When I went to Ikebukuro for some errands, I visited this restaurant. The restaurant is located about a 5-minute walk north from Ikebukuro Station East Exit along the street where Hakata Tenjin and Hayashida are lined up, with prominent orange signs. I checked the menu at the ticket machine in front of the store and ordered the cold ramen where you can choose from four flavors. Inside the restaurant, there were counter seats and table seats, with only two other customers. A female staff member came out of the kitchen, took my ticket, and asked me to choose from four flavors: salt, yuzu salt, plum yuzu salt, or spicy salt. I chose the spicy salt flavor. The restaurant information mentioned that they have their main store in Shibuya and a total of 17 stores in Tokyo, specializing in dumplings, with some stores overseas as well. While facing the challenges of the pandemic, this restaurant seems to be quite popular. On the shelf above the counter, there was a noodle box labeled "Noodle Master Daikuroya," which was quite unusual to see. I found out that they use noodles from Koshu Market when I looked around. After waiting for about 5 minutes, the ramen was served in a unique bowl with a design of thunder patterns on a white background, with chili oil and white sesame floating on the clear soup. The ramen included pork belly chashu, bamboo shoots, seasoned egg, white onion, watercress, and spinach, with a lemon slice on top. First, I checked the saltiness, which was at a moderate level of 1.2. When I tasted the soup, I could feel the delicate taste of chicken and pork broth, along with the spiciness of salt chili oil, a hint of acidity, and sweetness. It was impressive how they could achieve such a delicious saltiness with cold soup. The noodles were straight and had an eggy flavor with a good chewiness and the richness of wheat. They matched perfectly with the delicate saltiness of the soup. The pork belly chashu and bamboo shoots were seasoned lightly to complement the saltiness. The white onion and watercress added a refreshing touch to the cold ramen. There was a description of the restaurant's commitment on the wall inside, and their dedication to saltiness was evident in the taste of the ramen. If my stomach allowed, I would definitely want to try their salt ramen as well. Today's bowl of delicious ramen turned out to be the salt ramen.
