Echizen crab (the name varies depending on the port where it is landed) is known for its incredible brand power. Each crab is tagged with a different colored plastic tag depending on the port where it was landed, distinguishing it from other types of crabs. I had the opportunity to try it for the first time when I turned 65, with two male and two female crabs (Seiko crab). Since then, I had been contemplating whether to eat it properly once, without any guilt, either in Tokyo or in my hometown. Eventually, I decided to go to Tokyo and chose this restaurant. I made a reservation for the "Echizen Crab Full Course 70,000 yen" (which was quite difficult to secure) and visited on a weekday afternoon. The restaurant was located in a stylish commercial facility in Aoyama. The interior was simple, with an open kitchen, dining area, and private rooms in the back. We were seated in a private room. The course menu included dishes like crab miso with plum sake, fried crab, crab sashimi, grilled crab, hot boiled crab, spicy daikon radish, crab soba, crab tempura, seasonal fruit, and crab sweet. I was looking forward to trying the different cooking methods for Echizen crab. The course started with plum sake. Since I don't drink alcohol, they provided a non-alcoholic option for me. A beautifully presented Echizen crab was brought to our table, with the brand's distinctive yellow tag attached to its left claw. The meal continued with crab miso with plum sake, fried crab with caviar, crab sashimi with Echizen crab yolk soy sauce, and grilled crab with hot sake. Each dish showcased the delicate and refined taste of Echizen crab. The highlight was the crab sashimi with Echizen crab yolk soy sauce, which added a unique and subtle flavor to the crab. The crab was served on ice with grated ginger, enhancing the overall experience. The grilled crab, served with crab miso in the shell, was easy to eat and had a rich, flavorful taste. The meal ended with the main attraction - a whole crab, freshly boiled and expertly prepared in front of us. The staff dismantled the crab for us, making it easier to enjoy. The experience was truly exceptional, showcasing the exquisite taste and quality of Echizen crab.
