On April 9, 2022, I visited this restaurant for the first time alone. It is a Kyoto-based beef cutlet specialty store under the umbrella of Gorip Co., Ltd., which also operates chains of steak, izakaya, and ramen shops. With about 75 stores nationwide, many people may have seen their signboards before. The menu includes:

- Beef Fillet Cutlet Kyoto Tamago Set (2299 yen)
- Thick-cut Beef Tongue Cutlet Set (2189 yen)

There are also a variety of half-and-half combination sets available. The dish I had was the "Beef Sirloin Cutlet and Thick-cut Beef Tongue Cutlet Set" (2024 yen) with rice and miso soup. The accompanying dipping sauces were dashi soy sauce, sansho pepper salt, and beef cutlet sauce, along with a side dish of green chili miso. As for the beef cutlets, they were closer to rare than the medium rare stated in the description. The beef sirloin cutlet was a bit smaller than expected but had a crispy coating with fine breadcrumbs. I enjoyed it with wasabi and dashi soy sauce. However, I felt the meat's flavor was a bit lacking and regretted not choosing the Wagyu beef option. The beef tongue cutlet had a good chewy texture, but I thought it would have been tastier if cooked a bit longer. It paired well with the sansho pepper salt. While the rare presentation looked appetizing, I had some doubts about its flavor. I also had a Highball drink (418 yen). Overall, the specialization in beef cutlets is impressive, and the variety of Japanese-style seasonings adds to the dining experience. It's a good place to try beef cutlets, especially for those new to the dish. The restaurant's location in Musashi-Koyama has seen rising rents due to station redevelopment, making it challenging for individual businesses to survive. Despite the tough conditions, the restaurant industry is starting to recover from the pandemic, leading to a resurgence of new openings. It's encouraging to see specialty stores like this one thrive, and I hope they continue to improve their operations. Thank you for the meal.
