I visited the Ginza branch of "Martha Service". The shop is located in Ginza Rokuchome, on the 2nd basement floor of the commercial facility "Ginza SIX" along Chuo Street. "Martha Service" is a chiffon cake specialty shop operated by a company called "Martha Office Co., Ltd." that also runs cafes. They have branches in Ebisu, Shibuya, Ikebukuro, Futakotamagawa, and more. This was my first visit and I have not been to any of their other branches. This particular branch opened in March this year, and I was curious to check it out. I arrived after 5 pm and there was a line of over 10 people. Since I had dinner plans, I gave up on queuing at that time, and returned around 8:25 pm after finishing my meal. As it was close to closing time, there were no customers waiting, and I was able to place my order smoothly.
On this day, I purchased the following chiffon cakes:
- Pistachio Chiffon Cake (1,200 yen)
- Cassis Orange Cream Chiffon Cake (1,000 yen)

These two chiffon cakes were exclusive to the Ginza branch, so I decided to try them out. I had to wait for about 5 minutes as they started making the cakes after I ordered. Since the expiration date was the same day, I enjoyed them at home immediately.
Pistachio Chiffon Cake:
According to their website, they use Italian pistachios in paste form for the batter and sauce. The chiffon cake is coated with whipped cream and topped with pistachio sauce, finely chopped pistachios, and blueberries. The cake was light and fluffy with a delicate texture, unlike any chiffon cake I've had before. The whipped cream had a subtle sweetness that paired well with the pistachio cream and chiffon cake. The texture and flavor of the pistachios on top enhanced the overall deliciousness of the cake. The combination of blueberries and pistachios may be a matter of personal preference, but the gentle acidity and sweetness of the blueberries added a nice accent.
Cassis Orange Cream Chiffon Cake:
The batter contained cheese, giving it a chewy texture, different from the pistachio cake. It was topped with cassis orange sauce, chocolate, and orange peel. The sweet and sour taste of the sauce, along with the subtle flavor of the cheese, created a perfect balance. The bitter taste of the chocolate accentuated the sweet and sourness of the sauce, making it exceptionally delicious. This chiffon cake is sold as a whole cake, but the size is small, and one person can easily finish one piece. I managed to enjoy two at once. Although the price of 1,200 yen for the pistachio cake seemed a bit high, I found it to be satisfying as it was to my liking. Since different branches offer different chiffon cakes, I plan to visit other locations to try out various options. Thank you for the meal.
