【2022 Tonkatsu Top 100】 【2023 Bib Gourmand】 "Ikegami Enraku" is a tonkatsu specialty restaurant located close to Ikegami Station, where the chef trained for 18 years at "Shinbashi Enraku" before opening his own place. This locally-rooted restaurant has a cozy atmosphere, with the first floor offering counter and table seating, while the second floor has tatami seating. To secure a spot, arrive early and wait along the guardrail before the opening. The second person in line arrived 30 minutes before opening at 11:00, and there were 15 people waiting.
The kitchen in front of you, where you'll be seated, is spotless, and the cooking station is gleaming. The "Katsu-don" priced at ¥1200 uses three-tiered pork sourced from Yamagata's Hirata Ranch, homemade breadcrumbs, and precious lard extracted from the mesentery. The fragrant lard creates a finely textured and crispy coating that adheres well to the meat, producing a delightful crunch when you bite into it. The crispy yet tender meat, with a hint of pink, is juicy and superb. The katsu pairs excellently with the subtly sweet sauce. The katsu-don features a two-tone egg topping, with the right side having a plain katsu without egg, the middle one with a yolk, and the left one with a runny white. You can savor each katsu variation. Notably, the onions are simmered to perfection, maintaining their texture while delivering a pronounced sweetness. The slightly firm rice and the hearty tonjiru (pork soup) with plenty of ingredients also showcase the artisanal craftsmanship. We thoroughly enjoyed this meticulously crafted katsu-don.
