There are several popular restaurants on Dogenzaka, but there are also delicious ones that don't have long lines. As soon as you enter the store, you'll see two ticket machines right in front of you. I was a bit confused by the cashless menu on the right, so it took me some time to figure out my order. I love tomato sauce, so I ended up choosing the pasta with eggplant, bacon, and mozzarella for around 1280 yen. I think there was an option to add extra noodles for 150 yen. I ordered a drink for an additional 380 yen. You can also add salad for an extra charge. Since I ordered a single dish of fresh pasta, I could imagine that the noodles would be chewy. The taste was enjoyable. The other dish I tried was the octopus and shirasu oil pasta. It arrived after a short wait, and I dug in right away. As expected, the noodles were chewy and the sauce was rich with plenty of mozzarella. The eggplant was thinly sliced, and there was a bit of bacon in it. The tomato sauce was balanced, not too acidic or heavy. The shirasu in the pasta added a salty flavor and aroma, making it delicious.

It had been a while since I was in Shibuya, so I took a taxi to get there. I got off near the top of Miyamasuzaka and walked the rest of the way. On the way, I stumbled upon a pasta restaurant. And they had tarako pasta! Since I still had some time before my meeting, I decided to have lunch there. It had been a while since I had fresh pasta.

- I also added an iced coffee to my order to help with my slight hangover. The pasta arrived, topped with plenty of shiso leaves. I took a bite, and the chewy fresh pasta combined with the tarako cream sauce was delicious! The generous amount of shiso leaves helped balance the rich flavor of the tarako pasta, making it easy to eat until the last bite. It's common to see nori flakes on tarako pasta, but the shiso leaves were a nice touch. Plus, they even included a slice of lemon, perhaps to add a refreshing touch to the dish. The pride in their use of wheat and eggs was evident, and the chewy noodles were indeed different from regular pasta, making the experience unique.
- Overall, it was a great find. There are quite a few restaurants specializing in tarako pasta, but it seems like they are slowly increasing in number. It's always nice to have more of these types of restaurants around. If I come across another one, I might just pop in and give it a try!

The chewy noodles were great, and the bacon was very tasty. The egg and cheese mixed together nicely. However, calling it the ultimate is clearly an exaggeration. Compared to Tokyo T-Spaghetti in the same Miyamasuzaka area, this place is much tastier. I'm a bit worried if it being warm or lukewarm depends on the person making it, but I would like to come back to try other menu items.
