Located in Kagurazaka, the French restaurant "designo Dejino" is a renowned French restaurant in Kagurazaka, and the chef, Kenjiro Kaneda, who trained in France, specializes in traditional French cuisine. The name "designo" comes from Latin, meaning "to design." The restaurant aims to design the joy, surprise, and excitement of guests through traditional French cuisine and excellent service. The head chef, Kenjiro Kaneda, worked at La Tour Eiffel for 7 years before spending about 2 and a half years in France, working at various Michelin-starred restaurants. We opted for the lunch course "Ignis," which includes a choice of appetizer, main dish, and dessert. Both of us chose the "Pan-fried Fresh Fish of the Day" as the main course. The meal started with a toast with Perrier, followed by various amuse-bouches, including marinated olives, pancakes with cream cheese and salmon mousse, and marinated sardines with sherry vinegar sauce. The amuse featured a cold corn blancmange with three different colors of corn. For the appetizers, we had Tasmanian salmon with a soft-boiled egg and Greg Legume sauce, and marinated lobster and shellfish with celery mousse and consomme jelly. The main course was pan-fried sea bream with beurre bourguignon butter and balsamic sauce, served with fermented red cabbage sauerkraut. The dessert was a trio of yogurt, mango, and banana milk ice creams. The meal ended with madeleines, sangria guimauve, and mango fruit tartlets, followed by iced coffee. The classical French cuisine with richly flavored sauces was delicious. However, the lack of verbal communication when clearing the plates throughout the meal felt somewhat out of place and affected the overall impression of the restaurant's elegance.
