When I think of firefly squid, I always have it as sashimi, but it is also delicious when dried like this. The umami is concentrated, and the balance with the sauce is exquisite. Oil-pickled oysters for 880 yen. I definitely wanted to eat oysters. There were five types on the menu, and I was torn between the oysters in the shell and the oil-pickled oysters, but this time I chose the oil-pickled oysters! You can clearly feel the umami and aroma of the oysters, and the taste is well-seasoned, so it goes well with sake. Assorted three rare delicacies for 890 yen. It is a combination of firefly squid marinated in oil, dried sardines, and vinegar seaweed. You can strongly feel the scent of the sea. The menu is delicious, and the presentation in the dishes is beautiful as well. Grilled mountain trout with Sado salt for 890 yen. Next is the grilled trout. It came bigger than I expected! I will enjoy it heartily, but the saltiness is strong and delicious!! The flesh is firm, and this is what Sado mountain trout tastes like!! Sado meal rice for 820 yen. One of the recommended items was this meal rice. It is topped with eggs along with seafood, and the taste is good, but the size is just right! It is a superb menu that is perfect for finishing a meal. Sado miso smashed cucumber for 530 yen. Next is the Sado miso smashed cucumber. The miso was applied firmly, so I thought it would be salty, but the balance of umami and saltiness is exquisite and it's just delicious! A4 grade! Seared Niigata Wagyu beef for 1280 yen. The meat is lightly seared, and along with the umami of the meat, there is also a fragrant aroma. At first, I ate just the meat, then I tried it with wasabi soy sauce, and it's an indescribable deliciousness! Oh, was seared meat this delicious? I felt that the cooking methods that bring out the umami of the ingredients are of very high quality. Each dish is wonderful, but I also feel the attention to detail in the presentation and the tableware. These little touches enhance the deliciousness of the dishes.
