[Overview] Tsujita, the pioneer of rich tonkotsu and seafood tsukemen, has been leading Tokyo's tsukemen culture with overwhelming dedication since its opening in 2005 in Kanda-Ochanomizu. With branches in business districts such as Iidabashi and Yaesu, it has expanded to Osaka, Kanagawa, Saitama, and Fukuoka. In 2011, it expanded to Los Angeles, establishing the "Tsujita" brand domestically and internationally! By the way, when I visited the famous omurice restaurant "YOU" in Ginza this time, I unexpectedly encountered a long line of people. I walked towards Yurakucho while looking down at my phone, and found this store bustling with activity as it was open! As a self-proclaimed tsukemen Instagrammer, I had no choice but to visit.

The rich special tsukemen at the Shibuya branch is 1,170 yen, so the Ginza branch is about 120 yen more expensive. The prices reflect Japan's real estate market! Leaving that aside, this time I ordered without hesitation the most popular classic "rich special tsukemen"!
Noodles: Overwhelmingly smooth and chewy. It looks perfect. The boiling and cooling of the noodles are spot on.
Soup: A thick seafood soup that sticks to the smooth and chewy noodles is like a work of art. And the "tsukemen style" born to ensure that you can enjoy the tsukemen until the end is synonymous with Tsujita. I followed it carefully throughout the meal. With black shichimi, you won't get tired until the finish.
[Tsukemen Style]
1. First, eat it as it is without squeezing sudachi or adding black shichimi.
2. When you finish one-third of it, squeeze sudachi on the noodles, mix well, and then eat.
3. The remaining one-third should be eaten by sprinkling black shichimi on the noodles.
