Located about an 8-minute walk from Komae Station towards Komae Station, with Keio Line Kokuryo Station behind, is a dumpling specialty store run by a brother and sister from Jilin Province, China. This is my second visit (first time posting a review), and I learned from my previous experience that it was almost full when I went without a reservation last time, so this time I made sure to make a reservation before visiting. Despite the strengthening wind due to the approaching typhoon, I headed there by bicycle (you can't enjoy "Gyobi" by car), and arrived at the store at 5:35 pm. Despite being just after opening, there were already two groups of customers inside. Soon after, two more groups entered, and the place quickly became full. Everyone seemed to be couples or couples, like local regulars. The small store with about 9 counter seats is meticulously cleaned from corner to corner, showing the sincere dedication of the owner towards food. Tables, floors, tableware, condiment containers, and even the kitchen were surprisingly spotless. You can definitely trust such a store. The brother and sister owners look to be in their mid-40s at first glance. Both of them have a friendly demeanor, and exude a very warm atmosphere. I later learned that the older sister worked as a noodle chef and the younger brother as a cook in their hometown of Jilin Province before immigrating to Japan with their parents in 1995. Even after coming to Japan, they steadily built up their experience, and in December 2020, they opened the handmade dumpling shop "Kichun" in Kokuryo, Chofu City, with the desire for people to enjoy authentic dumplings. The menu consists of 5 types of fried dumplings and 5 types of boiled dumplings (see menu photos), with limited-time dumplings as an added bonus. There are also a variety of alcoholic beverages and snacks available. (Note that the menu differs between lunch and dinner, with set menus being the main focus for lunch) All ingredients are domestically sourced, and the dumplings are carefully wrapped one by one after receiving an order. You can watch the process of stretching each sheet of skin and stuffing the kneaded filling in front of you. It takes time to complete, but thanks to the theater-style open kitchen, even the waiting time is enjoyable. I conquered all 10 types of dumplings on my second visit, and each and every one of them was truly delicious. Whether fried or boiled, they were juicy to the point where the meat juices splattered, allowing you to fully appreciate the taste and texture of each ingredient. Since all the dumplings are well seasoned, you don't need sauce, but black vinegar and homemade chili oil for flavor variations are available on the table. I won't go into detail about each dish I tried this time due to the large number, but if I had to choose a favorite, it would be the "Kichun Dumplings" that bear the store's name. The thick skin with a chewy, sweet texture, filled with a filling based on pork and cabbage with a Japanese twist. One bite releases the umami of the meat in your mouth. The drool chicken with a hint of sansho pepper and the oil-drenched chicken with cumin flavor were also delicious. The thoughtful care of the two store owners towards their customers is also noteworthy. It's hard not to think that they could potentially win a Bib Gourmand in the near future, making them a dumpling shop to look forward to. (2022.9.19/3.43/24 reviews)
