When I saw the exterior of the restaurant, I thought that despite being called chicken white broth, the atmosphere seemed more "Japanese" than "Chinese", so I decided to enter. When I handed the food ticket to the Middle Eastern-looking waiter, he asked me, "Is coriander okay?" and I replied, "...it's okay." The "Chicken White Broth Ramen" had a well-balanced deep flavor without any strange or off-putting taste. The straight, medium-thin noodles had a normal firmness and a smooth, slippery texture. The finely chopped coriander, wood ear mushrooms, minced chicken, and steamed and sliced chicken meat were the toppings. I later found out that this was a ramen shop that used ingredients suitable for Muslims, known as "Halal Ramen". Despite the presence of women from that country wearing large scarves to cover their hair, and the unfamiliar language spoken by the kitchen staff, the restaurant's appearance was undeniably "Japanese". Chicken broth ramen, chicken broth dipping noodles, and Khao Man Gai soup are delicious. They go well with cilantro. I was debating whether to get the dipping noodles in a large portion, but I went with the regular size. I left feeling satisfied. The sauce for the Khao Man Gai wasn't the traditional one, it was sweet chili sauce, but it was surprisingly good.

The staff at the restaurant are foreigners, and there are many foreign customers as well. I ordered the coriander chicken shio ramen, and my wife ordered the regular chicken shio ramen. However, for some reason, they asked my wife if she was okay with coriander. It seems that coriander is included as a standard topping, and adding extra coriander costs an additional 180 yen. So, think carefully before deciding. I like coriander, so it's not a problem for me.

I visited a ramen shop called "Toribushi" around 1:00 pm on a holiday in May 2023. It is located about a 2-minute walk from Ueno Station and specializes in halal-friendly chicken-based ramen. The shop has a cozy interior with about 7-8 customers already inside. The staff, all foreigners, run the place. I chose the "Chicken Shio Ramen" for ¥800 from the ticket machine, sat at the counter, and presented my ticket. When asked if it was okay to add cilantro, I said "OK." After waiting for about 7-8 minutes, my dish arrived. The "Chicken Shio Ramen" came with slices of chicken, minced chicken, cilantro, and wood ear mushrooms. The soup had a mild chicken shio flavor with a slightly refreshing taste, not too heavy. The smooth noodles had a nice thickness and texture. The generous amount of cilantro added a fragrant accent that complemented the soup well. The sliced chicken thigh meat provided a satisfying chew, and the minced chicken offered a different texture. The large wood ear mushrooms were quite impactful, though cutting them into smaller pieces might make them easier to eat. I tried adding vinegar halfway through the meal, which deepened the flavor and made it even more delicious. I ordered a Char Siu Ramen and Chicken Dashi Rice for 1150 yen. The ramen seems to be a bit divisive in terms of taste. Unlike the popular Chicken White Broth Ramen which has a strong flavor and good noodle-soup combination, this ramen has a more moderate flavor and doesn't have as much of a strong taste. It's not too light either, and I was able to finish the soup without any resistance. It feels more like a noodle dish from another country rather than traditional ramen. About 80% of the customers here are Westerners or foreigners who seem to be from religious backgrounds, so I think the taste appeals to foreigners. The Char Siu was either at room temperature or slightly warm. It didn't have a strong smell, but this might also be a matter of personal preference. As for the rice dish, it's like a Korean Samgyetang mixed rice, and I wouldn't recommend it much as it doesn't really complement the noodles or soup.

This time, I used it for dinner. I was unsure of what to order, but this time I ordered the "All Toppings Chicken White Ramen". It is a shop with a ticket system. The order was "All Toppings Chicken White Ramen" for 1,250 yen. The "All Toppings Chicken White Ramen" has a light chicken white soup. You can change cilantro to green onions, but this time I ordered with green onions. The noodles are thin and quite soft. The ingredients were chicken, ground chicken, seasoned egg, wood ear mushrooms, and green onions. The saltiness is just right, but I found the chicken fat a little bothersome. I found out about this restaurant a while ago through the Tabelog new store information, and the name of the restaurant had "Chicken White Broth" in it. I didn't pay much attention to it at first, but recently I came across a review of this place that mentioned something interesting - it is a Halal certified restaurant! This means that it meets the standards of Islam, such as no pork or alcohol. Intrigued, I decided to visit the restaurant after work. The restaurant is located near Ueno Station, right next to a place I had been to before called Jugenmudantanmen Ueno. There was a large white lantern outside and a white curtain at the entrance, both indicating the Halal certification. As I entered, I saw a few Iranian people going in, and inside there were Iranian families at the table, as well as a Japanese woman dining alone at the counter. I ordered the spicy chicken red broth ramen from the ticket machine and handed the ticket to a male staff member. I sat at a vacant counter seat and waited for my order. After about 7 minutes, the ramen was served in a white bowl with orange-colored soup, chicken thigh chashu, spicy green onions, minced chicken, wood ear mushrooms, and coriander. The soup was light and had a balanced saltiness with a hint of spiciness from the chili oil and bean paste. The noodles were thin and straight, cooked quite firm. As I started eating, I found the noodles to be a bit chewy at first. I mixed in the spicy green onions and minced chicken while enjoying the low-temperature cooked chicken thigh chashu, which was tender and well-prepared. However, I didn't enjoy the wood ear mushrooms and coriander. I later learned that I could have asked for them to be replaced with more green onions, which I regretted not doing. Overall, it was an interesting experience trying out this ramen that met Halal standards.

It's a 5-minute walk from Ueno Station. The other day, when I was at a Tantanmen restaurant, I found another ramen shop next to it. I decided to go in for lunch on a weekday. I ordered the Chicken White Broth Ramen + Chicken Dashi Rice for 950 yen (tax included). They are in the process of applying for Halal certification, as written on the sign. Halal certification is for people of the Islamic faith who cannot eat pork or foods and seasonings containing alcohol. It means that those ingredients are not included. It seems like they are targeting the area because there are many Islamic people around, maybe because of Ameyoko and Takeya. The ramen and rice I got were very filling. First, I tried the soup. The chicken white broth was more like a chicken clear broth, not very concentrated. It had a hint of ginger and other herbs, but it lacked depth and felt a bit unsatisfying. The noodles were medium-thin straight noodles with a high water content, giving them a typical noodle texture that felt a bit cheap. The Chicken Dashi Rice was okay, but it lacked color and flavor depth. It needed more seasoning to make it more exciting. Overall, the meal was cheap and filling, but lacked in flavor.

Today we are here! Toribushi Chicken Paitan Ramen @ Okachimachi First Visit! Visit date: 2023.02.05 (Sat) Sunny 9°C It's Sunday, but I have to work! So, after work, ramen! I recently found out about a new shop that opened last year in Okachimachi, so I want to go there! The location is a 2-3 minute walk from Okachimachi station. Arrived at the shop with available seating! ~Entering the shop~ Buy a meal ticket at the entrance. It's a touch panel ticket machine. I choose the "Ajitama Toribushi Ramen" and proceed. There are about 10 counter seats and around 10 table seats. I am guided to the counter, seated, and hand over the meal ticket. I am asked if I'm okay with cilantro, to which I reply "no" and ask for green onions instead. Water is self-service. The staff seems to be two people, and it just happens that all three groups of customers (2 people each) are foreigners. The staff in the hall is also a foreigner, and it feels like I've entered a shop abroad. Everyone seems to be using it as a drinking place. The male staff member is tall but provides polite service in a low posture. The ramen arrives shortly. The "Ajitama Toribushi Ramen" has plenty of chicken meat and looks delicious! Now, let's dig in! Soup: The soup is deliciously mild and creamy. It is a salt-based chicken paitan made by simmering chicken, and you can taste the rich flavor of the chicken. In Osaka, chicken paitan has been popular for a while, but I wonder why it's not as popular in Tokyo. Noodles: The noodles are straight, medium-thick noodles. They are cooked soft, with a chewy texture. Toppings: The green onions are plentiful and crunchy, which I really like. The ground chicken topping is also delicious and has the strongest umami flavor among the toppings. The chicken chashu is plentiful. However, it may lack a bit of impact due to its light seasoning. The flavored egg is perfectly runny. The black fungus is in chunks, with a crunchy texture, but it might be better shredded for the ramen. I finish it in no time! I thank them and leave. It was delicious! When I borrowed the restroom after entering, I passed by the kitchen and smelled the delicious scent of fried chicken, which made me really want a beer (laughs). Another happy day! Taste Egg Chicken White Soup Ramen 920 yen I entered around 9 pm and there was no wait. There were foreigners having a drinking party at a table. At first, they asked if it was okay to put cilantro in. The taste was like, hmm... not very memorable. The wood ear mushrooms were cold for some reason. I felt like the cilantro didn't really go well with the soup. The chicken was at the level where it falls apart easily with chopsticks, but when I put it in my mouth, it was tough. I was imagining it to be soft. The taste egg was good!!! I really liked it!

Along Showa Street, about 10 meters north of the Okachimachi intersection, there is a unique ramen shop called "Tantanmen Jugemu" that opened in November 2022. It's not your typical ramen shop. The menu is bilingual (English and Chinese), and the staff, including a Middle Eastern employee named Nisha, are fluent in Japanese. The customers are also international, coming from Mongolia, Taiwan, India, the Philippines, and more. The staff's service is well-trained, and the overall atmosphere of the shop is high-quality. The white soup broth is rich and delicious, and the chicken slices are large and tasty. However, some ingredients like wood ear mushrooms and coriander may not be to everyone's taste, but you can ask for green onions instead. The straight noodles are slightly overcooked. As I left the shop, I noticed a sign saying "Halal certification pending" on the lantern outside. It turns out that this is a Halal food restaurant, catering to the dietary restrictions of Islamic law. Everything suddenly made sense, and despite the initial confusion, the soup was indeed delicious.

The interior of the shop had a counter and a couple of tables for two. Music was playing. I ordered the Ajitama Tori Shio Ramen for 920 yen (tax included) using a ticket machine. The positive points were that the staff were very energetic and friendly. The noodles were thin straight noodles, slightly on the softer side. The soup was a light chicken broth with a good saltiness. The toppings included wood ear mushrooms, green onions, chicken meat, seasoned minced meat, and a marinated egg. I requested green onions instead of cilantro, which is the usual topping. The wood ear mushrooms were large with a firm texture. The marinated egg had a good flavor and a creamy texture. The downside was that while the soup had a good saltiness, it lacked depth or richness in chicken flavor. The seasoned minced meat and green onions gave off a strong odor. I suspect it may have been due to the handling of cilantro, which the shop also uses. Thank you for the meal.

Chicken broth ramen 800 yen → 500 yen (limited to the first day of opening) Today, I had lunch in Okachimachi. I heard from a colleague that it opened today, November 28th, so I decided to go check it out. I thought there would be a long line since they are offering chicken broth ramen for 500 yen only on the first day, but surprisingly, there was no line when I arrived. I entered the restaurant at 11:34 am, with 11 customers already inside and 16 customers behind me. I noticed from the flyer I received at the entrance that the menu is also suitable for Halal customers, which explained why most of the staff were Muslims. It made sense. Since they opened at 11 am, there were already a decent number of customers. I ordered the chicken broth ramen with firm noodles and asked to switch the coriander topping to green onions. However, when the order arrived, it was served with coriander and the noodles were not firm. I informed the staff about the mistake, and they quickly brought me the correct order within a minute. The toppings included minced chicken, wood ear mushrooms, chicken meat, and green onions. The noodles were thin and almost straight, not my preferred taste. The soup was rich chicken broth, a bit too salty for my liking. One thing that bothered me was the staff calling out loudly every time a customer entered or placed an order. It was too noisy and disruptive, especially in the current situation. It might be their way of showing enthusiasm as a new restaurant, but I think it's counterproductive and should be avoided. Overall, I enjoyed the meal. Visited for lunch on November 28, 2022. No rating.

I happened to pass by on my way back from shopping and decided to try the Chicken Paitan Ramen at "Bushi". The ramen came with chicken thigh, ground chicken, wood ear mushrooms, seasoned egg, cilantro, and more. The soup was rich with a slight unpleasant smell. The noodles were thin, but a bit overcooked when served. Considering the rich soup, I think thicker noodles like those used in Nagahama ramen would be better. I probably won't be returning to this place!!!
