Fukuoka's popular clear pork bone ramen cooked with low-temperature cooking... The pork soba restaurant "Tsukiya" opened today, April 24th, in Ginza. The location is a 3.4-minute walk from Ginza Station on the Tokyo Metro Marunouchi Line, Ginza Line, and Hibiya Line. It is also a 4.5-minute walk from Higashi-Ginza Station on the Tokyo Metro Hibiya Line and Toei Asakusa Line. It is located on the 6th floor of GINZA SIX's restaurant area. The opening hours are probably from around 11:00 or 11:30 until around 22:00. I arrived alone at 11:35 and had to wait a bit as the place was already full. After about a 5-minute wait, I was seated at a table towards the back. The menu includes only one type of ramen, the Clear Pork Bone (1,320 yen tax included), with an option for an extra serving for 200 yen. There are also other items like Hakata tarako rice (2,090 yen tax included) and side dishes such as Shumai (3 pieces for 990 yen tax included) and Yodare pork (990 yen tax included). They also offer a selection of alcoholic beverages like Suntory Master's Dream (800 yen) and Fukuoka craft beer Pale Ale (1,000 yen). I ordered the Clear Pork Bone ramen, Shumai, and Yodare pork. The food took a bit longer to arrive, likely due to it being the opening day. The Yodare pork was visually appealing and tasted delicious with its generous portion of Fukuoka pork belly. The Shumai was also flavorful and juicy. Finally, the Clear Pork Bone ramen was as good as I remembered from the Hiroo branch, with a clean and tasty soup base and thin noodles. The toppings were plentiful, and everything was well-balanced and delicious. I enjoyed the ramen, Yodare pork, and Shumai and will definitely visit again. Thank you for the meal.

I happened to find Tsukemen at Ginza Six while I was there for some errands, and since I had been curious about it for a while, I decided to visit. I ordered the Clear Tonkotsu Ramen (1,320 yen). You are supposed to add toppings like green onions, seaweed, and kabosu in order, and the kabosu I added last paired well with the soup. The soup was very delicate in its richness, so I enjoyed it until the last drop. They also offered extra noodles (200 yen). I wouldn't go all the way to Ginza just to visit Tsukemen, but I would definitely go back when I'm in the mood for a quick noodle fix while in Ginza.

I wanted to try a shop near my company. Even though it's tonkotsu, the soup is clear. I arrived after 1 pm and there was no wait. Of course, I ordered the "clear tonkotsu" ramen. It arrived in about 5 minutes. Tonkotsu ramen is always good when it's served quickly, right? 😊 There seems to be a specific way to eat it, so I followed the instructions carefully. We were lined up behind about 2 people before entering the shop, but we were seated in less than 5 minutes. The ramen was served very quickly. The sparkling soup was mesmerizing. It was so delicious that I almost finished it before even putting the included green onions and chashu on top. Tried the noodles in the "Clear Tonkotsu" and thought, "Is this really extra firm?" The noodles were not that firm and the portion was small. The soup was indeed clear, both in appearance and taste. Was instructed to squeeze some kabosu into the soup midway, which changed the flavor and created a perfect balance of kabosu and tonkotsu. It was delicious, though when something is so good, you stop thinking about the cost-performance ratio. Other items on the menu included small dishes that looked appetizing. Handmade fried horse mackerel, drooling pork, shumai (not the usual kind), vinegar-soaked tripe, and pickled green chili peppers.

I later found out that they ask about the firmness of the noodles, but no one asked us when we were there. As expected from a Hakata ramen shop, the ramen was served promptly after ordering! The soup was clear and transparent, but with a rich tonkotsu flavor that I love! The noodles were a bit soft for my liking, but the thin straight noodles paired well with the soup! Of course, we ordered an extra serving of noodles. We added the soup seasoning and toppings, including thin slices of chashu which were a bit lacking in flavor. The seaweed added a nice touch to the dish! Just be careful not to squeeze too much lemon juice. As mentioned in other reviews, the portion size was a bit small, but the taste was very satisfying! I wandered around GINZA SIX multiple times and ended the day with a bowl of clear tonkotsu ramen! The restaurant was beautiful and there were some inbound tourists here and there. I was worried if I could finish it because I was already full, but it was delicious! It was more refreshing than I expected, and the vinegar citrus and myoga added a nice accent. I'm not a big ramen fan, but I definitely want to come back here. It's easy to go alone, so I'll definitely come back alone next time! I want to buy the myoga from here!

When it was in Hiroo, I used to go there often, but since it moved to Ginza, I haven't been able to visit until now. The atmosphere and prices of the restaurant have changed quite a bit. Paying over 1500 yen for ramen and an extra serving is a bit expensive, but I guess that's how things are nowadays. However, I find it unacceptable that the staff keep chatting loudly all the time. If they are going to charge a certain price, I believe they should provide a certain level of service. I probably won't be visiting again for a while.

After being open for 3 months, I decided to visit to see if the operation had stabilized. I ordered the Clear Pork Bone Ramen for 1200 yen. The noodles and toppings were served separately on a tray. The toppings included small slices of pork, green onions, seaweed, and a little pink pickled ginger. The noodles were not well-cooked, and the soup lacked the richness and sweetness of pork bone flavor that I had experienced in Hiroo. I also ordered a souvenir set with 3 packs of half-cooked ramen, soup, and kabusu extract for 1500 yen. The noodles in the souvenir set had a slightly different texture but had a better pork bone flavor. Since I often visit the area, I might give it one more try to see if there's any improvement.

I added the toppings and yuzu halfway through, and also tried adding the pink pickles on the table. It seems like a lot of thought has been put into the presentation and balance of flavors. The clear broth may seem light at first, but it actually has a rich flavor. The noodles are delicious, but I didn't quite see the need for the toppings to be served separately. I understand the intention for customers to savor the noodles and broth first, but the toppings like chashu, green onions, and seaweed weren't overpowering, so I just put them in right away. I prefer when the toppings blend well with the soup. The Garlic Tomato, Shumai, and Dashi Vinegar Motsu are more like appetizers, not something that makes you crave alcohol. The mild flavors make it suitable for a lunchtime meal without needing a drink. It's not a place I would go out of my way to visit, but it's a decent option when you're in Ginza and looking for a quick meal.
