When I opened the bag, a sweet aroma filled the air. The dorayaki had a fluffy and moist texture, with a strong chestnut flavor. Inside, there was white bean paste mixed with chestnut paste and chunks of candied chestnuts. It was a luxurious treat!

The dorayaki here is very moist and just to my liking! The regular one has a slightly grainy red bean paste filling, while the salted one has a smooth paste. I think I prefer the regular one, although I'm not sure if there's much difference. The salted dorayaki is not too salty as I expected. The texture of the red bean paste with some graininess might be more suitable for dorayaki. Both dorayaki are very moist and the pancake is smooth. I really like it. You can buy them near Tokyo Station and they don't seem to sell out quickly, so I might come back again.

(2023/05/05: Visit) I found a shop named "Mori Koshiro" at Daimaru Tokyo store, which is supervised by Mori Koshiro, a "Food Meister" award winner who has mastered castella at Bunmeido. I purchased the "Moshio Koshi An" dorayaki here, which features a rare "koshi an" filling. The dorayaki is of a standard size, not too big or too small. The dorayaki cake is very moist with a subtle egg flavor. The filling is quite sweet, but has a smooth texture, likely due to the koshi an. The moshio (seaweed salt) enhances the sweetness of the filling.

There are two types of dorayaki available: fresh ones and ones that last longer. This time, I chose the longer-lasting option with a shelf life of 6 days, compared to 2 days for the fresh type. Both are priced at 216 yen each. I chose the salt flavor this time, which had a hint of saltiness from seaweed salt. When I cut it in half, it was filled with a generous amount of smooth sweet bean paste. The sweetness of the paste was mild, but the sweet flavor of the pancake was quite pronounced. This factory is located diagonally across from the headquarters factory of Tenoya, a company known for Kabukiage. I bought two dorayaki, one with seaweed salt and coarse sweet bean paste for 216 yen each. The dorayaki dough is chewy and moist, and it goes well with the filling inside, making it delicious. I checked the weekly forecast and it looks like cherry blossom viewing might not be possible, so I decided to at least walk through Sakura Street to Daimaru. Oh, cherry blossom flavored dorayaki. It's a rare one with white bean paste and all pink color. The pancake-like skin is thick. Eating one makes you quite full. The regular red bean paste is also filled with plenty of beans. I passed by on a regular night and bought a regular red bean dorayaki. It was around 6:30 pm and there were about 6 left. The expiration date was until 2/11 for the ones purchased on 2/7. I tried it the next day. When I tried to split it in two with both hands, it was quite sticky. Maybe because it has honey in it? When I took a bite, it was sweet!! Both the skin and the red bean paste were sweet. The skin was soft and moist, with a sweetness similar to castella. The red bean paste was quite mashed, so I felt more of the skin texture than the graininess of the red beans. I couldn't really taste the flavor of the red beans. The aftertaste was slightly salty, and when I checked the ingredients, soy sauce was listed. I think it's delicious in its own way. However, I probably won't buy it again. It was a bit too sweet for me.

It was right behind the Kamakura corner with shops like Beniya and Toshimaya, but the shop had a modest design so I walked past it at first.
I bought the traditional red bean paste dorayaki for 216 yen, as well as the limited edition natural seaweed salt paste dorayaki for 216 yen. Morisuke Shimoro is a legendary castella artisan from Bunmeido, and this shop is a brand handled by Tokyo Bunmeido. Therefore, the dorayaki dough here is very delicious. It is moist and fluffy with a faint refreshing scent, thanks to plenty of eggs. The sweetness of the red bean paste is strong, while the seaweed salt paste is less sweet with a slight hint of saltiness. In the end, I felt that the traditional red bean paste dorayaki had a better balance and harmony with the dough.
