I visited at night. The seats were all full, but I didn't have to wait long before a table opened up. I had the salt pork bone ramen. It came with chashu, green onions, seaweed, and plenty of wood ear mushrooms. The soup was salty and had a slightly fishy taste, like bonito flakes in a tonkotsu broth.

The staff were talking among themselves so much that I was surprised. There are also foreign workers, but I couldn't understand them when they tried to talk to me. The ramen here is more like bonito broth than pork bone broth, so I think it would be good for those who prefer a light taste!

I thought it was Nagahama ramen, so I wondered if the tonkotsu broth was smelly, but it turned out to be not bad with a niboshi (dried sardine) flavor. However, I still questioned if this was really Nagahama style. I ordered the noodles firm, and they were just right in terms of hardness. I also ordered an extra serving of noodles firm, and they were quite hard. The toppings were just seaweed and seasoned egg, but there were already plenty of wood ear mushrooms and green onions in the bowl. The seasoned egg had a slightly firm yolk with a good flavor. The seaweed was thin and plentiful despite being light in flavor. The sliced pork was large and tender with a mild taste. On the table, there were grated garlic, pickled ginger, spicy mustard greens (quite spicy), ground sesame seeds, pepper, etc.

I ordered the Nagahama Ramen with salt flavor, extra rich soup, and firm noodles. The soup was a rich and creamy pork bone broth with a hint of bonito flavor. I couldn't finish the soup completely because I asked for it to be on the rich side, but halfway through, I added plenty of pickled ginger for a change in taste, making it feel like a thick Hakata ramen. The Nagahama ramen costs 650 yen. During lunch, you can get a free extra serving of noodles. The rich pork bone soup is delicious, with flavorful chashu. I got the free extra noodles, which made it quite filling. Towards the end, I added lots of vinegar and pickled ginger. It was a great value bowl of ramen.

I use this place as a late-night spot in hachioji. When you enter, there are only 12 seats at the counter. This shop is open until late after the last train. I ordered the "Nagahama Ramen Shoyu" from the ticket machine here. The taste is an orthodox creamy tonkotsu ramen, with thin noodles, and it was quite delicious. It might be just right when you want to eat tonkotsu ramen for a late-night meal. Thank you for the meal!

The last-minute arrival at Nagahama Ramen was just in time. It's located about a 2-minute walk from Keio Line's Hachioji Station. The restaurant has a bright red counter with stacks of noodle boxes labeled "Suzumen" in the back. Surprisingly, there wasn't a strong pork bone smell. When you press the red button on the ticket machine, you get a ticket for "Nagahama Ramen" with the word "salt" on it. They also have options for "soy sauce" and "miso," so maybe this is the default choice. I ordered the Nagahama Ramen (salt) for 650 yen. It came in a seasoned bowl with seaweed, green onions, and wood ear mushrooms. There was a large piece of pork chashu hidden underneath. The soup was thick and cloudy, with a rich and mild salty taste. After a sip, you can feel a slight roughness on the tongue. The slightly wavy thin noodles were cooked to perfection, with a great aroma and excellent texture. I decided to get a free extra serving of noodles for lunch, this time opting for a firmer texture. They also added more green onions. I finished by adding some spicy pickled mustard greens and mixing it well. I drank up all the soup. Next time, I might try the soy sauce ramen or the dipping noodles.

Higashimachi, Hachioji City, Tokyo. This is Nagahama Ramen shop. The nearest stations are Keio Hachioji Station on the Keio Line, and Hachioji Station on the Chuo Line, Yokohama Line, and Hachiko Line. It's great that they offer one free extra serving of noodles during lunchtime! It's been two months since I last visited Hachioji. I wanted to have a quick lunch on a weekday, so I decided to try a ramen shop on "Brick Street" just a short walk from Higashi Shasen I-Road. This street is amazing. Along with Nagahama Ramen, there are four other ramen shops lined up - Hachioji Ramen, Hanaki Miso, Kakei Ramen Yamato-ya, and Kagetsu Arashi. But they seem to have a good balance of different styles. I arrived around 1 pm, and luckily there were no customers before me, with only six customers coming in after me. The staff was handling everything alone, and they use a ticket vending machine system. Today, I ordered the Nagahama Ramen for 650 yen with a free extra serving of noodles. I asked for it to be extra firm. Apart from the default ramen, they also have soy sauce, miso, tsukemen, and chashu rice bowl options. The slightly brownish-white cloudy soup was bubbling with a slightly grainy texture, indicating that they cook it thoroughly in a large pot. The noodles were slightly thicker than ultra-thin, and of course, they were firm. The toppings included thinly sliced chashu, wood ear mushrooms, chopped green onions, and seaweed - the usual suspects. While it may not have any standout features, it was still a satisfying bowl for everyday consumption. I ordered an extra serving of noodles, which were served on a separate plate. They added a small amount of chopped green onions on top, which was a nice touch. Okay, let's wrap up the Hachioji expedition after visiting two places lightly. It was my first visit around 8 p.m. on Saturday. Nagahama Ramen Shoyu for 650 yen including tax. It only took about 3 minutes to be served! The thin noodles were not exceptional, the chashu was thin but large, and for some reason, the seaweed was in the middle, haha. I sprinkled plenty of sesame seeds and enjoyed it. The soup with a viscous foam mixed well with the thin noodles. It was a bit monotonous, so I added some flavor with the table highball and garlic, which made it enjoyable until the end. On the table, there were spicy pickled vegetables, grated garlic, red pickled ginger, vinegar, chili oil, pepper, toothpicks, disposable chopsticks, and tissue box. There were about 5-6 customers in the store, with a few more coming later. There were 2 staff members, but they were not particularly busy, haha. I finished with a decent level of satisfaction. I didn't write a review, but when I visited in October 2021, I was disappointed to find that the wood ear mushrooms were in large chunks instead of thinly sliced, unlike before. Both the ramen and tsukemen had thinly sliced mushrooms. What surprised me the most was the change in the tsukemen shio (salt) broth. It used to be a white, easy-to-eat broth with a salt base, but now it was a dark, bitter broth with a strong bonito flavor. The saltiness was also mild, so I had to add a lot of salt sauce and garlic to adjust the flavor. The transformation was quite drastic. I may not visit again, but the firm and crunchy texture of the thin noodles at Suzumen was still good.

I ordered the Nagahama ramen (650 yen). It was delicious in a normal way. The soup was a salty tonkotsu base, reminiscent of Tenkaippin with its rich flavor. It paired perfectly with the medium-thick noodles. When I heard "Nagahama," I imagined uncut wood ear mushrooms, so I enjoyed eating them even though they were cut. I will visit occasionally. The popular late-night ramen spot, Nagahama Ramen Takayama in Hachioji, has relocated and seems to have disappeared. A new ramen shop has opened in its place here. According to the staff, they are open for business regardless of shortened hours, which is convenient for night owls. The crucial taste, however, is different from the original Nagahama Ramen in Hachioji and Sagamihara, with mixed opinions. Those who were looking forward to that taste may find it lacking. I visited "Nagahama Ramen," located a few minutes' walk from Keio Hachioji Station. It reminded me of the old Nagahama Ramen that used to be along Route 16 in Hachioji! The exterior of the new place looks quite similar to the old one, but with some differences... They claim to have the strongest tonkotsu ramen or authentic Nagahama Ramen... The previous Nagahama Ramen in Hachioji, which I had tried extensively, didn't have a similar ramen. So, I had always thought of it as a tonkotsu ramen shop run by someone named Nagahama, without claiming to be authentic. I don't know the truth. There is also a restaurant called Nagahama-ya nearby, which is a shop opened by someone who used to work at the old Nagahama Ramen. When the owner was at Nagahama Ramen, I heard that they used salt to the point where it wouldn't dissolve to make the ramen sauce. It was salt-based. I've written a lot, but according to various sources... this shop seems to be a different lineage from the previous Nagahama Ramen. So, they don't need to copy the exterior so much. Oh well. I looked at the ticket machine inside the shop. The menu starts with salt, then soy sauce, and miso salt base, faithfully replicating the old Nagahama Ramen in Hachioji. It seems to be inspired by Nagahama Ramen in Hachioji. The ramen (salt) costs ¥650, and rice costs ¥200. The ramen is very thick and rich. It arrived quickly! Surprisingly, the wood ear mushrooms were thinly sliced instead of being whole... This was a shock! The whole wood ear mushrooms are tasty. Moving on. The soup is a rich tonkotsu broth! It's quite good. I don't taste any seafood. It's a completely different taste from the old Nagahama Ramen, but it has a similar atmosphere, and it's delicious in its own way! It's different from the authentic Nagahama Ramen, but it's still good. The noodles are slightly thicker than thin, more like medium thickness. They're Suzumen noodles! Here it is! These noodles! They're just like the old Nagahama Ramen in Hachioji! They're not the same as the authentic Nagahama noodles from Fukuoka, but if you know the old Nagahama in Hachioji, you'll definitely appreciate these noodles! It's exciting to be able to eat these noodles in a very thick style! The regular rice serving is quite generous. It's slightly on the softer side. When combined with the high-salt soup, it's really good. The chashu has maximum fat content! But it's thinly sliced, so it works. The green onions are your standard green onions, roughly chopped and spicy. There's room for improvement here. They use white onions instead of the typical green onions, which faithfully replicates the old Nagahama Ramen in Hachioji. This was delicious! I finished it all! Once the soup was gone, there were many bone fragments at the bottom of the bowl. Proof of the high concentration. Overall, it's completely different from the authentic Nagahama Ramen in Fukuoka, but if you remember the time before the fish flavor in the old Nagahama Ramen in Hachioji, you'll feel nostalgic! Rating: 3.8 stars. This is good. It's rich and flavorful, and the Suzumen noodles are delicious. If I had to say something, I would prefer the wood ear mushrooms to be whole instead of thinly sliced. I came to Hachioji station to purchase a Saturday lunch pass and decided to have a late lunch at "Nagahama Ramen," which recently opened near Keio Hachioji station. This location used to be the place where the old "Tada Hachioji store" was located, bringing back nostalgic memories. I entered the cozy restaurant and purchased a meal ticket from the vending machine before taking a seat at the L-shaped counter. The self-serve water station was located by the entrance. When ordering, you could specify the firmness of the noodles and the richness of the soup. I chose firm noodles and a normal soup richness level. The ramen was quickly prepared and served. The appearance was a bit different from what I expected. The ramen had a lot of white parts of green onions, giving it a strong onion flavor that overshadowed the tonkotsu broth. The wood ear mushrooms were not sliced but served whole, which was unexpected. The soup was on the lighter side with a good balance with the noodles. The chashu had a nice texture, but became tender when soaked in the soup. I added crushed garlic and spicy pickled mustard greens halfway through, which enhanced the flavor. I also ordered an extra serving of noodles, which was a nice addition to the tonkotsu ramen. I had been avoiding Nagahama ramen ever since I visited a shop claiming to be one of the top 100 ramen shops, only to find out it was nothing like Nagahama ramen. But I suddenly felt like having it, so I decided to visit this place. When I arrived at the shop, there were empty seats, so I quickly purchased my meal ticket. I ordered the Nagahama ramen with salt and a flavored egg, and requested the noodles to be cooked firm. I took a seat at the counter and waited. The seating consists of a 12-seat L-shaped counter. The interior has not changed much from Tada, and you can get your own water at the entrance. There are no dividers like acrylic, and if all seats are filled, it might feel cramped. The service was very polite, even though there was only one staff member. My ramen arrived in about 4 minutes. It had a traditional and nostalgic appearance. The soup was slightly thicker than typical Nagahama ramen, with a rich and creamy texture. It lacked the seafood flavor that some reviewers mentioned, instead focusing more on the umami of the meat. Whether in the scorching heat of summer or the freezing cold of winter, the shop expanded in size, and it was thought that one could eat there for a lifetime. However, that day suddenly came without warning. The reason for the closure remains unknown. How many years have passed since then? The person who inherited the DNA of that day has now started boiling pork bones again in another Hachioji shop. Not to revive that day, but to create new days. The richly boiled pork bone soup is made from backbones and knuckles, without the distinctive pork bone smell, giving customers a wide range of flavors. A few days ago, I went alone to my parents' house at the request of my wife, who reported the sorry state of the refrigerator. On the way back after taking care of it, during the hottest time of the scorching heat, my throat was crying out in distress, so I couldn't resist and ended up stopping at a secret restaurant to have a carbonated water in the afternoon. My throat was quenched, but my stomach was still grumbling (laughs). The inviting curtains of a nearby restaurant tempted me, and I decided to give up dinner and opt for ramen for a late-night snack. The choices were either here or the neighboring Hachioji-style ramen. I arrived at the shop just before 3:00 PM, as usual, with no guests inside the restaurant, but I was greeted by three young staff members who guided me to the ticket machine. My wife ordered the salt ramen, and I ordered the soy sauce ramen, both with firm noodles. As expected of Nagahama, it was quick! This time, just like before, or even better? The amount of green onions was overwhelming, and the abundance of wood ear mushrooms was also substantial. If the green onions were cut finer and the amount reduced by a third, it would still look satisfying. I wonder if they don't pay attention to the FL value or if they are just rough in their approach? First, I scooped up the soup with the lotus flower, and it was different from the salt soup I had the other day, with a rich flavor. It did have a soy sauce aroma, but to me, it felt more like a sweet soy sauce similar to tamari rather than a soy sauce infused with char siu. This one had a richness and creaminess that made the pork bone flavor more pronounced. If the soup tastes this different from the salt ramen, it's worth choosing based on your mood that day. Since the basic taste of the soup is different, the noodles and char siu are the same, but for this price, it's a satisfying bowl. Thank you for the meal. And again, on the way back from the secret afternoon carbonated water (laughs). As a side note, I would like to mention that under the state of emergency declaration, we are refraining from unnecessary outings. Therefore, it is my personal judgment based on my own values to ask, why do I need to write a review of this restaurant? Why is it so important to go out of my way to write a review and cross prefectural borders? I have been vaccinated, and my PCR test was negative, but that does not provide 100% assurance of safety.
