After a long time, I had lunch in the Tama area. I happened to pass by Takane-ya, which I remembered as delicious, and turned back my car to park in the back parking lot. It was before 11:30 am, so there were still few customers and the inside of the restaurant was calm. I bought a ticket for a regular ramen for 750 yen and sat at the counter seat closest to the water cooler (easy to refill water). When asked for my preferences, I ordered the noodles firm. The interior of the restaurant has a classic feel that feels nostalgic to me. Checking my past visit in the log, I realized it had been about 7 and a half years since my last visit! I had been thinking of coming back, but so much time had passed. And then the ramen was served. The soup was plentiful with plenty of chicken oil. The color of the soup looked delicious from the start. The large and thick slices of chashu were more than I expected and I was happy! The fresh spinach and roughly chopped green onions were also nice. When I slurped the soup, the savory aroma of chicken oil and the assertiveness of pork bone were balanced with a mellow soy sauce flavor, which was a delicious soup that I liked. The noodles I ordered firm were medium thick and flat, with a good texture! I finished it in no time. The fact that I kept slurping the soup shows that it suited me well. Thank you for the meal! I said as I left the restaurant. Let's do our best in the afternoon! It was a deeply delicious ramen that gave me strength.

*Revisited in September 2023* (2023 = 195th visit / 65 new restaurants) Today, I had some business in hachioji, so I stopped by here before that. It's an old established shop from the Kondo family. I occasionally pass by this road, but recently it has been closed often... It seems like they are only open for lunch now. So, I have corrected the opening hours. It has been about 6 and a half years since my last visit. I arrived around 11:40 am. The ramen costs 750 yen. I added extra seaweed for 190 yen. I requested the noodles to be cooked firm. There were 4 customers already seated and about 5 more came in after me. The owner was working alone. There were two large and two medium-sized pots in the kitchen. The soup was simmered well, and it smelled nice. Not too strong of a pork bone smell. The noodles from Sakai Seimen were stored in a box, and the noodles were lifted using a flat sieve. It took about 4-5 minutes to be served. The seaweed was placed randomly. The soup was balanced. There was quite a bit of chicken oil floating on top. Although it smells like chicken oil, there is also a hint of pork flavor coming through. It reminds me of the Ikeno family, despite being from the Kondo family. The soup is light and has a slight thickness due to the abundant oil. It has a good pork bone taste and umami, but the broth itself is light. When mixed well, the color changes, but the soy sauce flavor is more subtle than the color suggests. Perhaps a bit more saltiness would be nice. With a lot of oil, it enhances the richness, but the aftertaste is not heavy, rather light. The soup was filled to the brim and piping hot. The wavy medium-thick noodles from Sakai were served slightly firm even though I requested them firm. They were slightly on the normal side. They had a smooth and chewy texture. As I continued eating, they softened due to the piping hot soup. These noodles are delicious, as I remember. The chashu was thick and sizable. At first, I thought it was pork loin, but it might be thigh meat. It had no fat, was tough, and slightly salty in flavor. It had a classic type of nostalgia to it. The spinach was minimal but had a good texture and flavor. I ordered extra seaweed, and it came with 10 sheets. The extra cost was 190 yen for 7 sheets. They were of average size but had a coarse texture. They were thick and strong when dipped in the soup, but softened easily in the mouth. The flavor was decent. The finely chopped green onions were added in an appropriate amount and did not overpower. It had been a long time since I last visited, and the impression was not much different from the previous visit. However, coming back and experiencing this classic type of goodness made me appreciate it once again. It may not have a punch or impact, but the regular customers seemed to appreciate it, and it is supported by the locals. The owner also greeted me warmly, and the sense of being an established shop was impeccable. I hope they continue to thrive for a long time. Thank you for the meal. No waiting on Sunday at 1:00 p.m. Two seats available at the counter. Ramen is ¥750 with extra green onions for ¥200, extra seaweed for ¥190, and a small bowl of rice for ¥170. A can of beer costs ¥130. The flavor is normal (on the stronger side) with extra oil (not piping hot but not cold either), firm noodles, and table condiments such as grated garlic, homemade doubanjiang, chili oil, vinegar, black pepper, white sesame seeds, and grated ginger available upon request. The noodles weighed 160g, so I ordered a smaller portion. The chashu was slightly tough, and the toppings were a bit pricier compared to other places. The flavor is on the richer side. Personally, I didn't care for the homemade doubanjiang. The service was very quick from ordering to serving. The restaurant looks old but is clean and well-maintained.

Today, I decided to stay overnight in Hachioji in preparation for tomorrow's expedition to Yamanashi. Although work was going relatively smoothly, I was disappointed by the shop I was looking forward to in Kokubunji, so I moved on to Hachioji and swapped out the planned shop for tomorrow. After checking into the hotel, I headed to Kitano for my second stop and finally visited "Ultimate Ramen Takane-ya" that I had been curious about for a long time. "Ultimate Ramen Takane-ya" is a popular shop in Kitano, run by a former chef from the famous "Kondo-ya" ramen shop. Personally, I had been interested in this shop for a long time due to its connection to "Kondo-ya," but the location in Kitano and the lack of reputation made me put off visiting for a while. However, recently I have been enjoying classic-style "house-style" ramen more, so I finally decided to visit this shop today since I was staying in Hachioji. The shop is easy to spot with its yellow sign and has a cozy atmosphere inside. The seating consists of a long counter surrounding the kitchen in a U-shape. I visited around 8:50 PM and the shop was about 50-60% full. I ordered my ramen and a seasoned boiled egg at the ticket machine on the right side of the entrance. Since it was my first visit, I asked for the regular flavor. The ramen arrived after a few minutes, and the classic look of the soup was very appealing. The hot soup had a good amount of fat, with a slight chicken oil aroma, a subtle pork bone flavor, a strong umami taste, and a decent soy sauce seasoning. The wavy medium-thick noodles from Sakai Seimen were smooth and had a nice chewy texture, perfectly cooked and delicious. The roast pork was a bit tough but tasty, and the seasoned boiled egg had a soft yolk and was also delicious. The spinach added a nice touch, and the nori seaweed was flavorful when wrapped around the noodles. The chopped green onions provided a nice accent. Overall, I was satisfied with the ramen, especially the well-balanced and flavorful soup that I couldn't stop drinking. The prices for toppings and extras were a bit high, but the overall value for money was reasonable.

Recently, amidst the increase of chain restaurants serving mild creamy soups, you can still find places where you can enjoy a robust house-style ramen. The soup has a strong punch with a blend of pork bone and soy sauce flavors. The noodles are short, flat noodles, and when ordered normally, they are a bit soft, so I always ask for them to be cooked firm. If you're craving a proper house-style ramen in hachioji, I recommend Takane-ya. Thank you for the meal!

Today, I took a train ride to the Hachioji area for some noodle exploration. First, I got off at Kitano Station. I exited the south gate and headed towards Noyasumigawa Street in the direction of Shimoyugi. It took about ten minutes on foot to arrive. The first stop of the day was a shop I had been eagerly anticipating, "Ramen Takaneya," which is a Tokyo branch of the famous house-style ramen shop "Kondo-ya." The exterior of the shop was just my type, with a rugged and 90s vibe that I couldn't resist. The menu and reviews I had read online had built up my expectations, so I was bursting with excitement. Upon entering the shop, I was greeted by a unique L-shaped interior with a nostalgic 90s feel that I loved. The ticket machine was simple, but I couldn't help but notice that the "small rice" option was priced at 170 yen. I couldn't help but think, "This place is a bit pricey." Interestingly, the "Tamago Ramen" that I had thought was a common menu item at Kondo-ya related shops was not available here. For this visit, I ordered the default "Ramen" (regular size). [Impressions] - Ramen: Priced at 700 yen, the bowl was on the smaller side. The thick and large slices of chashu caught my eye immediately. The thick layer of chicken oil on top of the soup looked rich and inviting. However, the pork bone aroma that I had expected was not very prominent. The soup had a thick and creamy texture that spread in the mouth, followed by a punch of saltiness from the seasoning. The pork bone flavor was present but not overpowering, and the overall balance was surprisingly refreshing and not as heavy as I had imagined. - Noodles: The slightly thin and short medium-sized noodles from Sakai Seimen had a good chewiness even with a regular order. - Toppings: The chashu was outstanding, with a moist and tender texture that I absolutely loved. The two thick and large slices were a steal for the price. The chashu's overwhelming deliciousness made it hard to pay attention to the other toppings like spinach, green onions, and nori. The chashu was a standout that overshadowed everything else. [Additional Notes] Based on reviews and comments online, I had expected Ramen Takaneya to be more dynamic and distinctive compared to other Kondo-ya related shops, such as Ryuka in Sagamihara or Nidaime Umeya in Hon-Atsugi. I had imagined a strong pork bone flavor that hits you hard. However, whether it was due to the changing times or just a one-off deviation, the experience was different from what I had anticipated. While the bowl was undeniably delicious, my high expectations for the pork bone richness were not fully met. It was like the feeling of watching the movie "Ghost" for the first time after being told it was an absolute must-see by a friend. Nevertheless, the amazing chashu made up for any shortcomings, and overall, I enjoyed the bowl of ramen.

I visited this ramen restaurant for the first time in July 2019, after passing by it many times. It is the longest-standing family-owned ramen shop in Hachioji. If you want to have decent family-owned ramen in Hachioji, there are only a few options, such as Maruniya or this shop near Hachioji Station. Recently, they have raised their prices, with all menu items increased by 20 yen. Toppings also have a flat rate increase, with an extra seaweed costing 190 yen. A small bowl of rice is 170 yen, and a seasoned boiled egg is now 130 yen. Compared to other ramen shops in the city, the toppings here are quite expensive. I ordered the regular size ramen (800 yen) with a stronger, thicker broth. The ramen that came out was a classic family-owned style, but the broth was not as strong as I expected. It may seem light for those used to family-owned or Jiro-style ramen. Due to its location in a residential area called Kinugaoka, which requires climbing a steep hill from the station, most customers are local residents. The light flavor of the ramen may have been adjusted to suit the locals' tastes. In fact, a family dining at the same time ordered an even lighter version of the default light ramen. Despite the slightly disappointing topping prices, I believe this restaurant offers a traditional family-owned ramen experience that is friendly even to families with children (although there are only counter seats available).
