Date: 2021.12.18 (Saturday) Weather: Sunny First visit 13:23 Entered the store Many customers already inside, 4 customers arrived after 13:32 Ordered Vegetable-packed Tanmen: 800 yen I had the day off work, so I decided to explore Tanmen in Kita-Senju. The soba shop I had in mind seemed to be closed for an extended period. So, I visited this restaurant that I had discovered before (It seems like a chain restaurant, serving set meals for lunch and transforming into an izakaya-style place at night). I checked the menu at the entrance and confirmed the "Vegetable-packed Tanmen." Inside, I purchased the ticket for the "Vegetable-packed Tanmen" from the touch panel ticket machine near the entrance. I sat at an available table for two. When I handed the ticket to the male staff, he mentioned that a small rice portion was complimentary, but I politely declined. Shortly after, a glass of water was placed on the table. The staff consisted of two male servers and one female staff member in the kitchen, totaling three people. The table was equipped with soy sauce, salt, and shichimi togarashi. Abema News was playing on the TV. The meal was served on a tray after waiting for about 8 minutes. The tray included condiments like chili oil and ramen pepper for flavor variation. The noodles were thick, yellow, curly noodles that seemed more like generic factory-made noodles rather than from a noodle shop. They were slightly on the softer side when boiled, providing a chewy texture with a hint of elasticity. Personally, I prefer them a bit firmer... The ingredients included pork, cabbage, bean sprouts, carrots, and chopped green onions. The pork and vegetables were stir-fried on high heat before being placed on top of the noodles and soup. Chopped green onions were sprinkled on top. The pork was mostly shoulder loin, cut into large pieces. It had a salty taste, a nice charred aroma, and was quite delicious. There was no unpleasant smell, and the portion was generous. The vegetables like cabbage were stir-fried, retaining a crisp texture. Since they were not simmered in the soup, the overall integration was weak. The amount of vegetables, over 250g, was sufficient, but the selection of only three types felt a bit lacking. The chopped green onions remained crunchy. The soup was salty. The slightly cloudy appearance was likely due to the burnt bits from stir-frying the ingredients seeping into the soup. The broth seemed to be made in a central kitchen. It had a moderate umami taste. However, the saltiness of the soup and the salt used during the stir-frying process were quite strong. (Simmering the vegetables may have mellowed it a bit...) The high-temperature stir-frying gave the dish a rich oily texture and a robust aroma. I finished the noodles and ingredients without adding any condiments. Since the soup was too salty for my liking, I left most of it, thanked the staff, and left the restaurant. Overall, I thoroughly enjoyed the Tanmen from this chain restaurant. The savory aroma of the ingredients was excellent. However, the saltiness was a bit overpowering... (Would the meat and vegetable stir-fry on top of the noodles go well with rice or beer??) The service was attentive and the restaurant had a clean atmosphere. Although the prices were on the higher side, I appreciate the effort of a chain restaurant serving a labor-intensive Tanmen dish! I look forward to trying the "Katsu Curry" next time.
