The place I visited on this day was "Asagaya Ramen Sakaba Man (Yorozu)", which opened in Asagaya on January 26, 2022. I had just visited "Men Dokoro Ryugu" which had a pre-opening in Asagaya near the north exit of the station the day before, but there seems to be a new store rush around Asagaya station recently. The location is a 3-minute walk from the south exit of the station. It is located on a corner lot on Asagaya Ichibangai, just across the pedestrian crossing on Nakasugi Street. This place used to be the site of "Tonkotsu Ramen Sakaki Asagaya Ekimae Store (formerly known as Menya Takujirou)" with its main store in Ikebukuro. By looking at the storefront signboards, it seems that the menu and content of this new store are quite similar to the "Sakaki" brand. From what I can gather, the previous "Menya Takujirou" operated as a delivery and takeout-only ramen shop since that time, and it seems like they are continuing this service even at the new store, maybe as a renewal? Although it's just speculation, the fact that you can enjoy a drink at a ramen shop and order delivery and takeout, with a menu that includes not only ramen but also side dishes such as gyoza, karaage, and potato salad, gives a sense of "Yorozu" meaning "we do everything! we have everything!" in a way, which may explain the reason for the change in the store name. The business hours are from 11:00 to 20:00 (during the pandemic), and I arrived at the store around 11:20. Inside the store, there are 6 counter seats surrounding the kitchen and table seats in the back. Compared to the relatively relaxed number of customers dining in, there were many orders for takeout and delivery, which made me feel like this is the new style of ramen shop in the "WITH Corona" era. Now, looking at the ticket vending machine inside the store, the signature menu is "Tonkotsu Ramen" with three sizes: mini (2 slices of pork: 125g of noodles) for ¥780, regular (2 slices of pork: 250g of noodles) for ¥880, and large (2 slices of pork: 375g of noodles) for ¥980. You can also add extra noodles and extra chashu. Other noodle menu items include "Light! Shoyu Ramen", "Soupless Ramen", "Spicy Tonkotsu Ramen", "Soupless Ramen", a limited quantity of "Miso Tonkotsu Ramen", and a store-exclusive "Tonkotsu Tsukemen". Additionally, as a unique menu item not found in other stores, they offer a "Shime Ramen (soy sauce flavor)" for a coin to customers who order alcohol. I purchased the "Tonkotsu Ramen (regular size)" and requested to change it to tsukemen. When I sat at the counter seat, a staff member brought something like an order form and first asked me to choose the noodle size from regular, medium, and large, but since I didn't know the noodle size, I asked, and they said it was 200g for regular, 300g for medium, and 400g for large. I chose medium because regular seemed insufficient. Next, they asked if I wanted "vegetables" or not, and I answered "yes", "no" for garlic, and "standard" for back fat. There was a lemon water pot and glass on the table, and the water was self-service. The table condiments included GABAN black pepper ground, soy sauce, chili oil, and vinegar. The chopsticks were disposable. After a short wait, the staff brought the tsukemen. The noodle bowl was filled with plenty of bean sprouts and a cabbage leaf. It was voluminous, equivalent to 300g of noodles. The dipping sauce was a non-emulsified tonkotsu soy sauce with back fat floating on top. There were only vegetables as toppings, and no visible meat, but I found shredded pork at the bottom of the dipping sauce. After finishing the noodles, I put the remaining bean sprouts into the dipping sauce, and when I lifted them up, the shredded pork came along, making me feel like I was fishing for meat with the bean sprouts, which was amusing. Now, I tried the noodles alone first, and they were thick noodles with a strong chewy texture, giving a satisfying bite and a direct taste of wheat. The noodle surface was smooth, easy to eat, and had a good throat feel. These noodles are homemade using only top-grade wheat.
