It was a relaxing shop with elegant music playing. We visited for a birthday celebration and ordered a course menu. The timing of serving the dishes and recommending drinks was excellent. The detailed explanation of the dishes made the experience enjoyable. All the dishes were delicious, but the beef tongue was particularly tender and the most delicious. We visited in the summer this time, but we are looking forward to going back in the winter!

In a stylish and very nice atmosphere, I went to try the newly launched autumn parfait. The dessert parfait 'Viole' is filled with the flavors of autumn, overflowing with a seasonal feeling. The strong flavor of Nagano purple combined with Mont Blanc cream. The separate cassis and fig sauce adds a balance of bitterness and acidity to the sweetness of the Mont Blanc. The rich vanilla ice cream and cassis sorbet have a deep contrast between sweetness and a crisp acidity. I really liked the moist and fluffy texture that was a bit like sweet potato. The gentle sweetness and juiciness of the pear subtly added an accent. Right now, it's easy to make reservations and the atmosphere inside the restaurant is calm, but if the number of customers increases, they might raise prices like other restaurants. I wonder how it will turn out. I'm sorry if it's different from what I expected, but I felt like if you wanted to try it, it's better to do it sooner rather than later."

I visited the restaurant Café Time on the first floor of the Granvah Hotel in Ginza. I was intrigued by the "Salzburg No Kellen" and decided to order it. It is an Austrian soufflé. It took about 20 minutes for the order to arrive. The menu stated it serves "2-3 people," but some individuals can finish it on their own. The soufflé was light and fluffy, with chunks of mango inside. Personally, I would have preferred to just enjoy the taste of the soufflé without the added toppings of rock salt, caramel sauce, and marmalade. Most of the desserts at this restaurant are supervised by Mr. Yoritaka, but this soufflé was an exception.

I stayed at Hotel Gracery Tokyo Ginza on this day, so I had breakfast at the restaurant on the first floor of the hotel. For breakfast here, you can choose between a standard breakfast and a wellness breakfast recommended by the Wellness Food Concierge when making a hotel reservation, and I highly recommend the latter! The breakfast is served in courses, allowing you to enjoy it at a relaxed pace. The meal includes drinks, salad, three small fresh juices, vegetable soup, egg dish, side dishes, bread, yogurt, and fruit. I chose the Momotaro tomato juice for my drink and an omelette for the egg dish. I also had a refill of milk tea. Although you can choose all the side dishes, the portion might be too much, so my companion and I decided to split them in half. If you're not a fan of buffets but like to try a variety of foods, this hotel breakfast is quite nice. I might choose this hotel again just for the breakfast.

On Sunday, I made a reservation at the restaurant and enjoyed a quiet atmosphere while having a leisurely meal. Each dish was beautifully presented and had a refreshing summer taste. I chose the pork cheek confit, which was well-balanced with the miso tapenade sauce and delicious bread. I was able to fully enjoy the meal, including the dessert.

Just a 2-minute walk from Higashi-Ginza Station, "NaturalDiningWALDHAUS" in Hotel Grunbach Tokyo Ginza offers a soothing space in the heart of the city. The restaurant, serving casual French cuisine with a wellness theme, is located in a calm, high-ceilinged space. From 3 pm, you can also enjoy the cafe. Desserts include special sweets and parfaits in collaboration with Toshi Yoroizuka. I ordered the Strawberry Millefeuille & Ronnefeldt Tea for 2640 yen (tax included). You can choose from a selection of teas, including Spring Darjeeling, Assam, and English Breakfast. I chose the sweet Irish Whiskey Cream tea. The dessert was a delicious combination of large sweet strawberries, crispy pastry, rich custard cream, pistachio ice cream, and tangy raspberry sauce. The hot tea is served in a pot. The relaxing atmosphere was enhanced by the soothing Bach music playing in the background. Thank you for the wonderful meal.

Visited a dining bar that opened 1 year and 6 months ago in November 2021, located on the ground floor of a building along the Showa Street in Ginza. Toshi Yoroizuka has two other locations in Tokyo, one in Midtown opened in March 2007 and the other in Tokyo opened in November 2016. The interior of the restaurant has a calm atmosphere with brown and dark brown tones. There are table seats on the left side upon entering, with a total of 48 seats, making it relatively spacious. During my visit, about 20% of the seats were occupied. The customer base was mostly women (90%) and men (10%). The service was efficiently handled by one male staff and one female staff. The dessert menu includes items like Hotel Granbach Cake Set for 2420 yen, Strawberry Mille-feuille for 1760 yen, and Salzburger Nockerl for 2750 yen. I ordered the Strawberry Mille-feuille for 1760 yen, which was served 14 minutes after ordering. The dessert consisted of layers of pastry with custard cream and strawberries, topped with powdered sugar, decorated with flowers, and served with pistachio ice cream and crushed pistachios. The crispy pastry combined with fresh strawberries and rich vanilla-flavored custard cream was delicious. The atmosphere of the restaurant was calm with brown and dark brown tones. Credit card payment was accepted. The Strawberry Mille-feuille supervised by Toshi Yoroizuka for 1760 yen had a different visual presentation compared to the one at Toshi Yoroizuka Midtown, but the combination of crispy pastry with fresh strawberries and rich vanilla-flavored custard cream was very delicious.

I found a wonderful parfait at a hotel in Ginza, so I went to try it out. I visited Hotel Granbach in Ginza 5-chome. I went to Natural Dining Wald Haus on the first floor of this hotel to enjoy the parfait. The spacious and bright interior of the restaurant was nice. It was great that I could make a reservation and the parfait was served smoothly. Seasonal Fruit Parfait with a selection of 10 premium teas for ¥2860. I had the seasonal fruit parfait. When I visited in March, it was a strawberry parfait. It was a stylish and vibrant parfait. The parfait consisted of strawberry sorbet, strawberry jelly, strawberry mint jelly, pistachio sorbet, sponge cake, chocolate, yogurt, and more. The overall combination was excellent, with a refreshing flavor that was delicious. I would like to go back again to try the menu that changes with the seasons. It's also nice that it comes with a selection of 10 premium teas for free-flowing, so you can enjoy unlimited tea. I recommend trying Ronnefeldt tea.

Cafe use is available from 3:00 PM, offering cakes, dessert platters, and parfaits, including desserts supervised by Toshi Yoroizuka. On this day, we reserved a parfait from the menu. [Toshi Yoroizuka Supervised Seasonal Dessert "Strawberry Parfait" with Free-Flow Selected Red Tea] 2860 yen. Enjoy a free-flow of 10 selected Ronnefeldt teas by Tea Maestro. Parfait components include strawberries, chocolate, meringue, cookies, candies, strawberry sorbet, pistachio ice cream, genoise, crumble, strawberry sauce, chantilly, chocolate cake, strawberry jelly, diced strawberries. The parfait is packed with plenty of strawberry elements. Enjoy a taste similar to a shortcake with cream and sponge in between. It was a delicious parfait with flavor changes with other ingredients. The course meal looks good, and the service is also lovely, so I would like to try dining at the restaurant as well. I will visit again. Thank you for the meal.

Even though it's located in Ginza, the cakes in the showcase are reasonably priced at around 500-700 yen, and I really liked the stylish atmosphere of the place. The presentation was also elaborate and cute. The drinks are on the pricier side, around 1000 yen, which is typical for Ginza, but they have unique flavored teas available as well.

I had the Wellness Lunch, which includes seasonal vegetables, spices, and herbs to warm the body, as well as fermented foods to promote gut health. The portion was just right for me as I had been overeating during the end of the year. There are several choices of tea for dessert. Although the price seemed a bit high for the portion size, considering the location, it felt reasonable.

The set includes a main dish (choice of meat or fish), salad, soup, and bread. The salad was colorful and vibrant, with a variety of ingredients like carrot rapé, chicken breast, beets, salmon, and leafy greens. It felt like a healthy and fresh meal, which was a nice change! The minestrone soup was hot and had a rich vegetable sweetness. I really enjoyed it. For the main dish, I chose the beef sirloin steak with a Japanese-style sauce. The sirloin was lean and the onion-based sauce was sweet and light. The dish was accompanied by plenty of vegetables like tomato, broccoli, bell pepper, burdock root, and onion. The overall quality of the ingredients was impressive. The food was delicious and left me feeling refreshed. The space was spacious and had a hidden gem vibe. I'm curious about the dessert supervised by Chef Yoritsuka. Unfortunately, I didn't notice the background music was Bach, as I was engrossed in conversation. I definitely want to visit again!

The head chef, Toshihiro Sato, specializes in French culinary techniques. Hotel Granbach Ginza, which opened in November 2021, is one of the "Hotel Granbach" brands that are also located in Kyoto, Atami, and Sendai. The hotel stay is designed to heal both mind and body with the sound of J.S. Bach's music and Wellness Cuisine. The services include BGM unified with Bach's music, and wine pairing mainly with German wines. As for cakes in general, there are waffles with carefully selected seasonal and themed ingredients supervised by Mr. Yoritsuka, as well as freshly baked soufflés. From the menu, we chose the dessert "Crème Caramel" and the drink "Iced Stay (Earl Grey)". The "Crème Caramel" is a fluffy mousse-like smooth pudding with caramel sauce at the bottom and whipped cream on top. It is rich in egg flavor and creamy, resembling a loose custard. Although it is rare to have such a loose pudding, it may be nice to have it once in a while. The "Iced Stay (Earl Grey)" uses tea from the German company Ronnefeldt, established in 1823. "Wald Haus Mori no Ie @ Hotel Granbach" is an attractive place with a calming atmosphere. They also have salon concerts and regular performances, so it is worth checking out in the future.

The service is gentlemanly like the hotel, and the ambiance is excellent. Perhaps because it is still a new establishment or due to its location, it is not crowded, allowing for a relaxed and leisurely stay. The cakes look very delicious and I am curious to try them.

Dinner course supervised by Toshiyoroizuka - The parfait with frozen tomato was full of tomato flavor, with jellies made from seaweed stems and cucumber. The appetizer with summer vegetables and avocado tartare was a favorite, featuring okra, paprika, and corn. The pasta was made from soybeans, called Mameloni, with a red paprika sauce and a refreshing orange aroma. The main dish of pork fillet cooked at low temperature with roasted nut sauce and spinach sauce was a healthy meat dish. The dessert of melon ashette with melon and melon jelly was a delicious and refreshing treat.

The patissier-made cake and sommelier-selected sparkling wine set for 2200 yen is a good deal, depending on the overall balance. The taste of the cake and sparkling wine was excellent, and the atmosphere of the restaurant was also pleasant. However, the service seemed a bit too casual, almost bordering on unfriendly. Despite making a reservation over the phone, arriving at the specified time, and being seated at a table set for one person, I was still strongly questioned with exaggerated gestures, "Just one person? Are you sure it's just one person?!" This made me feel somewhat uncomfortable. Although most of the other customers were groups of women or couples, is it wrong to enjoy cake alone? Furthermore, the description of the cake was a bit misleading. The Eclatant cake, a limited edition vibrant cake, was described as "Eguratann" with an orange dome containing matcha inside. However, the actual cake had layers of orange-based and matcha-flavored batter. While the cake and drink were delicious, I am unsure about revisiting this restaurant.

Café dining on the first floor of Hotel Granbach. Intrigued by the name "Waldhaus" ("Forest House") and decided to visit. The concept is Wellness Cuisine that can be enjoyed as a café during the day and a restaurant at night. The entrance is decorated with a modern chandelier hanging from the ceiling, adding a touch of luxury to the warm, wood-themed atmosphere of the "Forest House." The background music playing softly is probably Bach's symphony. Tried the Fruity Chamomile Tea (770 yen) for its relaxing effect. The herbal tea and the white ceramic cup were decent but not particularly memorable. The highlight here is the cakes by the renowned patissier Yorozuka, so I should have tried the cakes. Will visit again for either a meal or dessert next time.

The staff are friendly and trying hard, so I hope they continue to strive for improvement. There are many other restaurants at the same price point that are putting in more effort.

This is a must-go! So I clicked on the following plan: [OZ Women's Limited ★ Wellness Lunch Course ¥4400] Unlimited stay time & 2 desserts by Chef Yoritsuka! Enjoy all 6 dishes to savor the four seasons. There are many new hotels in Ginza, and this hotel is one of them. I didn't expect to find a hotel like this in this area. Even on a weekday afternoon, it was quite busy. However, even though it wasn't full, I was guided to a table right after the entrance, so I couldn't help but ask, "Is this a reserved seat?" Later, I realized that young people nowadays might not clearly convey "I would prefer a seat a little further back," and I regretted it. The plan menu displayed on the table had changed from when I made the reservation. Oh, that's a pleasant change (the soup had been replaced with pasta). The dishes are all very beautiful.
