Not spicy enough, not sour enough. I had to ask for extra chili oil and black vinegar to add to it. The noodles were still chewy and delicious as always, so it was disappointing. Maybe it will improve if you ask for it to be spicier. I might try other branches next time. By the way, just like at the Oazo store, the staff here are also of Chinese descent. Maybe the other menu items have an authentic taste, but the highlight of this place is definitely the knife-cut noodles. I hope they don't skimp on the soup. Wearing an apron is a must, so it's better not to refuse.

I ordered the Maara sword-cut noodles. The portion is quite large, but even women can easily eat it. It might be a little bit less for some people. [Food/Flavor] △ Delicious! I felt it was a bit small though. [Service] △ It's hard to ask for water as the staff is often in the kitchen.
