This hidden gem of a popular mixology bar has been open since 2007, making it a go-to spot for 16 years now. For those wondering, mixology is a relatively new cocktail style originating from London, combining "MIX" and "OLOGY" to create the term. This style focuses on creating cocktails by combining alcohol with different ingredients like fruits, vegetables, and herbs, avoiding the use of liqueurs and flavor syrups as much as possible. The location is close to Nishi-Azabu intersection, tucked away on a side street. The interior is stylish and cozy, with both counter seats and private rooms available for various occasions. This time, I tried recommended mixology cocktails like "More Melon than Melon" and "Choco Banana." The melon cocktail was particularly impressive, using 1/6 of a musk melon in each glass, creating a luxurious and refreshing drink that was both sweet and delicious. It's so tasty that you might find yourself taking big sips, but be careful as the alcohol content is also quite strong (laughs). There were many other fantastic cocktails to try, so I look forward to visiting again sometime. Thank you for the wonderful experience.

A bar near Nishi-Azabu intersection where you can enjoy mixology. I decided to drop by and the atmosphere was great! There are semi-private table seats, but I recommend sitting at the counter. The bartender makes cool cocktails. I particularly liked the fruit cocktails, especially the melon and watermelon cocktails this season, which were delicious. I visited three times shortly after and ordered them every time. If you want to enjoy a nice atmosphere and delicious drinks in Nishi-Azabu, this is a recommended spot.

On weekdays, I visited late at night. Although Tabelog states that they are open until morning, it seems that they are now open until 25:00 (as mentioned on the restaurant's Instagram @baramber). The counter was almost full. The female bartender was lovely.

Located between Nihonbashi and Nogizaka, right next to Italian Meraki, is "Bar Amber." I am not well-versed in alcohol, but this place is run by a female master who has won competitions like Seagram's Regal. The bar is small with a counter, tables, and private rooms, suitable for various purposes. They specialize in original cocktails made with fresh fruits, which are displayed in a very attractive menu booklet with photos. You can even take the booklet home as a souvenir, although I forgot to do so. We were served onion soup as a complimentary dish, which was incredibly delicious with a rich onion flavor and subtle spiced aroma. The third photo shows a grapefruit cocktail, and the fourth photo shows a kumquat cocktail, both refreshing and aromatic. I also tried a Baileys-based adult banana milk and melon cocktail, as well as a strawberry milk cocktail, which were all rich and flavorful. The total bill was around 11,000 yen, which I found reasonable considering the intricate cocktails made with fresh fruits. The delicious onion soup convinced me that the food here is also worth trying, so I look forward to ordering some snacks on my next visit. Thank you for the meal.

Visited this bar in Nishi-Azabu as the second stop for dinner. It's a hidden gem tucked away in a back alley from the Nishi-Azabu intersection. I recommend trying their mixology cocktails made with a variety of spirits and fruits. On this day, I had a melon cocktail which had a wonderful aroma, not too sweet, and a nice balance of alcohol. They also have a great selection of whiskies, so even a group of guys could have a good time. I played it safe with my usual Turkey Rock today, but I heard the pudding is also a must-try. They serve it with a rum topping, which was a unique touch. The combination of alcohol and sweetness worked surprisingly well. It was delicious, slightly on the firmer side like the desserts in popular cafes. Perfect for a date, but they also have tables so it's suitable for a girls' night out. Being able to make a reservation over the phone is a plus. I definitely want to go back.

Although there were more men at the time I visited, the place seemed versatile for both chatting at the front and enjoying drinks at the counter in the back. They also have seasonal fruit cocktails, with Shine Muscat, Kyoho grapes, persimmon, black fig, and even aged baked sweet potatoes available in November! The baked sweet potato cocktail was particularly delicious! Snacks included raw salami, homemade chocolate, olives, and more. It's clear that, as my friend said, bringing a woman who enjoys drinking to this place would be greatly appreciated.
