I visited a new restaurant called "Natsuya's Chinese Soba" that opened on February 24, 2023 (Friday) right near the Fudomae Station. The owner has a background working at popular ramen shops like "Bikiya" and the shop is highly anticipated. The restaurant is only open for lunch on Thursdays and Fridays as a pop-up shop, making it a limited opportunity. When I visited during lunchtime, there were 5 people waiting outside and 6 customers already seated inside. It took 25 minutes to get a seat and another 10 minutes for the noodles to arrive. The ramen menu only offers "Natsuya's Chinese Soba" for 850 yen, with optional toppings like homemade chewy wontons (200 yen for 3), seasoned egg (100 yen), extra seaweed (100 yen), and rice (100 yen). I tried the "Natsuya's Chinese Soba" and added extra seaweed. The flavorful soup, made with dried bonito and dried fish, had a rich taste with a pleasant Japanese twist. The straight thin noodles from Kanou Seimen were a perfect match for the soup, creating a delicious combination. The well-cooked chashu was tender and well-seasoned, and the menma added a balanced touch to the dish. The homemade chewy wontons made with sticky wheat flour had a hint of ginger that spread in the mouth upon eating. The concept of the restaurant, "Tokyo-style Chinese Soba that satisfies both the heart and stomach," was truly reflected in this bowl of delicious noodles. The attentive service from the staff also left a good impression. It's a shame that you can only enjoy this amazing Chinese Soba during lunchtime on Thursdays and Fridays. Overall, it was a highly satisfying and delicious experience. Thank you for the meal!

Natsuya's Chuka Soba, which is currently operating as a sublease, will have its last days on 9/28 (Thu) and 9/29 (Fri). It was announced that they are aiming to open their own place in Ota Ward by the end of this year. I visited two weeks in a row as I was intrigued by their delicious Akatsuke Soba last week. The Chuka Soba (850 yen) had a strong bonito flavor with a hint of acidity, different from the dipping sauce of the Akatsuke Soba but equally delicious. The noodles, made with whole wheat flour, were plentiful and had a unique Japanese soba-like texture when slurped. The chashu was standard, while the menma had a strong presence and paired well with the soup. The Agetama (100 yen) had a delicious Japanese flavor that went well with beer. The Cloudy Dumplings (3 pieces for 200 yen) seemed to have less ginger than last week, but tasted even better when soaked in the soup. The Tianjin rice (250 yen) was decent, with a sweet and savory flavor from the scrambled eggs and imitation crab meat. The Black Label beer (350 yen) was a good accompaniment to the meal. The restaurant was popular as usual with a long line of customers, including many regulars. I will definitely visit again once they open in Ota Ward. Thank you for the meal.

I had the Natsuya ramen (850 yen) here. I also ordered three homemade chewy wontons (200 yen), a seasoned egg (100 yen), and today's special rice dish (Tianjin rice for 250 yen), bringing the total to 1400 yen. The pop-up operation here will end in September 2023, and fans have been waiting eagerly since before the opening. Customers wait in the hallway of the building to be seated one by one. The soup, made with dried fish and bonito, packs a strong seafood flavor in each sip, yet it is gentle without any bitterness. The slightly thin straight noodles have a brownish hue from whole wheat flour, which adds a nice flavor. The seasoned bamboo shoots are a dark brown color, and the sliced green onions are small. There are no other vegetables in the bowl. The chashu consists of one piece with a chewy texture and deep flavor, and another piece of soft pork belly. Simply delicious. The additional wontons were filled with a meaty gyoza-like mixture, which wasn't to my taste. The seasoned egg had a runny yolk, which I enjoyed. It's rare to find a seasoned egg priced at over 100 yen these days, so this was a fair deal. The daily special rice dish was Tianjin rice with imitation crab meat. I poured the soup over it and enjoyed it as a risotto. The overall balance of the meal was excellent, with no overpowering flavors but a harmonious and delicious combination. The female staff efficiently managed the line, handled payments, and served the food with great care. I look forward to their success in their new location.

On Friday at 11:10, I arrived at a shop in front of Fudo Station, where they serve ramen and delicious dumplings. The ramen is made with a broth of dried sardines and bonito flakes, which has a gentle and delicious flavor. The dumplings are chewy and priced at a great value. The noodles are firm and just the way I like them. Unfortunately, I found out that the shop will be closing at its current location on September 29th. However, I'm glad I was able to visit before it closed. I'm not sure where they will relocate, but I'm certain they will become a popular spot wherever they go.

This is a shop I had been wanting to visit for a while. I was aiming for the Chinese soba, so I could only go on Friday at lunchtime, which made it quite difficult to visit. I arrived 15 minutes before opening thinking I had plenty of time, but there were almost 20 people waiting... I underestimated it. I waited for over an hour before finally being able to eat. The soup had a strong flavor of dried fish and bonito, which I really liked! I also added wonton as an option, and it had a chewy texture that I had never experienced before, with a refreshing taste of ginger in the filling, which was also delicious. It seemed like everyone was adding wonton as well. I also got the daily special rice bowl, the Tianjin rice bowl, which was surprisingly delicious when I was at my limit of hunger. Looking at other reviews, it seems like many people come here looking forward to the daily special rice bowl. The service from the lady (maybe the wife?) was also surprisingly hospitable for a ramen shop, which made the overall satisfaction very high! It seems that this temporary shop will close this month, but they are planning to open in Ota-ku, so I would like to visit again when they reopen!

Natsuya's Chinese soba for 850 yen and three chewy wontons for 200 yen. Today's meal was mushroom and minced meat bowl for 250 yen. Last time I came around 2 pm and the plate was sold out. This morning I checked X (old Twitter) and it said they will close on 9/29, so I thought it would be even busier and aimed to arrive 30 minutes before opening. 11:07, connected to the waiting line outside, 12th in line. The store was supposed to open at 11:30, but there were already customers inside. It seems like they have already started business due to the long line. 11:38, the sold-out plate was announced. Fast! My line was 14 people behind me. 12:00, guided to the waiting area inside. 12:15, seated and placed an order. 12:34, served the bowl. 12:48, left the store. The soup had a good fragrance of dried fish and bonito. The soup had a good balance of flavor with the dried fish broth. The noodles were slightly soft. The wontons and the amount of filling were generous, providing a good volume. The chashu was on the smaller side, with one piece being exceptionally delicious! The mushroom and minced meat rice was sweet and savory, with the umami of shiitake and shimeji mushrooms coming through, which was also delicious! There was information beforehand that the portion might be small, but the amount of noodles was decent, and with the wontons and rice, the level of fullness was just right. They are running a shared business until the end of this month, so this visit was probably my first and last. However, they seem likely to reopen elsewhere, so let's look forward to that. 2023/09/15. Business hours: Wednesday and Friday 11:30-14:30 (Last order 14:15) Closed: Monday to Wednesday, Saturday, Sunday Seating capacity: 9 seats (3 counter seats, 6 table seats for 2 people each) [Menu] Natsuya Tsukemen (210g before boiling) 900 yen Red Tsukemen (210g before boiling) 950 yen *No large serving Homemade chewy wonton (3 pieces) 200 yen Flavor egg (limited quantity) 100 yen Cold wonton skins (3 pieces) 100 yen Black Label 350 yen Today's rice Tartar pork nanban bowl 250 yen Thursday → Tsukemen Friday → Ramen The operating style remains the same, so I started with a "Black Label" as it was hot. On this day, I ordered "Natsuya Tsukemen" with toppings of "Flavor egg," "Homemade chewy wonton (3 pieces)," and "Cold wonton skins (3 pieces)," along with today's rice "Tartar pork nanban bowl." I always look forward to Natsuya's daily rice dish, and this day's "Tartar" was especially delicious! The roughness of the boiled egg, the fatty pork, and the sweet and spicy seasoning all complemented the tartar well. Although you cannot have a large serving of Tsukemen, the 210g of noodles and dipping sauce, along with the soup refill, is just the right amount. I also had a beer on this day. Natsuya's subleasing operation here will end on September 29th, as they only operate on Thursdays and Fridays, so there are only 5 more times left.

Thank you for visiting the shop based on the review by nekoashi85263 from Mairebi. The shop is only open on Thursdays and Fridays, with Thursdays serving tsukemen and Fridays serving Chuka soba. I tried the "Natsuya's Red Tsukemen for 950 yen." The dipping sauce has a strong bonito flavor with a hint of red color, but the spiciness and acidity are mild, allowing the umami of bonito to shine through. The whole grain thin noodles may seem average at first, but they complement the Japanese-style dipping sauce perfectly. The chashu slices are meaty and flavorful, adding to the overall experience. The menma is dark in color but not too salty, offering a delicious umami flavor. The soup refills are served in a pot, and the soup itself is rich and flavorful. The "Ajitama for 100 yen" is a must-try, bursting with umami flavors. The "Cold Wantan Skin x3 for 100 yen" offers a contrast between whole grain and white flour skins, both delicious in their own right. The "Chewy Wantan x3 for 200 yen" has a ginger accent that adds to the overall experience. The "Black Label 350ml can for 350 yen" is a great accompaniment, especially with the added menma. Overall, I highly recommend Natsuya's Chuka soba for its delicious flavors and warm service. I will definitely be revisiting soon. Thank you for a wonderful experience!

I was recommended to visit this place by a ramen enthusiast, and finally made it here despite the limited opening hours on Thursdays and Fridays. The shop is closing at the end of the month, so I decided to visit. It was worth it. I arrived at 11:10 and there was already one customer ahead of me. Within 10 minutes, more customers arrived, and by the slightly early opening time of 11:20, there were 9 people in line. We all placed our orders one by one, but since it's a temporary shop, the cooking took a bit of time. Each batch was about 3 bowls, but they were made very carefully. I ordered the dipping noodles with wonton and flavored egg toppings for 1,200 yen. It arrived in about 10 minutes. The noodles were thin and straight with a slightly brownish color and a texture similar to soba noodles. The dipping sauce was slightly sweet, refreshing, yet flavorful. The toppings included green onions, bamboo shoots, seaweed, diced chashu, wonton, and flavored egg. The wontons were large and chewy, with thick skin, and there were 3 of them. The flavored egg was soft-boiled to my liking. The soup for dipping was also very delicious. I would definitely want to visit this place again if they open a permanent shop. The hospitality was excellent. When I left, there was already a long line forming. It was really delicious. Thank you for the meal.

On this day, I ordered Natsuya Tsukemen with Ajitama and the new topping, Chilled Wonton Skins, along with Today's Rice, Garlic Butter Chicken. I also ordered a Black Label as a drink. The foam in the glass in the picture is due to my clumsy pouring, but the glass was nicely chilled. The new topping, Chilled Wonton Skins, comes in 3 layers, so it's best to eat the top layer first and separate the remaining two layers to prevent them from sticking together. The Garlic Butter Chicken for Today's Rice was incredibly delicious, and the aroma upon serving was irresistible. Even without the chicken, the rice was delightful. This was my 12th visit, and the variety of Today's Rice has never repeated. The content is announced on Twitter on the day itself, sometimes offering 2-3 options, but on this day, the Garlic Butter Chicken was the only choice, making it an easy decision.

Natsuya's Chuka Soba (Fudomae) Irregular business hours this week, open on Tuesday and Wednesday at 11:24 AM. Arrived to find 9 people waiting outside. Managed to slip in last in line. ▼Order-------------------- Natsuya's Tsukemen 900 yen Cloud Ear Mushroom (3 pieces) 200 yen Flavored Egg 100 yen Cold Wantan Skin (3 pieces) 100 yen Upgraded to Black Label 350 yen. Served at 12:13 PM. Before enjoying the noodles, I had the red tsukemen last time so this time I opted for the tsukemen. The cold wantan skin as a topping was a great choice. The menma (bamboo shoots) here are delicious. The noodles are thin like soba, and they go well with the dipping sauce. Another delicious meal at Natsuya's. Finished all the dipping sauce and soup. Thank you for the meal. Left at 12:30 PM. Total time spent: 66 minutes ------------------------------ 2023rd bowl It was nice to chat with the owner Hirabayashi and Natsuko-san. In front of Fudomae Station. A new store that appeared like a comet. Natsuya's Chuka Soba. Limited operation with tsukemen on Thursdays and ramen on Fridays. I heard there was a huge line forming. Even when I arrived at 11:30, there was a long line. The announcement has been made that the sublease operation will end, and they plan to open an independent store in Ota Ward. If they are closing, I definitely want to go. The store has a bar-like atmosphere, very stylish. A female staff member inside the store, perhaps the owner's wife, provided very polite service. Inside the store, there is a waiting area with tables in the back. You place your order verbally once inside. Since it was Friday, it was Chuka Soba day. Natsuya's Chuka Soba for 850 yen, added 3 wontons for 200 yen, and seaweed for 100 yen. Now, let's enjoy this full volume meal. - Visual: Perfect presentation, the bowl is packed full. The volume of wontons is also impressive. I can't wait to dig in. - Soup: Wow, the broth is rich with the essence of bonito and seafood. It's delicious. I've tried various ramen before, but the depth of flavor here is on another level. Also, the customer service from the couple shows their gratitude towards the customers. It's fantastic. - Noodles: The medium-thick straight noodles complement the soup perfectly. The noodles are firm and chewy. The wontons are also hot and flavorful. Overall, this can be considered one of the best in Tokyo. I'm eagerly looking forward to their grand opening. Only a few days left until the temporary closure on the 29th. I hope they do well and eagerly await news of their new store opening.

The plan was to go to a soba restaurant, but it turned out to be ramen day, so I decided to visit the ramen shop instead. I arrived a bit late at 11:05 am, even though I had planned to arrive 20 minutes earlier. After a two-week summer break, the shop had already had four people waiting, so I asked where the end of the line was and was directed to a pillar where I found two more people behind me. Interestingly, all customers were men except for me. Just before 11 am, they provided salt tablets for us, which was a nice gesture. The shop opened a few minutes early at around 11, and all 10 people waiting outside went in. By the time I entered, all seats were taken (3 counter seats, 3 two-person table seats, and 1 four-person sofa seat at the back). The sofa seat was shared, but the two-person seats were not, so I had the best spot. The staff was very hospitable and offered to move us to other available seats if they became free while we waited. Orders were taken and paid for in advance. The lady serving us thanked us for waiting in the heat and gave us a Guncyanchan manju. I ordered the red tsukemen with the new topping of cold wonton skins (3 pieces) for an additional 100 yen, totaling 1050 yen. The dish was served in about 30 minutes. The dipping sauce was slightly spicy with a strong flavor of bonito and dried sardines. The dish also included thick slices of char siu. The portion of noodles was surprisingly large, and the thin noodles had a smooth texture. The wonton skins were softer than kishimen. I struggled to finish the dish and left some behind. I tried the soup with a pot of soup stock, and it was delicious. I was so impressed with the rich flavor of the broth that I kept adding more to my dish. I left the restaurant feeling satisfied and would like to try their ramen when it gets colder.

Natsuya's Akatsuke Soba 950, Wantan 200, Ajitama 100, total 1250. The restaurant is only open 2 days a week, making it difficult to visit. Also, they serve Tsukemen and Ramen on different days. The Akatsuke Soba looks spicy but it's actually not. The flavor of the noodles is strong. The Wantan has a chewy skin. The portion size is generous, leaving you feeling very full. I'm curious about trying their Ramen too.

It was a perfect choice to have the black label as an aperitif, and the thoughtfulness of the chilled glass was appreciated. The topping of green onions added a nice touch to the slightly spicy "Lar Shou-style" dish. Despite the tempting "Spicy Negi Chashu Don" mentioned on Twitter, I stuck to my original plan and ordered the "Tsukune Don," which turned out to be quite large and satisfying. Natsuya will reopen on the 24th (Thursday) after the summer break, and I look forward to visiting again.

Recently, my food blog posts are becoming more like a ramen blog, with a growing focus on supporting "Natsuya" and showcasing the daily meals I eat. Natsuya's Chinese soba, dipping soba, and cold dipping soba are exceptionally delicious among all the ramen and tsukemen I've tried. Since its opening in February, I have visited every week without fail, and each time there is almost always a new dish on the menu. The creativity and appetizing dishes never fail to impress me. The meals are always well thought out and incredibly delicious. On August 10th (Thursday) and 11th (Friday), and again on the 17th (Thursday) and 18th (Friday) of the following week, they will be closed for summer break. So, I visited two days in a row before their break. On Thursday, I had the red dipping soba and the "Uma Tomagari Garlic Chicken Don." It was probably my first time trying a "Western" dish there. I was skeptical about how a tomato-flavored Western dish would go with dipping soba, but the Italian-style tomato sauce of the don was a perfect match with the dipping soba. The don was so delicious that it became addictive. The next day, Friday, I had the Chinese soba and the debut of the "Tsukune Don" and the reliable "Spicy Negi Chashu Don." Both dons were undeniably delicious and paired perfectly with beer. To prevent heatstroke, they have now set up space for four people to wait inside the restaurant. They also give out candies as a heatstroke prevention measure. The taste and hospitality are still top-notch. Thank you for the delicious meal!

11:55 Arrived at the restaurant 12:08 Waited in the waiting area 12:40 Seated 12:47 Served with my noodles 13:00 Left the restaurant I recently became interested in pop-up restaurants. This particular one is quite exclusive, only open on certain days of the week, making it a bit challenging to visit. Following the reviews of S. Hansen, Take Tontan, and Asante, I decided to give this place a try. The restaurant is only open on Thursdays and Fridays, serving tsukemen on Thursdays and ramen on Fridays. On this day, they were serving tsukemen. The menu offers three options: tsukemen, spicy tsukemen, and cold tsukemen (limited to 10 servings). I was torn between trying the tsukemen or the spicy tsukemen for my first visit, but ultimately decided to go for the rare cold tsukemen. The tsukemen and spicy tsukemen are available at other times, so I wanted to try something unique. The restaurant's Twitter account is a good resource to check for daily specials. On this day, they were offering "Delicious Tomato Garlic Chicken Donburi," which seemed like an interesting choice for a ramen shop. The waiting area outside had four seats, but due to the recent heat, they also had a designated indoor waiting area. After finishing my errands, I headed to the restaurant and found that the outdoor seats were already taken. The indoor waiting area was cozy, with two single chairs and a sofa for two people. The first and second customers were seated in the single chairs, while the third and fourth customers sat on the sofa. The waitress took my order when I was first in line in the waiting area. The payment is made in advance, and there is no bill at the end. After being seated, the waitress confirmed my order once again before bringing out my cold tsukemen and the daily special. The cold tsukemen was served with cold noodles and dipping sauce, topped with chicken chashu, seaweed, bamboo shoots, and a long wonton skin. I also added a topping of flavorful egg. The daily special, "Delicious Tomato Garlic Chicken Donburi," consisted of chicken, onions, and shimeji mushrooms in a meat sauce, similar to a hayashi rice dish. It was surprisingly delicious! Although the portion of cold tsukemen seemed large at first, I found myself enjoying it and finishing it quickly. The waitress even brought me some extra soup for dipping. A female customer who arrived later requested her noodles to be served with less portion, which I found out is also an option. I look forward to trying the ramen on Fridays next time. Overall, I had a great impression of the attentive service provided by the husband and wife team at the restaurant. It was a delightful dining experience. Thank you! Please note that the restaurant will be closed for summer vacation on 8/10, 8/11, 8/17, and 8/18, so plan accordingly.

The business hours are Wednesday and Friday from 11:30 to 14:30 (last order at 14:15) Closed on Mondays, Tuesdays, Thursdays, Saturdays, and Sundays. There are 9 seats available (3 counter seats, 6 table seats for 2 people each). Menu items include Natsuya's Chinese noodles for 850 yen (no large size available), homemade chewy wontons (3 pieces) for 200 yen, limited quantity special seasoned egg for 100 yen, extra seaweed for 100 yen, extra green onions for 100 yen, extra bamboo shoots for 100 yen. Thursday offers dipping noodles, Friday offers Chinese noodles. On this day, I ordered Natsuya's Chinese noodles with homemade chewy wontons, special seasoned egg, and the daily special "spicy minced meat bowl." I always look forward to the daily special dish at Natsuya, and this was my 10th visit. I have never had the same dish twice, and this time they had added extra options for green onions and bamboo shoots.

I had always wanted to try this ramen shop. When I arrived at 12:10, there were 7 people ahead of me in line. It was nice to be able to wait in the shade, but the intense heat made me feel sick after about 30 minutes. It was sad to see hardly anyone lining up behind me. I finally entered the shop at 12:45, only to find out that today's special was sold out. I ended up enjoying the Chinese noodles, rice, and a soup with extra green onions. It was delicious and I finished every last drop. I was so full. If you only want the Chinese noodles, it seems like you could have gotten in by lining up around 12:30 with a 20-minute wait. Thank you for the meal.

The competitiveness of the ramen industry is well known, with new openings and closures happening all over the country. A recent survey by the company operating "Restaurant.com" revealed that over 60% of ramen shops close within 3 years, with over 30% closing within 1 year. Ramen shops face tougher survival rates compared to other popular types of eateries like izakayas and dining bars. To stand out, many ramen shops focus on product differentiation or cost-effective operation methods. One such shop is a subleased operation using the Share Restaurant platform, which helps reduce costs and differentiate. "Noodle Shop Bigiya" is one such shop run by an experienced chef who trained at famous ramen shops. The shop is located in a building near Fudomae Station, open only for lunch on Thursdays and Fridays. The shop had a small waiting area with limited seating, and it took about 35 minutes to be seated. The interior had a small counter and a few tables, with a maximum capacity of 6 customers. The service was attentive, with the chef's wife handling most of the customer interactions. The menu featured mainly tsukemen noodles, with the signature dish being the chilled tsukemen noodles priced at 900 yen.

Natsuya's Chinese soba, which is only open on Thursdays and Fridays, was finally visited. The wait was about 10 minutes, with only two people ahead. On Thursdays, they serve tsukemen, so I ordered Natsuya's tsukemen for 900 yen and three chewy wontons for 200 yen. The dipping sauce was rich with the aroma of dried fish and bonito flakes. The wontons had a soft skin with ginger as a nice touch. The noodles, although they looked small on the plate, were actually a generous portion of medium-thick straight noodles from Kanou Seimen. It was a delicious tsukemen. I finished with a soup-wari and left satisfied. The limited opening days of Thursdays and Fridays make it a bit challenging, but I am curious about visiting on Fridays too.
