I didn't expect to be able to taste the local flavors of Fukuoka in Tokyo. The main branch of the restaurant I used to frequent in high school is located in Futamata. The taste is the classic Hakata tonkotsu ramen (it seemed like they reduced the fat and flavor a bit for Tokyo). It's also convenient that they are open late into the night.

Good evening! This is Keiji Doi! After finishing work in Ebisu, I felt like eating ramen and stopped by this place! The tonkotsu ramen here was surprisingly light and delicious! You order by writing your preferences on a paper provided on the table, which made the process smooth. I ordered the "Negi Goma Ramen" with firm noodles, normal taste, normal oil, normal umami sauce, green onions, and chashu. When I asked for a paper apron, they gave it to me right away! Having a paper apron allows you to slurp the noodles without worrying, which is great! I will definitely come back here!

I visited the restaurant around 1 pm on a regular day. About half of the seats were occupied. To order, you fill out an order form provided at your table and hand it to the staff. You can order toppings, rice dishes, drinks, gyoza, etc. all on this one form. If you want an extra serving of noodles, you can also write it on the same form, and finally pay with the form. The soup had almost no odor, and it reminded me of a certain popular ramen chain. The taste is better than your average tonkotsu ramen shop. The service was also quite fast, which was a plus. The interior only has a counter and the turnover seems to be quite fast. The ramen costs 880 yen, and you can add a half-boiled egg for 120 yen. I chose the firm noodle texture. You can also choose the flavor, richness, sauce, green onion, and chashu by writing on a piece of paper. I like thin noodles, so I was happy with their thickness. The soup is flavorful but not too heavy, making it very delicious. I would definitely revisit this place if I crave pork bone ramen again!

There was a request to eat tonkotsu ramen, so I remembered that there was a place in Ebisu and decided to visit. The restaurant only has counter seating, and you order your ramen by filling out a form. My wife had the negi goma ramen with ajitama topping, while I, a lover of spicy food, had the rekkara ramen also with ajitama topping. The rekkara ramen, although I ordered it medium spicy, wasn't very hot, but it had a nice accent to the sweet tonkotsu soup. The straight thin noodles were delicious, as they were well coated with the soup. The small gyoza on the side was also delicious, just like the ramen. This place is a strong contender when you're craving tonkotsu ramen.

The lunch was not great, so I decided to find a restaurant in Ebisu for dinner. Most eateries were closed, but Ramen Danbo was open so I went in without hesitation. There was one customer before me and one after me. I ordered the "Ramen with firm noodles" for 880 yen and a small bottle of Super Dry beer for 600 yen (a bit pricey for a small bottle). The ramen had plenty of green onions, chashu, and spicy miso, and I added some free toppings of mustard greens and pickled ginger. The style of the ramen was like the twin brother of Ichiran, but the soup lacked depth compared to Ichiran. Still, it was quite delicious. I lived in Fukuoka and Kumamoto for 4 years, but I have never seen Danbo in the city. Next time, I'll try ordering it "extra firm". The total bill was 1,480 yen. Thank you for the meal.

Ramen for 810 yen. This was my first time at this restaurant, but I had not been to this chain in about 8 years. About 20 years ago, this place was voted as the number one ramen shop in Kyushu in a contest on the local Fukuoka TV station, FBS. I remember watching the announcement of the winner, with a helicopter flying overhead for aerial footage, thinking it was a bit over the top. I visited this place shortly after that. It started as a small shop in Futarichimachi and has now expanded to multiple locations, including overseas. It's important to ride the wave of success. I visited on a weekday around 7 pm. There was no ticket machine, so I chose an empty seat. There was alcohol disinfectant and acrylic dividers on the table. The water was self-serve at the table. They had a customization sheet like Ichiran for ordering. I ordered everything regular with a little less oil. The ramen was served soon after. It had a good pork bone flavor without being greasy. I couldn't quite tell if the spiciness came from saltiness or actual heat. It was decent, nothing extraordinary. But sometimes, being just decent is hard to come by. The payment was mostly cashless and done at the table.
