The hot weather continues every day, so it's important to stay hydrated. In my current office, we have unlimited coffee and tea, which is very helpful. In my previous job, I used to buy mineral water. I never imagined buying water before, but when I tried it, I found it to be smooth and delicious. Recently, I was shocked to learn that the bottled water sold at Costco is actually tap water. I used to think water in Tokyo was not tasty, so that impression stuck with me. Today's lunch was at HASHIYA in the Shinjuku Nomura Building, located on the site of the former Yodobashi Water Purification Plant. In my opinion, this is the best place for Japanese-style spaghetti. I went with my family and we ordered a variety of dishes. I had the tarako and uni spaghetti, while my family had the prosciutto salad, bacon and egg spaghetti, and chicken and broccoli white sauce spaghetti. The salad was different from what I usually have, with a dressing that left a mysterious and delicious taste. The carbonara was not what I expected, with scrambled eggs and perfectly balanced bacon. The white sauce spaghetti looked like stew, with delicious chicken wrapped in it. And of course, the tarako and uni spaghetti was a rich and flavorful combination of tarako, uni, and butter. It's been a while since I first tried it, but I hope it remains unchanged and delicious for a long time.

Popular spaghetti restaurant located on the 2nd basement floor of Shinjuku Nomura Building. Visited with 2 people around 12:00 on a holiday. There were about 10 people in line. While waiting in line, we decided on our menu and placed our order. The menu had a nostalgic feel to it. Once we finished eating, we left quickly so we were able to get a seat relatively fast given the number of people waiting.
- Spaghetti with cod roe, sea urchin, and squid tossed in butter (1650 yen): Sea urchin mixed with cod roe and thin squid. The dish had a salty flavor with chewy al dente noodles. This is a popular menu item at this restaurant! We shared it and enjoyed it, but having a whole plate to oneself might be heavy towards the end.
- Spaghetti with green asparagus and bacon in soy sauce-flavored butter (1540 yen): A pasta dish with a nostalgic flavor. For an additional 220 yen, you can get a large serving which is 300g of noodles. It was a sufficient amount and we were full! Some men opted for the large serving and it was a substantial amount.

It has been a while since I visited Hashiya. On this day, I was in the mood for tarako and kimchi. The noodles were cooked perfectly, with an ideal al dente texture. The creamy butter flavor mixed with the chewy tarako was divine. The tangy and spicy kimchi added a nice kick, and I could have eaten endless servings. I look forward to trying the salad spaghetti next time. Thank you for the delicious meal.

I had lunch at "Hashiya" located about a 6-minute walk from Shinjuku Station West Exit. Today, I had the "Clam and Basil Spaghetti." It was delicious with a butter cheese sauce and plenty of clams and basil, just the way I like it.

Nishi-Shinjuku's "Hashiya" is a pasta restaurant that is always crowded. I went alone and was seated right away! There were many menu options, but I ended up ordering the carbonara. As soon as I placed my order, the staff quickly put the noodles into a huge boiling pot. There was already another customer's order being prepared, and even though I couldn't quite tell, there was a delicious buttery smell in the air. Just the smell alone made me feel like having a beer! The Carbonara was served in 11 minutes, and it was labeled as "Carbonara-style," but it was a proper Carbonara! It was so rich and flavorful that I didn't even miss the grated cheese. Next time, I think I'll try the spaghetti with meat sauce and natto, which seems to be quite popular here!

It's been a while since I visited Hashiya Shinjuku. I love the Hashiya in Hatagaya, so it's been a long time since I visited Shinjuku. The last time I came here was in 2016. I arrived around 7:30 PM. There were 3 other customers already there. The menu is slightly more expensive compared to the one in Hatagaya. On top of that, they charge extra for grated cheese at 110 yen and for a large serving at 220 yen! It's understandable since it's a restaurant in a building. The chef's recommendation was the chicken and broccoli series. After some thought, I decided to go back to basics and ordered the mentaiko spaghetti priced at 1,320 yen (tax included). The restaurant had an older owner and 4 staff members. It's the main branch after all. It seemed like the owner was mainly in charge of cooking. I waited for 11 minutes before my dish arrived. It was my first time at Hashiya Shinjuku in a while. They lifted the noodles for me. It was delicious. Even with a regular serving, there was a good amount of noodles. Truly amazing. The cooking time was perfect. The amount of mentaiko and butter was just right. The slight crunchiness of the mentaiko was delightful. While adding sea urchin would make it rich and squid would add more satisfaction, the simple mentaiko was delicious.

I didn't know there was a place called "Hashiya" where they serve sea urchin, tarako, and squid spaghetti, along with bacon salad. I visited the restaurant without knowing about it, and later found out that the place in Nakano I used to go to is also considered a "Hashiya" style restaurant. When I arrived around 11:30 to grab a quick bite before heading to the SOMPO Museum, there was already a long line! However, the staff were quick and efficient, so the turnover was fast. I noticed that solo diners were often seated quickly in the gaps between groups, so I recommend going alone if you can. The spaghetti was rich and flavorful, and the salad had plenty of big bacon pieces, making me surprisingly full. The dressing on the salad was also delicious! (Well, maybe it was also because of the beer I had...) I would definitely go back to try more flavors. Thank you for the meal!

I was 4th in line outside. While waiting, I was given the menu. There were many recommendations, but based on popular reviews, I chose the Tarako, Uni, and Squid spaghetti (1,650 yen). I entered the restaurant after waiting for 7-8 minutes. I was seated at a 4-person table. There were about 30 seats in total, including counter and table seats. There were 6 male staff members. In the kitchen, there was a large bamboo colander. The spaghetti arrived in about 3 minutes, served in a wooden bowl. It was topped with seaweed, and the Tarako and Uni were mixed in, making it hard to see their original forms. I ate it as it was. The noodles were not too thick. The Uni flavor was prominent, and the butter was also strong. The taste was quite rich, and the noodles were al dente. When chewing, you could feel a firmness in the middle. The first bite was delicious. The squid was thinly sliced and not very noticeable in thickness compared to the noodles. As I continued eating, it got heavier. The butter, Uni, and Tarako were quite heavy. I persevered and finished it all. I used a fork to scrape off the remaining Uni and Tarako on the plate. Next time, I want to try the soy sauce flavor and the salad, which also looked delicious. Thank you for the meal.

I visited around 1 pm on a regular day. It's a popular restaurant with a line, but today there were only 3 people ahead of me, so I decided to wait. While looking at the menu, I waited in line and was asked for my order as I waited. After about 5 minutes, I was seated inside the restaurant. The restaurant has both a counter and tables, and inside the counter, there was a large pot for boiling. I was served the dish after waiting for about 10 minutes while drinking water. The dish was spaghetti with tarako (cod roe) and squid in a wooden bowl. The noodles were not al dente, but they were not too soft either, just right. The amount of tarako and butter was impressive. They generously mixed both, making it delicious. The butter had a nice aroma, and the tarako was evenly mixed to the point where you couldn't tell the difference. It had a rich flavor, and I finished it in no time. There wasn't much squid in it, but there was plenty of tarako and butter. The portion size was normal to slightly generous. The price was a bit high, but it was worth it.

I have never been to the Hasiya-style spaghetti restaurants in Tokyo. Let's go check them out. I visited one in a building in Nishi-Shinjuku. After work, enjoying beer and spaghetti is highly recommended. I ordered sea urchin, cod roe, and squid. I could see the chef cooking inside the counter, skillfully handling the pot. When the spaghetti was served, I took a bite and thought, "Wow, this is delicious." The chewiness of the cod roe was amazing, and the sea urchin was incredibly rich. The squid added a nice touch. The texture of the spaghetti was just right, and the dish was perfectly balanced. "Isn't it delicious?" my companion smiled. Indeed, it was delicious. Now I'm torn between conquering all the Hasiya-style restaurants or revisiting this one. Thank you for the delicious meal.

It's about a 10-minute walk from Shinjuku Station. Located in the underground dining area of Shinjuku Nomura Building, this restaurant always has a line during lunchtime. I've passed by a few times and decided to go a bit later. If you go after 11 am, you can avoid the wait. The menu is extensive, making it hard to decide what to order, but I chose the shrimp with white sauce, and it was delicious. The large portion was the right choice. It's a creamy dish, but I finished it all. Just be prepared for a full stomach afterward (laughs). The prices are a bit high, but the taste is definitely worth it. I will definitely visit again for the pasta.

I ended up coming back to the pasta with tarako, sea urchin, and squid. The rich buttery flavor packs a punch! The taste of the tarako was a bit mild, but still delicious. Unfortunately, I forgot to take a picture, but the soy sauce-based bacon and sausage pasta had a big impact visually! I was pleasantly surprised by the thick, large bacon (similar to the salad?) and the large chunks of sausage, which added to the overall volume. If you're a fan of bacon and sausage, this dish is a must-try!

There is a spaghetti restaurant in Shinjuku, located on the B2 floor of the Nomura Building. It is a long-established Japanese-style spaghetti specialty store, known for being the origin of the "Hashiya" style. I visited around 11:15 am on a weekday and there were already more than 5 people waiting in line. It's truly a popular place. Since it's inside a building, waiting in line even on hot days is not a problem. I ordered the most popular dish, Tarako, Uni, and Squid spaghetti. While waiting in line, my order was taken. The regular serving size is around 300g after boiling. The interior of the restaurant has counter and table seats, making it easy for even solo diners. There is a large boiling pot in the kitchen in front of the counter! They seem to be using Barilla pasta. Watching the middle-aged chefs work efficiently in the kitchen is quite refreshing, and the pasta they quickly brought out was filled with rich Uni cream, Tarako, and squid. The creamy sauce coated the noodles well. I thought I might get tired of it, but thanks to the seaweed, I enjoyed it all the way to the end. It was so delicious. I have a tendency to get hooked on things, and this week was my second visit to Hashiya. I had heard about their delicious cream dish a while back and had been wanting to try it. Today, I finally asked the staff which was lighter, the cream-based dish or the one with whipped cream. They explained that the cream-based dish is heavier as it uses a bechamel sauce, while the whipped cream dish is lighter as it uses whipped cream. I decided to go with the whipped cream dish, and it was absolutely delicious. However, I ended up also ordering a salad and couldn't control the portion size. I definitely want to come back and try it again when winter comes.

Clam and fresh tomato spaghetti: Simple and juicy with plenty of garlic, this refreshing tomato pasta has a strong umami flavor from the clams, which pairs well with the oil and saltiness. The pasta has a nice chewiness, using Barilla noodles. I looked around, but unfortunately there was no bread. If there was, I would have liked to dip it in the sauce until the plate was clean! I have been visiting this long-established spaghetti restaurant in Yoyogi-Hachiman for over 40 years since my first visit to the main store. With the main store and the Akasaka branch now closed, I continue to frequent the last stronghold at the Nomura Building store. Despite the many branch stores, including the Hatagaya branch, I always end up coming here. I always order the shrimp with chili tomato sauce and shimeji mushroom salad. Today, I enjoyed my meal while feeling grateful. It's amazing how they have maintained the same taste for so long. I hope they continue to delight us old fans for a long time to come.

I really want to try something else, but I love tarako and squid so much that I can't cheat on them. Last week, I went to a certain Hashiya-style restaurant that I sometimes visit and had the same spaghetti, but it's still different. I always admire the smooth movements in the kitchen. A fan of the Hachiya main store in Yoyogi-Hachiman for generations. I finally had the chance to visit after a long time since the Akasaka store closed, on my way back from Tokyo Medical University Hospital. The restaurant was about 70% full a few minutes after opening, and I was lucky to sit at the end of the counter. I felt happy with the mini salad and the uni squid tarako. There are many stylish and delicious restaurants, but I still love the old-fashioned, heartfelt, generous spaghetti at Hachiya. It goes well with wine too.
