On this rainy day in Ueno, feeling a bit chilly, I had a craving for warm noodles. I decided to visit a nearby restaurant that I had bookmarked. The restaurant I visited this time was located underground in Ueno, and I had to descend a staircase to reach the entrance. It felt like a fun little adventure. Upon entering, I was seated at a table where I found cold water, menus, black vinegar, and chili oil. The friendly staff recommended a dish for me to try.
I ordered the GyuMaoh Beef Ramen for 1100 yen, and it arrived in about five minutes. The bowl had a visually appealing presentation with beef, green onions, thick tofu, and noodles on top of a brown soup with floating chili oil. When I took a sip of the soup, I could taste the beef bone base with a hint of spiciness, creating a deliciously spicy flavor. The noodles were hand-made and had a chewy texture, similar to udon, which paired well with the soup. The beef was like beef chashu, slightly less moist, but absorbed the soup well, becoming tender. The thick tofu had already soaked up the soup, adding to the overall deliciousness.
I decided to change the flavor by adding some Chinese black vinegar. This transformed the taste into a milder, smoother flavor, reducing the spiciness. I then decided to increase the spiciness by adding some homemade chili oil, which turned out to be extremely spicy, almost making me choke. It was a lesson learned to be careful with the amount of chili oil added. Finally, I managed to finish the meal by balancing the spiciness with more black vinegar.
Overall, it was a meal with ups and downs, but very delicious. There are still many dishes I want to try at this restaurant. I paid in cash, took the elevator to leave, and said thank you for the meal.
