I visited Le Liberalisme Chocolatier Tatsuya Sasaki for the first time in a while. This time, I bought a Cherry Pie, which had a crispy pie crust topped with plenty of cherry compote. It was my first time trying this type of pie and the crispiness was irresistible. I would definitely buy it again if available! Plum Pie - A crispy pie crust topped with baked plums that were soft and tangy. The combination of the crispy and soft textures was interesting. Lychee and Hojicha Tart - A gentle hojicha-flavored base with the sweetness of lychee complementing it perfectly. It was delicious! Rhubarb Tart - The strong acidity of rhubarb balanced perfectly with the intense sweetness of the almond base. It might be a matter of personal preference, but I am a fan of rhubarb and would definitely buy this tart again. Macaron Jam Sandwich - Two types: New Summer Orange - Sweet macarons with jam that was pleasantly sweet and slightly bitter. Raspberry Jam - The firm acidity of the jam added a nice touch. Peach and Jasmine Tea Compote - The ingredients were used to bring out their unique flavors, resulting in a truly delicious treat. I look forward to visiting again soon. Thank you for the meal!

I went to the Asagaya branch (which has already closed) and was excited by the French pastries spread inside the store! Since then, I had always thought, "The main store is in Nishi-Hachioji, huh." On this day, during my journey to conquer 100 famous shops, I went to Takahata Fudo Station, then to Takao Station, and searched for the route back home. "Transfer at Hachioji Station, huh. The showcase inside the store was filled with many tarts! I used my secret move, "I like sweet things, which one is sweeter?" and chose the following!! Pear tart 410 yen. Farbulton 280 yen x 2. Milriton 260 yen. Consumption tax 98 yen. Total payment amount 1328 yen. There were also fresh fig and fresh Shine Muscat tarts, which were beautiful! (I was worried about carrying them around, so I didn't buy them.) I love apricots, but I passed on the apricot baked tart because they said it was sour! They recommended the pear tart for those who like sweet things, so I chose that! Then, I saw Farbulton, so I got two for my husband too! The person at the store said, "It's a traditional French pastry. There are very few shops in Japan that make it. It's scented with orange water, but there are no oranges in it. This is also very delicious!" The pie crust has an orange-scented almond cream. It's crispy. I like it because it's sweet. The unique, faint fragrance that lingers in the nose is distinctive. The macarons here are stylish and delicious! I first tried them when a friend gave them to me, and I fell in love with the taste. I paired them with my favorite red wine, Pinot, and it was the perfect match. I have been buying them regularly and recently have been giving them as gifts along with wine to various people. This is a pastry shop located in Nishi-Hachioji, known for its tarts rather than cakes. It seems to be a very popular shop, as last time when I went, they were sold out of everything except for baked goods. This time, I made a return visit. I went in the evening like last time, and to my surprise, there were some items in the empty showcase that was empty last time. Moreover, the croissant I was looking for was also available. I definitely bought the croissant, but I was unsure whether I should buy the tart from this shop. There was only one left, and it had a filling called rhubarb, which I wasn't familiar with. I asked and found out that rhubarb is a Western vegetable. I was even more hesitant because I couldn't imagine what a dessert with rhubarb would taste like. However, since it was the last one, I decided to buy it. I brought it home and tasted it immediately! Now, as for the taste... [Croissant] It had a nice crispiness and a good buttery flavor. It was very delicious. [Rhubarb Tart] Since rhubarb is a vegetable, it didn't have the sweetness or acidity of fruits, but it paired well with the buttery and crispy tart crust. It was delicious. If a somewhat bland rhubarb tasted this good, I can easily imagine how delicious a fruit tart from this shop would be. If I have the chance, I would like to go earlier next time and choose from a variety of tarts.

We walked 5 minutes from JR Nishi-Hachioji Station to Patisserie Tatsuya Sasaki ✨ My second son and I came here for a walk. I follow Shock absorber-san and they visited this shop last month, so I was curious about it. We arrived before the opening at 11 am because I heard that tarts and cakes can sell out in the morning. We were the first ones there 10 minutes before opening, but more customers arrived later. There were 5 groups behind us. Coming early was the right choice (*^^)v After opening, they let in 2 groups at a time. The inside of the shop smelled sweet like butter ❀.(*´▽`*)❀. There were cheesecakes, chocolate tarts, and many other things I wanted. I was indecisive, but I bought 4 strawberry tarts for 486 yen each because they looked so cute. As soon as we got home, my sons immediately dug in. They said, "This is on a different level than before. The strawberries, strawberry jam, and tart are all delicious. Please buy them again." I highly recommend the sweet and delicious strawberry tart. I am grateful for being introduced to such a great shop. Thank you ♡

It was around 2:00 PM on Sunday, and with Valentine's Day approaching, I decided to buy a chocolate cake for my husband. I headed to "Patisserie Tatsuya Sasaki," a small pastry shop located in Nishi-Hachioji. However, when I arrived, the showcase was already empty as they had sold out by lunchtime. Disappointed, I realized that this shop was very popular and underestimated its popularity. The chef's mother explained that they had sold out earlier in the day. But I was able to purchase some baked goods from the pastry shop, which specializes in fresh baked goods. The items I bought were Orange Peel (Bitter) for ¥430, Petit Gateau au Chocolat for ¥430, Brownie for ¥230, and Yuzu Cookie for ¥420, totaling ¥1,260 (including tax). The baked goods had a long shelf life, so I planned to enjoy them with my husband on Valentine's Day. The Orange Peel (Bitter) was soft with a perfect blend of orange peel and bitter chocolate, while the Petit Gateau au Chocolat had a soft texture and disappeared quickly due to its deliciousness. The Brownie was moist and delicious, with hazelnuts adding a nice touch. The Yuzu Cookie had a crispy exterior and a subtle yuzu aroma, making it a delightful treat. Overall, the quality of the baked goods suggested that their cakes would also be delicious. I also discovered that there was a parking lot at the back of the store, so I plan to return for a second visit. I'm already looking forward to White Day and wondering what I'll receive. Today was not a lucky day for my foodie adventures. I found a promising scone shop through my search, but when I arrived, they had a closed sign up. It seems they are temporarily closed for renovations this week. Disappointed, I decided to go for cake instead and ended up at this bakery I had bookmarked. The closing time was 7:00 PM, and I got there around 5:30 PM. To my dismay, the cake showcase was empty. How could this be?! Can cakes really sell out completely? Apparently, on weekends, they can sell out as early as in the morning, even though they open at 11:00 AM. I reluctantly bought some baked goods to take home. The almond cookies were dangerously addictive. The orange peel cookie was also delicious. However, the chocolate with hazelnuts had a slightly oily smell, but other than that, it was okay. The disappointing part was finding out that the Florentine contained artificial coloring and flavoring, which put me off. I wish these homemade shops would avoid using additives. I wonder if the cakes also contain additives... Should I give them another chance or not?

Finally, this time I was able to purchase some tarts. It was a weekday afternoon, so there is a possibility that tarts are more likely to be available on weekdays compared to weekends. Among the tarts I bought, I tried the following two: - Seasonal limited edition "Apple Tart" / 390 yen (excluding tax) with a crispy texture of apple and compote in the pastry. - "Banana and Walnut Caramel Tart" / 390 yen (excluding tax) with irresistible caramel sweetness and a great banana flavor. I definitely want to visit this shop again.

The Basque cheesecake had a creamy cheese flavor with a hint of acidity, unlike the gentle flavor and sweetness of a typical Basque cheesecake. It may have been slightly old, causing the taste to change. I learned from the shop owner that they mainly sell whole Basque cheesecakes for delivery, with cut cakes only available in-store. Therefore, the cut Basque cheesecakes in-store may have been from older batches. The croissant had a faint buttery flavor, almost reminiscent of margarine, suggesting that they may not have used real butter. The texture inside was more like bread than the popular flaky layers of a pastry croissant. Despite being priced around 200 yen, the quality did not match the price. The shop owner's smile and detailed explanations were warm, but the remaining fruit tarts, which are popular, seemed to have a reason for being left unsold in the evening. Some baked goods were priced at over 400 yen, which seemed expensive. In retrospect, there were baked goods priced higher than a Basque cheesecake, showing a bold pricing strategy.

2022.4.17 First visit. When I first went to Hachioji Station, I activated my sweets radar, but didn't find many hits... I remember feeling like there were interesting shops around Nishi-Hachioji Station and Hachioji Minamino Station. So, I planned to have my husband drive me there, but... huh? With high ratings on Tabelog and my favorite canelé available, plus the convenience of parking, I decided to visit. I arrived around 11:45. There were 2 customers ahead of me, and they only allowed 2 groups inside at a time, so I waited outside for a bit. They had a variety of baked goods and tarts on display. Unfortunately, the canelés I was looking for were not there... (TOT) I should have asked... This time, I bought the "Basque Cheesecake," "Yuzu Cookie," and "Banana and Walnut Caramel Tart"! The "Basque Cheesecake" had an irresistible cheese aroma, moist and smooth with rich flavor. Even my husband, who isn't that into sweets, was satisfied and said "delicious!" The "Banana and Walnut Caramel Tart" was a must for me as I love bananas! You can also taste a subtle sourness, giving it an adult flavor. Of course, it goes well with coffee, and even whiskey. The cookie assortment set costs 1000 yen. It's a great deal, and you can enjoy the buttery flavor and crispy texture. There seems to be a store in Asagaya as well.

In Hachioji City, Tokyo, there is a patisserie called Le Liberalisme Chio by Tatsuya Sasaki. I bought a Tart Normand and some other items, but I can't remember what else. Even though I'm not particularly interested in tarts, I think the tarts at the specialty shop Patisserie Tatsuya Sasaki are delicious. I always look forward to their limited edition eclairs in May! They have four flavors: Chocolate, Coffee, Vanilla (each 399 yen tax included), and Pistachio (453 yen tax included). You can purchase up to 6 pieces per person (reservations accepted). Pistachio is available from mid-May to mid-June. Pistachio was just released yesterday (May 18th), so all four flavors are available until the end of May. Last year, I tried all four flavors and particularly liked Coffee and Chocolate, so this year I bought 3 of each. If Pistachio had been available, I would have gotten one, but it wasn't released yet. The Chocolate eclair (399 yen tax included) has a perfectly baked choux pastry filled with a not-too-sweet bitter chocolate cream that is irresistible. The Coffee eclair (399 yen tax included) is a sophisticated eclair with a strong coffee bitterness. Both the Coffee and Chocolate flavors are equally delicious. Enjoying them alternately with each bite is a moment of bliss (laughs).
