Opened on June 15th in Roppongi, "Azabu Chashu-ken" is a restaurant that operates from 7:00 PM to 7:00 AM with no lunch service. It is located about a 6-7 minute walk from Roppongi Station along a main street. The glass-walled interior with only long red tables gives off a vibe reminiscent of a Hong Kong eatery. The chef, wearing a T-shirt with "Nishi-Ogikubo" written on it, caught the attention of the reviewer. Upon asking, it was confirmed that he is the owner of "there is ramen" in Ogikubo. The owner has also opened "Kamo to Negi" in Ueno and "Teuchi oyako Chuka soba Ayagawa" in Ebisu. Although "Azabu Chashu-ken" is a separate entity from these establishments, it is the first ramen shop under a different ownership that the owner is helping out with. The main menu includes ramen, chashu-mai, stir-fried vegetables, and mapo tofu, among others. They also offer chashu-mai and chashu as souvenirs. The ramen, priced at 920 yen, is beautifully presented with chashu, menma, green onions, naruto, and seaweed in the center of the bowl. The soup is rich and flavorful, mainly based on a thick and intense fish broth without any chemical seasonings. The noodles are firm and straight, holding their own against the strong soup. The chashu is juicy and tender, and the menma is also quite good. While the toppings are somewhat average, the delicious soup and noodles are reminiscent of "there is ramen." The modern twist on Kitakata ramen is quite appealing. Additionally, you can order chashu-mai for 80 yen each and enjoy various snacks with a selection of drinks, including Akahoshi beer. The owner of "there is ramen" works until 9:30 PM. Although there have been instances of people pointing out that the T-shirt says "Nishi-Ogikubo" instead of "Nishi-Azabu," this was the first time someone recognized the owner as the chef from "there is ramen." It's interesting to discover these connections while exploring different restaurants.

The ramen restaurant in Nishi-Azabu, called Mufu-ku, is located just a 1-minute walk from the Nishi-Azabu intersection. You can see the inside of the restaurant from the outside, but it's hard to see outside from the inside, almost like a reverse magic mirror. Despite looking like a regular Chinese restaurant, it seems they are particular about using no artificial seasonings or additives. Ramen for 920 yen was a tasty oily soup with a dried fish base and low hydration noodles. The char siu shumai for 80 yen was moist and delicious with a unique flavor. The Lu Rou Fan (minced pork rice) for 450 yen was very rare with lots of melty parts, reminiscent of the Lu Rou Fan that appeared in Shibuya decades ago but didn't catch on. It was a bit soupy, so I might try asking for less soup next time. The chili bean paste on the table was delicious. Total cost was 1,450 yen.

I went to a gachapon in Roppongi for a drink, and before arriving at the hotel, I wanted something salty. I decided to go to this shop that I had been curious about on Instagram. I ordered the chashu ramen that looked great on Instagram. The place was lively with people finishing up their drinks and moving on to ramen. After a while, the ramen arrived. The bowl was filled with sinful pork belly chashu. The soup had a strong bonito flavor, which I'm not a fan of. The noodles were straight noodles, nothing special. Overall, it was okay. Thank you for the meal.

Ordered: Char siu ramen (1280 yen), 4 pieces of char siu mai (80 yen each). The soup was amazing! A seafood-based soy sauce soup like nothing I've ever tasted before. The char siu was incredibly tender and delicious. And the char siu mai was a must-try, with a delicate and moist texture that makes you want to keep eating more. Highly recommend trying the char siu mai!

I arrived a little after 6 am, but the restaurant was already full!! It's so popular!! Items like gyoza besides ramen were already sold out. The wonton chashu noodles were delicious! It's wonderful that the ramen shop is open until morning.

There's a new late-night ramen shop near Nishi-Azabu intersection. The soup is rich with seafood broth. It's different from the traditional Nishi-Azabu ramen shop with the red curtain next door, which is a nice touch. You must be dreaming of having a body like mine, eating this carb and fat-filled dish late at night, right? That's right, isn't it?

I had been curious about Azabu Chashu-ken for a while and when I finally tried it, it was even more delicious than I had imagined. The fact that they are open until late at night is great. I was very satisfied with the chashu, which I love. I will definitely go back next time.

I went to a ramen shop recommended by a friend in Nishi-Azabu for the first time in a while after drinking. It was late at night but the shop was full so I had to wait for about 5 minutes. It's popular! But the shop is spacious so the turnover is quick. I also tried the chashu, which is the namesake of the shop. The ramen soup is not too fishy but incredibly delicious! It was lighter than I expected. The tender chashu was also incredibly tasty! And they had chashu shumai, which is like a small, soft shumai. Maybe it's called chashu shumai because it's a chashu shop? I could eat these all day. I definitely want to go back to this shop. I don't have many opportunities to drink in Nishi-Azabu anymore, so I wonder when I can go again.

I had been curious for a while, so I stopped by after the Jyuban Matsuri. There are several famous ramen shops in Nishi-Azabu, but I was a bit tired of the usual ones, so I was happy!! Wow, the ramen was actually really delicious, just the kind of flavor I like. The noodles were thin and the chashu was tasty. The subtle hint of dried fish was a nice touch, not too overpowering. I'm not a fan of strong dried fish flavors, but I would definitely come back for this. Since I tend to avoid eating ramen at night during Nishi-Azabu time, I wish they were open for lunch as well. If you're ever in the area, I highly recommend it.

Their operating hours are from 7 pm to 7 am, which is a fantastic business style. Rumor has it that the mastermind behind this shop is the same person as the one behind Ebisu Ayagawa, but that doesn't matter. This place is undoubtedly one of the top ramen shops in Tokyo, to put it modestly, it's the best.
I visited the restaurant the day after its pre-opening. It's a matter of personal preference, but I didn't find any flavors that stood out. I ordered a lemon sour and got a tomato sour instead. Well, it's the first day, so it's understandable. The staff seemed to be having a good time with their friends, but I hope they focus more on the operation. I was hoping for the opening of "Oyadori Ayagawa" in Ebisu, but I don't think I'll be returning. A restaurant that stays open late into the night is valuable, and there seems to be a demand for it. It may appeal to those who prefer light, unassuming flavors.

I found the best ramen shop in Minato Ward to go to after drinking. The soup is really delicious. It's clear but has a punch of dried sardines that is irresistible. The noodles are thin, and the chashu is melt-in-your-mouth tender. The taste is mind-blowing. And the mapo tofu is also incredibly delicious. Should I order the chashu-men and eat it with chashu and rice, or should I order ramen and enjoy the mapo tofu separately?
