タケマシュラン
"Gift Holdings Co., Ltd." expands various ramen restaurants with a focus on family lineage ramen. In the summer of 2022, they opened "Butayama," a Jiro-style ramen shop, right near Ebisu Station. It is truly the closest Jiro-style ramen shop to a station that I know of. The operating hours are convenient from 11:00 to 26:00, open year-round. As it is a new establishment, the interior is very clean. There are around 20 counter seats, making it quite spacious for a ramen shop. Perhaps due to its location, there are female solo customers and female staff, creating an inclusive atmosphere for a Jiro-style ramen shop. To make it accessible to everyone, in addition to "large" and "small," they also offer a "mini" size, with my order of "mini" containing 125 grams of noodles, perfect for those with smaller appetites. However, if you order extra vegetables as I did, you will receive a whopping 600 grams of vegetables. I ordered the "Mini Buta," so the simmered pork is generously topped. The balance of lean and fatty pork is good, and when combined with the extra vegetables, it becomes a well-rounded nutritious meal. However, I may have overdone it with the extra vegetables, as they were mostly bean sprouts, which became a bit monotonous after a while. The quail eggs are a generous addition, with 5 eggs included for an extra 100 yen. Just like at "Ramen Jiro Shonan Fujisawa," Jiro-style ramen shops are generous with quail eggs, which is a nice touch. The noodles are thick with a good chew, reminiscent of Sanuki udon. They have a satisfying texture when slurped up. The broth is rich and flavorful, making it a hearty ramen. All of this comes at a price of 1,100 yen. While it may be a bit pricey for a Jiro-style ramen, it is a delicious and approachable option without the long lines or intimidating atmosphere seen at places like "Ramen Jiro Meguro." It is not only a great entry point for those new to Jiro-style ramen but also a quality choice for regular visitors. With its convenient location, it is highly recommended among Jiro-inspired restaurants.
