2023/8 "Surprisingly, there are few restaurants that are as user-friendly as this one" by Akiton (..) Sushi restaurant "Hikarimono Sushi and Tsumami" ✨✨ "I want to offer popular 'town sushi' in a high-quality space," and they have achieved a cost performance of less than 10,000 yen in a prime location in Roppongi. It is a newly listed Michelin restaurant for the 2024 edition. This is a new business style opened in the summer of 2021 by Sato Kan, who has also worked on Shibuya's "Shokkan" and Azabu-Juban's "eat iito". The restaurant opened in July 2021. It is located on the first floor of an apartment building a 5-minute walk from Tokyo Metro Nogizaka Station. The bright space features a white wooden L-shaped counter. The counter seats are full even on weekdays. So, how does the food taste (*´∇`)ノ ■Nigiri and Tsumami 18 items in total for 9,900 yen (tax included) The sushi rice and ingredients are sourced from Tsukiji, Adachi, and Yokohama markets, where they personally select the best ingredients. ⚫Simmered octopus - The first dish is octopus. It's not the same as what you find in high-end restaurants, but it's not just a side dish for alcohol. It's quite good. ⚫Tsubugai - Simple but good tsubugai. ⚫Fried horse mackerel - The freshness allows for a rare finish. Sushi restaurant-style fried horse mackerel! Something you wouldn't find in a regular restaurant. A new taste experience. ⚫White squid - Served with vinegared red rice. Thickly cut with a citrus aroma. ⚫Horse mackerel - This is delicious✨✨ It's a good horse mackerel with a nice fatty texture. ⚫Sea bass - Fatty and tender. ⚫Grilled salted prawn - The yellowtail is delicious, and the salted prawn adds a nice touch. ⚫Grilled salmon - Fragrant. When you bite into it, the fat melts in your mouth, spreading a delicious taste. ⚫Conger eel and shiso leaf tempura - Conger eel tempura for the summer. It's fried to a fluffy perfection. ⚫Sardine roll - A refreshing roll with cucumber and plum. First, the acidity hits, followed by the sweet umami of the sardine. It's delicious✨✨ ⚫Eel hand roll - The eel is crispy on the outside, and the seaweed is crispy. ⚫Sea urchin sushi - Surprisingly, the sea urchin quality is high. ⚫Grilled red snapper - Nicely grilled red snapper. It may not be top-notch, but it's of sufficient quality. ⚫Lean tuna - It's nice to have this level of lean tuna. It must be due to the good quality of the fish. It's from Australia, but the taste is good enough. ⚫Medium fatty tuna - Another good quality medium fatty tuna. Slightly noticeable sinew, but good fat content. ⚫Grilled conger eel - Fluffy grilled conger eel. ⚫Red miso soup - A well-extracted red miso soup. ■Drinks ⚫Premium Malt's small bottle - 900 yen ⚫Kikuhime (Ishikawa) glass - 1,000 yen This is what Kikuhime tastes like. Did it have such a unique aroma? It's distinctive. The drinks are a bit expensive, and the selection is not the best. I've been noticing many restaurants offering good Japanese sake lately. ■Service The service is proper. ■Price Good cost performance! It's understandable why it's rated by Michelin (*´ェ`*) With good sourcing and high-quality ingredients at an affordable price. Plus, they show individuality in their dishes, which is appealing.
