Ippatsu Ramen @ Fussa, revisited. I am from Hachioji, so I am familiar with Ippatsu, which has its main store in Hachioji. This is my second visit to the Fussa store. It was 22:30 and the restaurant was 70% full. I noticed that the closing time was 23:00, which was earlier than I thought. I took a look at the ticket machine and ended up choosing the Shoyu ramen, no, actually the Shoyu ramen with extra flavoring.
- Negi Tororo Ramen Shoyu (Extra Flavoring) ¥900
I ordered it firm and with extra flavoring. Last time, the flavor was a bit light, so I decided to go for extra flavoring this time. While waiting, I observed various things. The "Negi Tororo Ramen" does not refer to tuna, it means green onions and grated yam. The customers seemed to be quite young, and most of them ordered the regular portion instead of the small one. The restaurant mentioned that the parking lot had changed its location. The seating arrangement inside was interesting, with back-to-back counters. There were two staff members in the kitchen, and they were very attentive. The service was excellent, just like the main store in Hachioji. On the table, there were garlic, Ippatsu's vinegar, a sauce similar to Doubanjiang, and GABAN's Gourmet Mil. I wonder what Gourmet Mil is? Maybe it's black pepper? Well, I don't use it anyway.
And then, the ramen arrived! The soup was Tonkotsu Shoyu with an extra flavoring. The Shoyu flavoring was sharp and delicious. This was so good. The impression completely changed from last time when the flavor was a bit light. However, towards the middle, it started to feel a bit salty, and I felt like having rice. I resisted the urge for rice, though. The noodles were thin and curly. The firm texture was really good! This is a must-have firm texture. It was so delicious. I felt like the portion was not enough. I understood why the young people ordered the regular size. And then, the much-anticipated grated yam! It was so good. It went well with the Shoyu soup. The chashu was incredibly tasty! I should have ordered the Chashu Ramen. The green onions were a bit lacking in quantity, but the seasoning was perfect. The portion was not enough. Next time, should I go for double green onions? But if I add that much, will the temperature drop? Towards the end, the saltiness became stronger. The settled grated yam was so delicious that I naturally started drinking the soup as well. I couldn't stop using the spoon. Maybe I went overboard with the extra flavoring. In the end, I finished all the soup. Overall, I was quite satisfied. The firm texture of the noodles was the best! If I had ordered rice with extra flavoring, it might have been the best. ★3.8 Maybe I don't need extra flavoring if I go for double green onions. I think the best option here is the Negi Tororo Chashu Ramen with double green onions and firm noodles. But the soup's temperature will drop, right? It's a dilemma because all the toppings are delicious. I don't usually add a lot of toppings, but at ramen shops like this, I feel like adding a lot of toppings such as grated yam and chashu.
