If you don't strongly assert the Suehiro color, is the target audience young people? When we hear "Suehiro," we think of the established "meat dynasty" founded in 1933 (Showa 8). In our generation, we feel a certain level of trust, and it seems like there would be more customers, right? Is this a deliberate strategy to not emphasize that point? Besides the reliability of ingredients and logistics, are there other strategic points? Nowadays, people don't seem to care much about those things. They only make noise when a problem arises, and otherwise, they quickly jump on trends like "Instagrammable" or rarity, becoming easy prey for media and online information. They also get caught up in the superstition of A5 and A4 rankings, with stores serving A5 beef from old cows exceeding a "3.5" in Ikebukuro Nishiguchi. Now, this store is located between Romance Street and Nishiichiban Street in Ikebukuro Nishiguchi, where "Hikarimen" used to be. In the past, there was a time when "Elvis" and "Hikarimen" were the two major popular ramen shops in Ikebukuro Nishiguchi. The structure of the first and second floors, which used to be open during the Hikarimen era, was completely blocked by a floor. I ordered the "Nakaochi Kalbi Lunch (150g)" (1,485 yen) + "Fatty Hormone" (748 yen) - as shown in the photo. The lunch set comes with rice, soup, salad, and a drink. I asked for extra rice for free. I chose iced jasmine tea as my drink. The Nakaochi Kalbi had some parts that didn't feel like Nakaochi due to the way the fat was distributed, giving it a more hearty Kalbi-like feel. The meat quality was good, quite delicious. It had a clear meaty atmosphere and was slightly away from richness. I thought the tangy sauce might be the reason, so I added the free service of Kochujang and garlic, and it worked out to a certain extent. But if you enjoy the original taste, it seemed to handle it well without a strong meaty feeling, which might suit more as you get older. The Hormone, labeled "Fatty Hormone," might give a guilty feeling to those with a tendency for metabolic syndrome, but almost every store serves "fatty" Hormone, so I don't mind. (laughs) In fact, that's what we seek when we order. After eating sushi, soba, and Japanese food, my body suddenly craves oil, so it was delicious. Many stores serve frozen meat, but I think this store maintains good quality by refrigerating it. If you overcook it, the fat turns into oil and drips off, so you have to time it right when eating. But I don't really know when the right timing is. I haven't had stomach problems so far, so I'm just going by feeling. As I get older, I seek quality over quantity when it comes to meat and don't eat yakiniku out often, but at this level and price, I thought it was worth it. Yeah, it was delicious. Thank you for the meal. The service was polite and kind. They seemed well-educated. Also, the smoking area on the second floor was pitch black and a little scary.
