Good evening. I'm Kozue, a beauty acupuncture therapist. I recently visited a small bakery called Shoemaker in Ooka-yama. The entrance had a green tapestry with a picture of the bakery owner, a small shop. Inside, a male artisan was crafting bread alone. Here is what I purchased:
- Kellnerbrot: ¥150
- Obst: ¥250
- Knaverstangen: ¥240
- Brothchen: ¥100
- Sonnenblume (Half): ¥500
Kellnerbrot is made with German organic rye 50% and wheat 50%, coated with sesame, sunflower seeds, and pumpkin seeds. The bread has a firm texture, and the taste of the ingredients becomes more pronounced with each bite, with a subtle acidity from the rye.
Obst is made with 30% rye and 70% domestic wheat. It has a slightly blackish color, a hint of acidity, and contains figs, cranberries, and walnuts, offering a delightful combination of textures and flavors.
Knaverstangen, the recommended item, is made with 90% American wheat and 10% German rye. Covered in sesame seeds, the bread dough contains cheese, flaxseeds, and poppy seeds. It's delicious as is and even better when toasted, providing a crisp surface and a chewy interior reminiscent of pizza dough.
Brothchen, a German wheat table bread, comes in three varieties: plain, poppy seeds, and sunflower seeds. I chose the sunflower seed version, which is softer than the others, with a white, dense interior and a crispy surface when toasted.
Sonnenblume (Half) is made with 100% German organic rye, generously coated with sunflower seeds. It has a moist and chewy texture, a sour taste, and a substantial weight, offering a satisfying eating experience.
All the bread allows you to savor the taste of the ingredients, and the cost performance is excellent. I look forward to visiting again. It was delicious. Thank you for the meal.
