The cutlery was cute but a bit difficult to use haha. I shared the Hokkaido hotcake with chestnuts for 2200 yen and the regular Hokkaido hotcake. You can customize the hotcakes with toppings like red bean paste, butter, maple syrup, and cheese. I was too greedy with the chestnuts after lunch haha. I want to go back when I'm hungry next time! The milk gelato had a powdery texture throughout, which was not very pleasant. The tea didn't have a strong tea flavor, more like a Japanese tea. Overall, I had high expectations but was disappointed. I don't plan on going back, but if I did, I would recommend sticking to the simple chiffon cake with plain milk for the best experience. They also serve chiffon cake sandwiches, which might be a safer and cheaper option if you decide to visit again.

I ordered the Hokkaido Hotcake, which took about 20 minutes to be ready. The hotcake arrived and was fluffy when I cut into it, but had a firm texture when eaten. The hotcake itself was not too sweet. The beet sugar syrup had a gentle flavor, and the butter was quite salty but delicious. The red bean paste was mildly sweet with whole beans. The cheese was light and not too salty. The firm texture of the hotcake made me think of dorayaki when dipped in red bean paste, and imagawayaki when paired with cheese. ■June 2023 Visit Finally made it here! I've been wanting to come for a while, but couldn't make it in time for the last order. This is Tsubaki Salon, a place I've been longing to visit. They have seasonal fruit pancakes, but I opted for the most basic one, the Hotcake Premium. It looks fluffy, but it's actually quite dense. It comes with whipped cream, and also a side of butter, Tokachi red beans, brown sugar syrup, and cheese for a palate cleanser. I tried it as is, then with syrup, and also as red bean butter, finding my favorite taste along the way. I personally enjoyed the red bean butter. The atmosphere of the restaurant is calm and relaxing, perfect for taking your time. It was delicious, thank you for the meal.

The restaurant is located on the 3rd floor of a mixed-use building, but once you enter, you can see a spacious and stylish new space. I love this place and go there multiple times to eat. They serve fluffy and thick pancakes which are souffle-like in texture. They offer seasonal fruit toppings and limited-time regional butter sets, so I visit regularly to try them out. The pancakes are lighter compared to those at Hoshino Coffee, but they still have a great pancake flavor and I am always satisfied. Although it's unrelated to the pancakes, I also love the tea here. I have enjoyed many meals here and will definitely be back again.

You could choose between chocolate or caramel sauce, and I chose caramel. It cost 1,960 yen. The drinks were priced between 750 and 950 yen, and if you ordered with pancakes, you would get a 200 yen discount. It came out to around 2,500 yen per person. After ordering, it took about 15 minutes for the banana and blancmange to arrive. It also came with milk gelato or ice cream. It was a substantial amount, not just a small side. The ice cream was delicious. After that, the pancakes arrived in about 5 minutes, followed by the drinks. The pancakes were as fluffy and delicious as rumored. The only downsides were the unconventional design of the knife, fork, and spoon, the loud and frequent timer noise used for cooking the pancakes, the excessive volume of bananas served (equivalent to two bananas), and the high prices even for Ginza. Overall, it was a unique experience. It might have been better to share with someone or have it as a dessert instead of a full meal. I left feeling very full!

Tsubaki Salon Ginza Hokkaido Hot Cake OHANAMI ¥1980 Ginza Store Limited This is the first time I have eaten cherry blossoms at Tsubaki. The visual is beautiful above all. The fluffy hot cakes with steam rising, topped with cherry blossom bean Hokkaido cream is plentiful. And the cherry blossom feuillantine spreads all over, making it look like cherry blossom petals are dancing. The green of matcha powder and the pink petals stand out. The cherry blossom cream is moist and you can really feel the cherry blossoms in it. I ended up eating the pancakes so quickly just with the cherry blossom cream. The matcha powder has a strong bitterness, which I think adds variety to the taste. Finally, I had two bites of matcha chocolate. The original cutlery is always stylish to look at. It was delicious.
