Located in a quiet alley in Higashi-Ginza, "Edogin Higashi-Ginza" is a traditional Edo-style sushi restaurant that has inherited a historic curtain. It is a branch of the now-closed "Tsukiji Edogin Main Store" and was established about 10 years ago. The head chef, who received the curtain from the main store after working there for 10 years, is the youngest to receive such an honor, as very few people are allowed this privilege. The restaurant is a 3-minute walk from Higashi-Ginza Station, behind the Kabuki-za theater, next to a tonkatsu restaurant called "Haru-no-chi Katsu." The exterior is black with a splendid wooden sign and a navy blue curtain. The first floor has a counter with 4 seats and 4 additional seats, while the second floor has table seating for a total of 30 seats. In addition to the head chef working alone, there are two floor staff members who warmly welcomed us with their lively voices. The lunch menu includes: - Sashimi set: 1,300 yen - Tuna marinated rice bowl: 1,400 yen - Seafood chirashi bowl: 1,300 yen - Conger eel rice bowl: 1,600 yen - Sushi (9 pieces, rolls, egg): 1,500 yen - Sushi for 1.5 people (11 pieces, rolls, egg): 2,000 yen We ordered the following: - Sushi (9 pieces, rolls, egg): 1,500 yen The sushi was skillfully prepared and served in just 5 minutes. It came on a substantial ceramic plate with salad and miso soup. All the ingredients were sourced fresh from Tsukiji Market by the head chef, and the portions were small and easy to eat. The vinegared rice had a slight red tint and a good grain texture, which complemented the toppings well. The rice had a pleasant acidity that dissipated as you chewed, melding with the carefully prepared toppings. The head chef, who was very friendly, left a great impression, and I could imagine that the counter would be lively and enjoyable in the evenings. Despite being busy during lunchtime, the head chef managed to prepare ahead and make adjustments while handling everything alone. By noon, the second floor was fully booked, and the return of customers post-COVID was a welcome sight. "Edogin Higashi-Ginza" offers reasonably priced Edo-style sushi with vinegared rice in the Ginza area.
