On this day, I went to "Black Pork Tonkatsu Horiichi" to try their exquisite tonkatsu, which has won the 2023 Michelin Bib Gourmand award. The restaurant, located a 4-minute walk from Shimbashi, specializes in black pork tonkatsu and opened in April 2021. In less than two years, they have already gained popularity and received the prestigious Michelin Bib Gourmand award.
The restaurant's commitment includes using the finest "Kagoshima Black Pork" without freezing it, utilizing rice oil for a crispy finish that enhances the natural flavors of the ingredients, and creating a special salt using Okinawan salt to bring out the richness of the meat.
Excited by these details, I visited the restaurant, and upon arrival at 1:00 PM, there was already one person waiting outside. Just after I arrived, another person came and the restaurant was already sold out, showing how popular it is after winning the Bib Gourmand award.
I was called in at 1:15 PM and seated at the counter, which was very clean and appetizing. Although I was intrigued by the premium Shima Anno black pork, it was sold out, so I ordered the Black Pork Loin & Fillet set meal.
Within 10 minutes, miso soup, rice, black vinegar pickles, and tonkatsu arrived. The tonkatsu, fried in rice oil to enhance the flavors, had a beautiful golden brown color. The fillet was firm and the loin was elegant, with a balanced amount of fat. The meat was cooked perfectly, juicy, and full of flavor.
First, I tried the loin with Okinawan rock salt, and the crispy coating, tender meat, and the subtle sweetness and umami of the fat spread in my mouth, making it incredibly delicious. The tonkatsu sauce, mild tonkatsu sauce, and miso sauce were all available, but I found the mild tonkatsu sauce with mustard to be the best match, although the Okinawan salt was also fantastic.
The fillet was incredibly tender, juicy, and had a refined umami flavor compared to the loin. It also paired well with the salt. Both the fillet and loin had a light, crispy coating that did not feel heavy, enhancing the taste of the premium ingredients.
The pork miso soup, made with additive-free country miso, was gentle and flavorful with plenty of pork and vegetables. The finely chopped cabbage was crunchy and delicious, and I ended up asking for a refill as it disappeared quickly.
I couldn't stop eating from start to finish, and the exceptional customer service added to the experience at Black Pork Tonkatsu Horiichi, which won the Michelin Bib Gourmand award in less than two years. I will definitely visit again to try the premium Shima Anno black pork.
